This is a friendship cookie. All the cookie ingredients blended in to a crispy, soft & chewy friendship. You got peanutbutter, molasses, oatmeal, pecans, walnuts, raisins, chocolate chips and coconut! What more can you ask for?! This also freezes well if you like to only bake half the recipe.

1 cup butter
2 cups brown sugar
1 cup molasses
1 cup peanut butter
1/3 cup oil
1 tablespoon vanilla
2 large eggs
1 1/2 cups flour
2 cups oatmeal
1/2 teaspoon salt
1 tablespoon baking powder
1 tablespoon baking soda
1/3 cup cocoa
1/2 cup coconut
1 cup chocolate chips
1/2 cup walnuts
1/2 cup pecans
1/2 cup raisins

Steps:

  • Preheat oven 400°F.
  • In a large bowl with a electric hand mixer, Blend butter and brown sugar together. Mix until creamy then add in eggs, peanut butter, oil, vanilla and molasses. Blend until creamy.
  • In a bowl combine flour, oatmeal, salt, coco, baking powder, baking soda, coconut, chocolate chips, walnuts, pecans and raisins.
  • Add half of the flour mixture to the butter mixture and blend well with wooden spoon. Add the rest of the flour mix and blend all together.
  • With a teaspoon drop cookies on a baking stone or cookie sheet. Bake at 400F for 10 minutes then let stand for 5 minutes. But if you want a softer chewy cookie bake for 7 minutes and let stand on for 3 minutes.

These easy chocolate muffins, made with flour, sugar, cocoa, eggs, oil, and vanilla, have a not-too-sweet but intense cocoa flavor. For those of us with more adult chocolate cravings.

Nonstick spray or paper muffin cups
2 cups all-purpose flour
3/4 cup granulated sugar
1/2 cup Dutch process cocoa powder
1 tablespoon baking powder
1/2 teaspoon table salt
2 large eggs (at room temperature)
1 1/4 cups milk ((whole or low-fat but not nonfat))
1/3 cup mild vegetable oil
2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 400°F (200°C). Position an oven rack in the center of the oven. Spray the muffin tin or line them with paper muffin cups.
  • In a medium bowl, whisk the flour, sugar, cocoa powder, baking powder, and salt.
  • In a large bowl, whisk the eggs until lightly beaten, then whisk in the milk, oil, and vanilla until smooth. Stir in the flour mixture with a wooden spoon until moistened.
  • Fill the prepared tins about 3/4 full. Reserve any leftover batter for a second batch. Bake for 20 to 23 minutes, or until the muffins have firm, rounded tops, and a toothpick inserted into the center of one muffin comes out with a few moist crumbs attached.
  • Set the pan on a wire rack to cool for 10 minutes.
  • Gently rock each muffin back and forth to release it. Remove the muffins from the pan and let them cool on the rack for 5 minutes.
  • Make them disappear. You can keep them in an airtight container or in resealable plastic bags for up to 24 hours at room temperature or stash them in the freezer for up to 2 months.

FRIENDSHIP CORN MUFFINS (AMISH FRIENDSHIP STARTER)

A recipe that I found online at cooks.com and then changed to my liking. The original recipe called for more butter and no sugar/Splenda. These didn't have a big rise, but were moist and flavorful in my opinion (both on day 1 and day 2). Prep time includes resting time for batter.

cooking spray
3/4 cup yellow cornmeal
1/4 teaspoon salt
1/2 teaspoon baking soda
1 tablespoon splenda artificial sweetener (optional)
1 egg, well beaten
3/4 cup milk
1/2 cup amish starter
2 tablespoons butter, melted

Steps:

  • Spray 12 muffin cups with cooking spray.
  • In large mixing bowl, thoroughly combine cornmeal, salt, baking soda and Splenda. Combine eggs, milk, starter and melted butter in a separate bowl. Pour wet ingredients into dry ingredients and mix with a spoon until well blended.
  • Pour into muffin tins and set aside for 30 to 45 minutes.
  • Preheat oven to 375 degrees. Bake about 20 minutes or until done and nicely browned. Serve hot as soon as possible after baking.
  • 12 servings.

1 cup apple, peeled and chopped (optional)
1 cup raisins (optional)

1/2 cup flour
1/4 cup margarine

Steps:

  • Preheat oven to 350'.
  • Mix batter, 2 cups flour, oil, baking soda, baking powder, sugar, eggs, cinnamon and vanilla and stir well.
  • Add nuts, apples, raisins, and/or blueberries and mix well.
  • In a separate bowl, mix brown sugar, 1/2 cup flour and margarine well.
  • Put batter into muffin tins well greased if not using liners. Sprinkle with topping on each muffin and bake for 15-20 minutes or until done.

1 cup sweetened lemonade powder
1 cup orange-flavored drink mix (e.g. Tang)
1 teaspoon ground cinnamon
½ teaspoon ground cloves

Steps:

  • In a large bowl, combine instant tea, lemonade powder, orange drink mix, cinnamon and clove. Mix well and store in an airtight container.
  • To serve, Put 2 to 3 teaspoons of mix in a mug. Stir in 1 cup of boiling water. Adjust to taste.
