2 cups all-purpose flour
1/4 cup paprika
2 tablespoons salt
2 tablespoons pepper
1 tablespoon ground mustard
1 tablespoon dried thyme
1 teaspoon ground ginger
1/2 teaspoon dried oregano
ADDITIONAL INGREDIENTS:
2 eggs
1/2 cup milk
1 broiler/fryer chicken (3 to 3-1/2 pounds), cut up
canola oil

Steps:

  • In a large bowl, combine the first eight ingredients. Store in an airtight container in a cool, dry place for up to 1 year. Yield: 3 batches (2-1/2 cups total)., To prepare chicken: Place about 3/4 cup of coating in a large resealable plastic bag. In a shallow bowl, beat eggs and milk. Dip chicken pieces into egg mixture, then place in the bag; seal and shake until coated. , In a large skillet, heat 1/2 in. of oil over medium-high heat. Brown chicken on all sides; remove to a greased 13x9-in. baking pan. Bake, uncovered, at 350° for 50-60 minutes or until juices run clear.

4 cups biscuit mix, like Bisquick
2 1/4 cups whole wheat flour
2 1/4 cups all-purpose flour
3/4 cup season salt
1 tablespoon salt

1 tablespoon garlic salt
1 tablespoon onion salt
1 tablespoon paprika

Steps:

  • Mix all ingredients together. Store in a large covered jar or plastic zippered bag; attach instructions.

1 cup vegetable oil (for frying)
1 egg
1/4 cup milk
1/8 teaspoon salt
1/8 teaspoon pepper
1 1/2 lbs chicken pieces
1 1/2 cups yellow cornmeal
1 tablespoon flour
1 ounce Italian salad dressing mix (small packet)
1/8 teaspoon ground cayenne pepper

Steps:

  • Heat oil in large skillet over medium high heat.
  • Combine chicken pieces, egg, salt, pepper, and milk in large ziploc bag. Shake to combine, and set aside.
  • In another large ziplock bag (or a plastic grocery sack with no holes) combine cornmeal, flour, italian dressing mix, and cayenne pepper. Shake to combine.
  • 1-3 pieces at a time, remove chicken pieces from egg mix and place chicken pieces in the cormeal mix and shake to completely cover all chicken pieces. Take out coated chicken pieces, put into hot oil, and repeat process 3 at a time until all pieces have been coated.
  • Fry chicken pieces turning once each side is browned until chicken is cooked through and juices run clear. Drain on paper towels.

I was craving the batter from fried chicken and this hit the spot! As far as the butter and milk needed, you have to eye ball it because potatoes vary. Just add a little at a time until they start sticking together.

8 ounces Good Seasonings Italian salad dressing mix (the small pack, I do not know what size it is, I guessed)
1/4 cup nutritional yeast flakes (optional)
1 cup flour
1 cup soymilk
1 cup oil (adjust to cover 1/4-inch of your pan)
3 medium potatoes, peeled and chopped
1/4 cup vegan butter
1/4 cup soymilk or 1/4 cup rice milk, for mashing

Steps:

  • Boil potatoes until soft.
  • Mix dressing packet, flour, and yeast in one bowl.
  • Pour milk in another.
  • When potatoes are done, drain and add butter and milk. You can add salt and pepper if you like.
  • You do not want these to be too creamy, they need to be somewhat firm.
  • Heat the oil.
  • Take 2 spoonfuls potato and form into a ball.
  • Put in milk bowl, then put into flour bowl. Repeat.
  • Place in oil and roll around until done.
  • Drain on a paper towel.

I wanted a coating for skinless chicken so I tried several off-the-shelf products, and a few recipes, and decided to make one of my own. The chicken can be coated then frozen before cooking.

1/2 cup plain breadcrumbs (I made my own)
2 tablespoons yellow cornmeal
2 tablespoons parmesan cheese, grated
1 teaspoon tony chachere creole seasoning
2 tablespoons unsalted butter, cold and diced
1/4 cup nonfat plain yogurt
2 lbs boneless skinless chicken breasts (I trimmed 6 to uniform size, using the rest of the chicken in another recipe)

Steps:

  • In the bowl of a food processor, mix bread crumbs, cornmeal, Parmesan cheese and Creole seasoning together. Pulse several times to blend thoroughly.
  • Add diced butter to crumb mixture and pulse 6-8 times, or until crumb mixture is moistened. Place mixture in a shallow dish.
  • Pat chicken pieces dry with paper towel. Smear yogurt on all sides (may substitute mayonnaise or creme fraiche).
  • Dredge chicken in crumb mixture, turning to coat evenly.
  • IF FREEZING: Place on a cookie sheet, with pieces not touching each other. Freeze. May be individually wrapped after frozen. To cook: unwrap frozen chicken, place in baking dish and bake (from frozen) according to directions that follow. An additional 10 minutes of cooking time may be necessary.
  • TO COOK: Preheat oven to 375°F Lightly spray baking dish with cooking spray. Place coated pieces in baking dish. Cook 15 minutes then turn and continue cooking until done (approximately 10 more minutes).
