5 thick bacon strips, cut into small pieces
1 large onion, chopped
2 cloves garlic, minced, or more to taste
1 medium head cabbage, shredded or chopped
1 teaspoon paprika
1 pinch white sugar
salt to taste
ground black pepper to taste

Steps:

  • Cook bacon in a skillet over medium heat until crisp, about 5 minutes. Remove bacon and set aside. Add onion and garlic and cook in bacon grease until onion is soft and translucent, about 5 minutes. Stir in cabbage, paprika, sugar, salt, and pepper; mix to combine. Cook for about 10 minutes.
  • Stir cooked bacon into the skillet with the cabbage mixture. Simmer over low heat until cabbage reaches the desired consistency, 20 to 30 minutes. Serve hot or warm.

3 lbs cabbage, quartered, core removed, and cut into a large 1-inch dice
1/2 lb sliced bacon
1/2 of medium onion, sliced thinly
1/2 cup water
1 tablespoon sugar
1 tablespoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Cut the cabbage into quarters. Remove any wilted or discolored outer leaves. Cut out the core from the cabbge quarters. Cut into large 1-inch dice.
  • Cook the bacon and onion in a 4-quart pan over medium heat until bacon is crisp, and the onion is wilted.
  • Remove the bacon and onion to paper towels to drain. There should be about 1/2 cup of bacon drippings in the pan.
  • Add the cabbage to these drippings and cook without stirring until it begins to brown, about 3 minutes.
  • Add the water, sugar, salt and pepper and cook until the cabbage is tender, about 20 minutes.
  • Crumble the cooked bacon into the cabbage and serve hot.

The soft, wilted cabbage lends sweetness, while the kimchi (a nod toward bokkeumbap) zips things up. The secret to getting a crackling, crunchy texture is letting the rice sit in the hot oil without touching it until it browns, but using leftover rice also helps. (As the rice dries out, it crisps more easily.) If you're starting from scratch, just cook 2 cups of dry rice to yield the 6 cups of cooked rice called for here. Then spread the rice out on a baking sheet and let it cool and dehydrate a bit before frying. Be sure to have everything ready and near the stove when before you start. The cooking goes fast, and there won't be any time to prepare ingredients once you get going.

3 slices thick-cut bacon, in 1/2-inch pieces (about 3 ounces)
1 small bunch scallions, whites and greens separated, sliced
4 cups shredded cabbage (from about 1/2 small head)

4 garlic cloves, minced
6 cups cooked rice, white or brown, preferably day-old
2 1/2 tablespoons fish sauce, plus more as needed
1/2 tablespoon soy sauce, plus more as needed
1/2 cup kimchi, drained and chopped, plus more for serving if you like
1/2 cup green peas (thawed, if frozen)
4 fried eggs, for serving (optional)
Toasted sesame oil, for drizzling (optional)

Steps:

  • In a large nonstick skillet or wok over medium-high, heat 2 tablespoons oil until almost smoking. Stir in bacon, and cook, stirring constantly, until bacon is golden, about 2 minutes. Transfer to a heatproof bowl, leaving as much oil in the skillet as you can.
  • Add scallion whites to the pan. Cook until soft, stirring frequently, 1 to 2 minutes. If the pan looks dry, drizzle in a little more oil, then stir in cabbage and a pinch of salt. Cook, continuing to stir frequently, until cabbage is soft, 2 to 4 minutes. Stir in garlic, and cook until fragrant, another 1 to 2 minutes. Transfer to the bowl with the bacon.
  • Add remaining 3 tablespoons oil to skillet and raise heat to high. Add rice, and a large pinch of salt, then toss thoroughly to coat with oil. Spread out rice in an even layer along the bottom (and sides if in a wok), and drizzle fish sauce and soy sauce over. Let rice sit until sizzling stops and it starts to crackle and crisp, 1 to 4 minutes. Toss, taste, and add more fish sauce or soy sauce if necessary.
  • Fold in bacon mixture, kimchi and peas, then transfer to plates. Top with scallion greens, more kimchi to taste, and fried eggs, if using. Drizzle everything with sesame oil and soy sauce, if you like, and serve immediately.

Sometimes I'll add some fresh chopped tomato. Cabbage is like a canvass, you can add things and make it an ever-changing recipe. The times are just a guestimate.

5 slices of thick bacon or 7 slices of thin bacon
2 tablespoons butter
1 small white onion, sliced very thin
1 small head of cabbage, cut in half
2 tablespoons cider vinegar
1 bay leaf (optional)
water

Steps:

  • Cut bacon into 1" pieces. Place in large frying pan and cook until ready to turn. Add butter and onion and cook till medium brown.
  • Add cut cabbage and add bay leaf if using. Add enough water to cover (1/4 cup at a time.).
  • Cover and allow to steam, stirring often, and adding water as needed to help loosen the brown bits in the pan.
  • Cook 15-20 minutes (it will cook down quite a bit in volume.) Taste to check for desired tenderness. When almost done, add vinegar, stir,and heat an additional.

  • Add butter and onion and cook until medium brown.
  • Add cut cabbage and add bay leaf,if using.
  • Add enough water to cover (1/4 cup at a time).
  • Cover and allow to steam, stirring often, and adding water as needed to help loosen brown bits in thr pan.
  • Cook 15-20 minutes (it will cook down quite a bit in volume.) Taste to check for desired tenderness, When almost done, add vinegar, stir, and heat an additional 5 minutes, Sprinkle with coarse black pepper just before serving, If desired.

Fried Cabbage with Onions and Bacon
4 slices bacon, chopped
1 medium onion, chopped
1 -2 tablespoon fresh minced garlic
1/8 teaspoon crushed red pepper flakes (or to taste)
6 cups cabbage, cut into thin wedges (1 small head cabbage)
3 -4 tablespoons chicken broth
2 teaspoonsbrown sugar
salt & pepper to taste

Steps:

  • In a large skillet over medium heat cook the chopped bacon until crisp and browned; remove to a bowl or plate and set aside (do not drain the bacon fat). Add in onion; cook stirring until softened (about 4-5 minutes, adding in the garlic and chili flakes the last 2 minutes). Add in cabbage and broth or water and sugar; cook stirring until the cabbage wilts (about 12-15 minutes) season with salt and pepper towards the end of cooking. Stir in the cooked bacon.
