2/3 cup picante sauce
1 1/2 cups grated cheddar cheese
6 burrito-size flour tortillas

Steps:

  • Brown ground beef, onion, salt, pepper, and picante sauce in a pan.
  • Drain.
  • Divide meat onto 6 burrito tortillas.
  • Top with 1/4 cup of cheese.
  • Fold up chimichanga style.
  • Deep fry till golden.

I've made these for; parties, packed lunches, trips to the drive-in, movie theater, amusment parks (BIG $ SAVER), and of course dinner along with spanish rice. YOU WILL NEED:
2-3 lb ground beef
4 can(s) ranch style beans
1 small yellow onion (diced)
2-3 clove garlic (minced)
1 Tbsp salt
1 tsp seasond pepper or black pepper
1 tsp chili powder (optional)
15-20 flour tortillas (regular size)
2- 3 c colby or cheddar cheese (shredded)
parmesan cheese (optional)
vegetable oil
KIDS OF ALL AGES LOVE THESE BURRITOS!

Steps:

  • 1. Step 1: Brown ground beef along with; onion, garlic, salt, pepper and chili powder on medium-high heat. Drain and return back to the pot.
  • 2. Step 2: Over medium-high heat add the beans along with the liquid from the beans to the meat mixture. Once the mixture starts to bubble turn off the burner and smash still leaving some beans whole.
  • 3. Step 3: Place 1-2 Tbsp. shredded cheese in a line along the center of the tortilla (not too close to the edges or the cheese will fall out while frying). Then add about 1/2 cup of meat mixture and roll into a burrito leaving one end open then lightly flatten the burrito (remember not to much pressure because then you will start to loose mixture from the opened end)to prevent rolling around while browning. Repeat until you have all the burritos prepared.
  • 4. HERE IS WHERE YOU CAN MAKE A FEW CHANGES! I MYSELF PREFER THIS METHOD: Step 4: Heat 2-3 Tbsp. veg. oil in a large skillet/frying pan on med-high heat. When the oil is hot lay enough burritos to cover the bottom of the pan. Once golden brown (2-3 min.) turn over and brown the other side. As the burritos are done lay them on a paper towel lined baking pan and sprinkle with parmesan cheese. ENJOY! OR Deep fry on med-high heat for 3-5 min. turning once. When the burritos are golden brown they are done. As the burritos are done lay them on a paper towel lined baking pan and sprinkle with parmesan cheese. ENJOY!

I fry up 10 of these at a time, then flash freeze them and then put them away in a zip lock bag for a quick meal any time I need one. I like to melt a little butter and add lots of hot sauce to dip them in.

3 cups left over taco meat
1 cup pizza cheese
1/2 cup Mexican blend cheese
1 (16 ounce) can beans in chili sauce
10 burrito-size flour tortillas

Steps:

  • Mix all ingredients except tortillas. Place a heaping 1/4 cup of fill in the center of each tortilla and fold up tortilla burrito style. Place a toothpick into the last fold to secure the filling.
  • Pre-heat 3 inches of canola oil in a dutch oven to 350 degrees. Fry burritos in batch of 3-4 until golden brown (about 3 min.)and drain on a paper towel lined sheet pan. To serve immediatly, wrap each burrito in alum. foil and bake at 400 degrees about 10-12 minute To store, once burritos have cooled, place the sheet pan they are on in the deep freeze. A few hours later pile the burritos into a zip lock bag.

2 medium tomatoes (10 oz total)
1 large white onion, cut crosswise into 4 thick slices
1 red bell pepper, trimmed, then quartered lengthwise
2 garlic cloves
1 tablespoon fresh lime juice
1 teaspoon fresh serrano chili, minced
3/4 teaspoon salt
1/2 teaspoon dried oregano
1/8 teaspoon black pepper
1 (16 ounce) can refried beans
4 flour tortillas, 10-inch size
5 ounces monterey jack cheese, coarsely grated
1/2 cup vegetable oil

Steps:

  • Preheat oven to 200°F Put an ovenproof platter in oven to warm.
  • Heat dry cast iron skillet over moderate heat until hot but not smoking, then cook tomatoes, onion, bell pepper, and garlic, turning with tongs, until all are blackened in spots, 10 to 15 minutes.
  • Remove from heat, then transfer tomatoes and 2 onion slices to a blender. Add garlic to blender along with lime juice, chili, and 1/2 teaspoon salt. Blend until coarsely puréed, then transfer salsa to a bowl.
  • Cut bell pepper into 1/2-inch-wide strips, then halve remaining 2 onion slices and separate layers. Toss bell pepper and onion with oregano, pepper, and remaining 1/4 teaspoon salt in a bowl.
  • Spread one fourth of refried beans on a tortilla, leaving a 1-inch border all around, then sprinkle with one fourth of cheese. Arrange one fourth of onion and pepper mixture in a horizontal strip across center, then fold side nearest you over them and roll up tortilla. Make 3 more burritos in same manner.
  • Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then fry 2 burritos, seam side down, until lightly browned on undersides, 1 to 2 minutes. Turn over with tongs and fry until golden, 1 to 2 minutes more. Transfer to paper towels to drain briefly, then keep warm on platter in oven. Fry remaining 2 burritos in same manner.

