Ham Fried Rice image

Easy Ham Fried Rice made with leftover rice and thrown together in less than 20 minutes!

3 cups cooked, cold leftover rice
2 large eggs
4 Tablespoons sesame oil ((or peanut oil))
1/2 cup frozen peas
1/2 cup carrot (, peeled and diced)
3/4 cup chopped ham
2 Tablespoons low-sodium chicken broth
2 Tablespoons low-sodium soy sauce (, or more, to taste)
3 green onions (chopped)

Steps:

  • Leftover cooked and cooled rice works best, and could be made earlier in the day and refrigerated until cold. Use wet fingers to separate the rice grains.
  • Heat 1 Tablespoon of oil in a wok or frying pan. Beat the eggs in a small bowl and add to the pan when the oil is hot.
  • Stir gently with a wooden spoon just until cooked. Transfer to a bowl and set aside.
  • Add another tablespoon of oil to the pan. Add peas, carrots and ham and saute for several minutes. Remove to the bowl with the eggs.
  • Add another tablespoon of oil to the pan over medium high heat. When the oil is hot, add the rice and toss every 30 seconds until it's lightly browned, about 5 minutes.
  • Add the chicken stock, soy sauce and green onion and toss to combine. Return eggs and veggies to the pan.
  • Add more soy sauce, to taste, if desired. Serve immediately.

Fried rice loaded with ham and veggies that is so delicious it is better than takeout!

1 1/2-2 cups ham (chopped)
3 cups rice (cooked)
2 Tbs sesame oil
1 small white onion (chopped)
1 cup frozen peas and carrots (thawed)
2-3 Tablespoons soy sauce (more or less to taste)
3 eggs (lightly beaten)
2 Tbsp chopped green onions (optional)

Steps:

  • Preheat a large skillet or wok to medium heat. Pour sesame oil in the bottom. Add white onion, chopped ham, peas and carrots and fry until tender.
  • Slide the onion, peas and carrots to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetable mix.
  • Add the rice to the veggie, ham and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through and combined. Add chopped green onions if desired.

3 tablespoons olive oil, divided
4 large eggs, lightly beaten
1/2 cup chopped onion
1 cup chopped celery
4 cups cooked long grain rice
3 cups cubed fully cooked ham (3/4-inch cubes)
1 package (10 ounces) frozen peas
1 package (10 ounces) frozen corn
2 tablespoons soy sauce

Steps:

  • In a large skillet over medium-high heat, heat 1 tablespoon of oil. Pour eggs into skillet. Add eggs set, lift edges, letting uncooked portion flow underneath. Remove eggs to a plate; set aside. In the same skillet, saute onion and celery in remaining oil until crisp-tender. Reduce heat. Add rice and ham; heat through. Stir in peas and corn; heat through. Meanwhile, chop egg into small pieces; gently fold into rice mixture. Sprinkle with soy sauce.

2 large eggs, lightly beaten
3 1/2 to 4 tablespoons corn or peanut oil
3 1/2 cups cold cooked rice
2 to 3 ounces honey or sugar-cured ham (yielding 1/2 cup cubed ham)
1/2 cup fresh or frozen peas or baby lima beans
1 to 1 1/4 teaspoons coarse kosher salt
3 tablespoons green and white scallions Peanuts

Steps:

  • Heat a wok or a small, heavy skillet over high heat. Add 1 1/2 tablespoons oil, swirl to coat the pan. Add eggs and scramble them. As soon as there is no more freely running egg, turn them out into a bowl and break them into small bits. They should be soft and a bit runny -- not brown.
  • Heat the wok or a large skillet and add 2 tablespoon oil to coat. Add the rice and toss briskly to coat and separate each grain, about 2 to 3 minutes. Add the ham and peas. Toss to mix in the ingredients and allow the mixture to heat through, about 30 seconds. Return the eggs to the pan and toss to combine. Season with salt, scallions and peanuts, tossing another 5 to 10 seconds to let the eggs get hot.

Coarse salt
3 large eggs, lightly beaten with 2 teaspoons water
4 scallions, thinly sliced
4 garlic cloves, minced
5 ounces ham, thinly sliced and cut into strips
3 tablespoons rice vinegar
1 1/2 cups frozen peas, thawed
4 cups cooked rice

Steps:

  • In a large nonstick skillet, heat 1 tablespoon oil over medium-low heat; swirl to coat pan. In a small bowl, lightly beat together eggs, 2 teaspoons water, and 1/4 teaspoon salt. Pour into pan; cook, pulling in egg from edge of pan, until set, about 2 minutes. Transfer to a plate; when cool enough to handle, cut into strips.
  • In pan, heat remaining tablespoon oil over mediumheat. Add scallions and garlic; cook until fragrant, about 1 minute. Add ham and rice; season with salt. Cook, stirring often, until very hot, about 5 minutes.

1 tablespoon butter
1 2/3 cups water
1 cup long grain rice
3 tablespoons oil, divided
2 large eggs
4 ounces cubed ham, cooked
1 small chopped onion
1 cup frozen green pea, thawed under running water
1 tablespoon soy sauce
1 tablespoon oriental sesame oil

Steps:

  • In med saucean bring butter and water to a boil over high heat.
  • Stir in rice.
  • Reduce heat to med low and partially cover the pan, simmering until most of the liquid is absorbed, about 5 minutes.
  • Stir the rice with a fork.
  • Reduce heat to low and cover and continue cooking until tender, about 15 minutes.
  • In a large skillet heat 1 TBS oil over med high, coating the pan.
  • In a small bowl beat eggs.
  • Add the eggs to the skillet and fry until set, turning once.
  • Transfer to plate and cut into 1/2 inch by 2 inch strips, then set aside.
  • In the same skillet heat another TBS oil.
  • Add ham and cook until lightly browned.
  • Transfer ham to eggs and set aside.
  • In same skillet, add final TBS oil.
  • Add onion and stir fry for 1 minute.
  • Stir in peas, cover and cook til tender 2-3 minutes.
  • Gently stir in the rice, eggs, ham, soy sauce and sesame oil.
  • Cook til heated through.
  • Serve immediately.
