Vegetable oil, for shallow frying
2 firm-ripe plantains (about 1 pound)
Kosher salt
1 cup sugar
1 1/2 teaspoons ground cinnamon
Rum Whipped Cream, recipe follows, or ice cream
3/4 cups heavy cream, chilled
1 tablespoon dark rum

Steps:

  • Heat about 1-inch of oil in heavy-bottomed saucepan over medium heat until a deep-fry thermometer inserted in the oil registers 340 degrees F. Line a large plate with paper towels.
  • Peel the plantains and discard the skins. Slice into 1/4-inch thick pieces. Fry the plantains in oil, turning occasionally, until a golden brown color, about 2 to 4 minutes. The longer the plantains fry the sweeter they are. Remove with a slotted spoon and drain on paper towels. Sprinkle the plantains with a little salt.
  • Put the sugar and cinnamon in a brown bag, drop the warm plantains into the bag, and shake to coat evenly. Serve with rum whipped cream or ice cream, if desired.
  • Whip the cream just until soft peaks form. Add the rum and whip again, taking care not to over whip your cream. Serve now or refrigerate until ready to serve.

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
2 ripe bananas, mashed
1 whole fresh jalapeño pepper, seeded, deveined and finely chopped
1/2 tsp. ground nutmeg
2 cups oil
4 medium green plantains (about 1-1/2 lb.), peeled, cut diagonally into 1/4-inch-thick slices

Steps:

  • Mix cream cheese, bananas, peppers and nutmeg until well blended; set aside.
  • Heat oil in large heavy saucepan to 375°F. Add plantains, in batches; fry 2 minutes. Drain on paper towels; cool. Smash each plantain with the bottom of heavy pan or with a rolling pin. Return plantain slices to the hot oil; fry an additional 1 to 2 minutes or until golden brown. Drain on paper towels.
  • Serve with the cream cheese sauce.

2 fresh limes
2 tablespoons sweet chili sauce
1 tablespoon sweet hot mustard
1 teaspoon horseradish, prepared
1 tablespoon rice vinegar, natural
Canola oil, for frying
3 green plantains
1/4 cup garlic, minced
Salt and fresh cracked black pepper
1/8 teaspoon red pepper flakes
Dash cayenne pepper

Steps:

  • In a bowl, combine the juice of 1/2 of lime, sweet chili sauce, mustard, horseradish and vinegar. Set aside.
  • Heat 1/2-inch of oil in 12-inch heavy pan.
  • Cut plantain on diagonal into 1-inch thick pieces, remove peel.
  • When oil is hot, add the plantains and fry both sides until golden.
  • Drain on paper bag, and sprinkle with salt, and minced garlic. With a flat bottomed, heat proof, glass bowl, smash plantains evenly flat, embedding garlic into them. Return to hot oil and fry until dark golden brown. Remove, drain again on a paper bag, adding more coarse salt, to taste, the red pepper flakes, the cayenne pepper and a squeeze of lime.
  • Serve while hot with sweet heat sauce.

This recipe pairs crispy fried plantains with homemade hot sauce and a cooling lime sour cream, but each is delicious all by itself.

Mango Hot Sauce:
2 tablespoons sunflower oil or other neutral oil
4 medium shallots, finely chopped
3 Scotch Bonnet chiles, or to taste, cored, seeded, and finely chopped (see Note)
3 garlic cloves, chopped
1 (¼-inch) piece fresh turmeric, peeled and finely chopped, or 1 teaspoon ground turmeric
¼ cup chopped fresh mango
¼ teaspoon sea salt, plus more to taste
¼ cup sugarcane vinegar or apple cider vinegar
¼ cup orange juice
Lime Sour Cream:
1 cup sour cream
½ teaspoon lime zest
1 tablespoon fresh lime juice
1 teaspoon sea salt
Plantains:
Vegetable oil, for frying
6 green plantains
Sea salt and freshly ground black pepper

Steps:

  • Make the mango hot sauce: Heat the oil in a medium pan over low heat. Add the shallots, chiles, garlic, turmeric, and mango and sauté for 5 to 7 minutes, until the aromatics start to soften. Add the salt, vinegar, and ½ cup water. Stir to combine, then cover and simmer until the aromatics are completely softened and the liquid thickens slightly, about 10 minutes.
  • Transfer the mixture to a blender and blend until smooth. Stir in the orange juice and season with more salt to taste. Transfer the hot sauce to a resealable glass jar and refrigerate until ready to use. (The hot sauce will keep for up to 2 weeks.)
  • Make the lime sour cream: In a medium bowl, stir together the sour cream, lime zest and juice, and salt. Refrigerate until ready to serve.
  • Make the plantains: Fill a large Dutch oven or heavy-bottomed pot about two-thirds of the way with vegetable oil. Heat over medium heat until the oil reaches 375°F.
  • With a very sharp knife, peel the plantains, then slice lengthwise about ⅛ inch thick. Working in batches, fry the plantains in the hot oil, flipping occasionally, until golden brown on both sides, 4 to 6 minutes. Using a slotted spoon, transfer to a paper towel-lined plate to drain. Season with salt and pepper.
  • Serve the fried plantains with the mango hot sauce and lime sour cream for dipping.

2 -3 ripe black plantains
5 tablespoons unsalted butter, divided
1 teaspoon ground cinnamon
1 teaspoon natural vanilla extract
2 tablespoons brown sugar

Steps:

  • To peel the plantains, cut off ends and discard. With a paring knife, make 3 shallow slits lengthwise along the seams of the skin and peel away. Split the plantains lengthwise.
  • Heat 4 tablespoons butter in a large skillet and place over medium low heat (plantains have a high sugar content and will burn if the heat is too high.)
  • Fry the plantains in a single layer, until golden on the bottom then turn over with a spatula.
  • Add the cinnamon, vanilla, and sugar and let cook a few more seconds, just to begin caramelizing the sugar.
  • Just before serving, melt remaining tablespoon of butter to finish the sauce. Serve immediately.
