2 slices bread
1/2 ounce butter
2 slices cheese
1 tablespoon oil
1 tomatoes
1 teaspoon pickle
1 slice bacon

Steps:

  • Lightly butter the slices of bread. Make them into sandwiches with 1-2 slices of cheese in each sandwich, adding any of the optional extras you like.
  • Heat the oil and knob of butter in a frying pan, over a moderate heat. Put the sandwiches into the hot fat, and fry for a few minutes on each side, until the bread is golden and crispy, and the cheese is beginning to melt.
  • Remove from the pan, drain on a piece of kitchen paper if they seem a bit greasy. Eat at once while hot.

250g Fontina, or Gruyère, or other melting cheese
1 tbsp Dijon mustard
2 tbsp Worcestershire sauce
1 dried red chilli or ¼ teaspoon cayenne pepper
1 egg yolk
3 tbsp double cream
sea salt
12 slices sourdough bread
6 slices prosciutto crudo, or speck di Val d'Aosta
olive oil

Steps:

  • ▶ Cut the cheese into small dice and put into a bowl in a warm place for 30 minutes. Mix the mustard with the Worcestershire sauce, and add the chilli or cayenne and the egg yolk. Put the cheese into a food processor and add the cream. Pulse-blend for a few seconds, then stir in the mustard mixture. You should have a smooth thick sauce that will spread easily. Season with sea salt. ▶ Trim the crusts off the bread and spread the cheese mixture over one side of each slice. Lay the prosciutto or speck over six slices and cover with the remaining slices, cheese side down. Press sandwiches together firmly and cut each one into three pieces. ▶ Heat a large frying pan. Pour in enough oil to cover the surface. When the oil is smoking, add as many sandwiches as will fit. Fry for about 3-4 minutes, until light brown and crisp, then turn over and fry the other side. Drain on kitchen paper. Repeat until all the sandwiches are cooked. ▶ Wrap each sandwich in a paper napkin and serve hot, with a glass of very cold Friulano from Specogna, made with the delicious Tocai grape, or with a fresh white peach Bellini in summer.

25g (2oz) butter
4 slices wholemeal bread
100g (3oz) cheddar cheese, grated
1 teaspoon snipped fresh chives
100g (3oz) ham, chopped

Steps:

  • Butter the bread and arrange the cheese and ham over half of the slices, buttered side down.
  • Sprinkle over the chives and cover with the remaining slices, buttered side up.
  • Preheat a frying pan and cook the sandwiches for 2 mins on each side, until golden brown and the cheese has melted.
  • Cut into triangles and serve.

HEIDI'S FRIED CHEESE SANDWICH

My first culinary 'experience'. I must have been about 7, reading Heidi. This recipe was in the edition I was reading and I had to run to the kitchen and try it out immediately. Mom watched. Still fantastic! Expect something like a savoury-cheesey French Toast.

2 slices bread, thick (preferably bakery, but sandwich bread will do if nothing else is available)
butter
enough swiss cheese, to make a thick filling (the real stuff, I suppose cheddar would be good too, but Heidi's grandfather always gave her gruyer)
1 egg
3 tablespoons milk or 3 tablespoons cream
salt and pepper

Steps:

  • Butter the bread generously and layer the cheese between the two pieces.
  • Beat the egg with the milk in a container large enough to contain the sandwich and season lightly (don't forget the cheese has salt too).
  • Allow the sandwich to absorb the egg/milk mixture- turn over 1/2 way through so the other side absorbs some too.
  • This should take about 10-15 minutes so as much of the custard is absorbed as possible.
  • Drop a tablespoonful of butter into a skillet (cast iron is best), on medium heat.
  • When it bubbles and smells very fragrant, add the sandwich and fry on both sides till a lovely dark-golden-brown and the cheese is all gooey and melted.
  • Put it on your best plate, pour yourself a big glass of milk, get out a fork and knife and enjoy.
  • Note: The texture of this is not like a regular grilled sandwich as the bread becomes moist and puffy because of the egg/milk soaking.

1 (28 ounce) package frozen French fries
1 cup shredded Cheddar cheese
Ranch dressing

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble.
  • Preheat oven to 400 degrees F (205 degrees C). Place a piece of aluminum foil over a baking sheet; spread fries in a single layer on baking sheet.
  • Bake in preheated oven until golden brown and crisp, 15 to 20 minutes.
  • Preheat broiler.
  • Sprinkle fries with cheese and crumbled bacon.
  • Broil until cheese is melted, 1 to 2 minutes. Serve with Ranch dressing.
