The combination of harissa, honey, lemon and cumin works incredibly well with butternut squash. Everything gets tossed together in the same pan and roasted until the squash is beautifully glazed.

Steps:
- Preheat the oven to 450˚ F. Put the squash in a foil-lined 9-by-13-inch baking dish and toss with the harissa, honey, olive oil, lemon, garlic, cumin and 1 teaspoon salt. Roast, tossing halfway through, until the squash is caramelized and tender, 50 to 60 minutes.
- Drizzle the squash with the vinegar and top with mint.

- Preheat oven to 375°. In a large saucepan, heat honey and 1/2 teaspoon thyme, stirring occasionally, over low heat until fragrant, 3-4 minutes., Meanwhile, in a large microwave-safe dish, combine squash and water; microwave, covered, on high until squash is tender, 6-8 minutes. Drain. Add 1/4 cup olive oil, 1 teaspoon salt and 1 teaspoon pepper; toss to coat., On a flat surface, stack squash slices. Arrange stacks on their sides in a greased 9-in. square baking dish. (To make stacking easier, set baking dish on end; fill with squash stacks. When dish is full, return to original position.) Drizzle 3 tablespoons honey mixture over squash., Bake until squash is tender, 45-50 minutes. In a small skillet, heat remaining oil over medium heat. Add bread crumbs; toss with remaining thyme and remaining salt and pepper. Cook and stir until golden brown, about 5 minutes. Sprinkle over baked squash; if desired, drizzle with additional honey mixture.

COUNTRY FRIED BUTTERNUT SQUASH
This is a truly delicious butternut squash recipe! I saute it on a large griddle in just a small amount of oil, and it turns out perfectly. I found this on Allrecipes by Maryanne. Her grandmother won a blue ribbon with this recipe and I can see why!

Steps:
- Combine egg and milk together in a pie plate or flat bowl.
- In a second flat bowl, combine flour, cornmeal, salt, pepper and garlic salt.
- Peel butternut squash.
- Cut a slice off the bottom of the squash and stand it securely on cutting board.
- With a sharp knife, slice peel off from top to bottom, continuing around the squash until tough peel is completely removed.
- Slice squash into 1/2 inch circles.
- dip squash slices first in the milk/egg mixture and then dredge in the flour mixture.
- Fry or saute in a frying pan or griddle in oil until golden brown on each side, about 2-3 minutes a side.

BUTTERNUT SQUASH CHIPS
Steps:
- In a small mixing bowl, thoroughly combine the salt, garlic powder, paprika, brown sugar, black pepper and cayenne. Set aside.
- Using a sharp knife, cut the tubular top portion away from the globe-shaped bottoms of both squash. Using the knife or a mandoline, shave the tops into chips. Submerge the chips in a deep container with ice water for 10 minutes (this removes any extra starch and makes the chips crispy). Strain the chips and pat dry.
- Meanwhile, using an instant-read thermometer, bring 3 inches of duck fat to 325 degrees F in a heavy gauge Dutch oven over medium heat. Working in batches, fry the chips until they are golden and crispy, 5 to 7 minutes. Transfer with a fine mesh strainer to a paper-towel-lined dish. Season immediately with a sprinkle of spice mix. Repeat until all chips are fried. Transfer to a large bowl and serve.