My MIL made these for my DH when he was younger. Now that we're married, I've taken over. I'm not sure where she got the idea of frying them. I searched for a recipe on here and didn't find one, so I hope I'm not making a double post! I'm guessing on the amount of oil for frying, and you will probably have cheese leftover.

8 flour tortillas
1 (8 ounce) can traditional refried beans
1 (16 ounce) package kraft deli style sliced American cheese
3/4 cup oil, for frying

Steps:

  • Warm the tortillas for 15 seconds in the microwave. This will prevent them from cracking when you work with them.
  • If they are not sufficiently heated, heat for an additional 10 seconds until fairly warm.
  • Once heated, keep them warm by placing them in a tortilla warmer, or two inverted plates.
  • Put the oil in a deep skillet. The oil should be about an inch deep.
  • Turn the burner to medium-low. The oil is ready when a drop of water "dances" on it.
  • Remove one tortilla at a time from the warmer and place on clean surface.
  • Spread 1-2 tablespoon refried beans in a line down center of tortilla.
  • Place half a piece of cheese, followed by an additional fourth a piece cheese on the beans.
  • Fold the top and bottom of the tortilla in, then the sides.
  • Place, seam side down, in the oil.
  • Fry until browned on one side. This will not take long. Turn and brown on other side.
  • Prepare the remaining tortillas as you did before and place them to the oil. You should have NO MORE than 3 frying at one time.
  • When you remove them from the oil, place on a thick layer of paper towels to dry.

8 or 9 potatoes, peeled and sliced
Enough oil to cook fried potatoes
1 medium onion
Salt and pepper to taste
5-6 tortillas
Crushed red peppers

Steps:

  • Peel, wash and slice your potatoes as you do for fried potatoes. Put enough oil into your skillet to fry your potatoes. Put your stove on medium heat. When oil is hot, put your potatoes in the skillet and fry on one side until golden brown and crusty. While it is cooking, chop an onion. Turn over the potatoes on other side.
  • When potatoes are golden brown, put onion on top then salt and pepper to your tasting and cover the skillet with a lid until potatoes are golden and done on both sides. Turn off skillet.
  • Heat up tortillas. Drain grease and put a serving of potatoes on tortillas, sprinkle crush red pepper on them and then roll them up. They are delicious. Serve while they are hot.

Easy Fried Burritos image

My kids always ask me to make these when they are visiting or I am at their house. These have been on the menu for many Birthday suppers throughout the years!

5 lb hamburger
2 large onions, yellow, medium
1 can(s) green chiles
1/2 c ketchup
1 pkg taco seasoning mix
24 flour tortillas
1/2 pkg velveta cheese

Steps:

  • 1. Brown hamburger with onions and drain. Add green chiles, taco seasoning, and ketchup; simmer for 10 minutes. Remove from stove and let cool a little before spooning on tortillas.
  • 2. Cut velveta into slices. Put a large spoonful of meat in the middle of tortilla and top with half a slice of Velveta. Roll tortillas and fry in electric skillet with 1/2" oil until golden brown.
  • 3. As the burrito's come out of the skillet drain on cookie sheet covered with paper towels to soak up any extra oil. Put a layer of paper towels between layers of burritos. Bake in oven at 200' to keep warm until served.

FRIED EGGS AND "REFRIED BEANS" BURRITOS

Eggs and beans are a happy match and substantial enough for dinner. These beans are quote-unquote "refried" because I've come up with a much lighter version of the classic recipe, which involves a fair amount of lard. Originally, I'd planned to serve the eggs and beans on top of crisped corn tortillas, but they were too hard to cut through. So I wrapped the whole concoction in warm flour tortillas, adding crushed tortilla chips, cheese, and salsa to the filling--and turned the dish into a breakfast-for-dinner burrito. Serve with a sliced tomato and avocado salad.

4 (7-inch) flour tortillas
1/4 cup oil
1 small onion, finely chopped (about 1/2 cup)
1 teaspoon ground cumin
1/2 teaspoon chili powder
1 (15-ounce) can pinto beans, drained and rinsed
Kosher salt and freshly milled black pepper
8 large eggs
4 ounces Cheddar, grated (about 1 cup)
1 recipe Mexican Tomatillo Salsa, recipe follows, or 1 cup bought salsa
1 cup crumbled tortilla chips
3 fresh tomatillos, husked, rinsed, and quartered
4 scallions (white and light green parts), coarsely chopped (about 1/2 cup)
1/3 cup coarsely chopped cilantro (stems and all)
2 tablespoons vegetable oil
1 tablespoon fresh lime juice
1/2 jalapeno or Serrano chile, seeds removed if desired
1 small garlic clove, minced (3/4 teaspoon)
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 300 degrees F. Wrap the tortillas in aluminum foil and set aside. Heat 2 tablespoons of the oil in a medium skillet over high heat until hot. Reduce the heat to medium; add the onion and cook, stirring occasionally, until softened, about 5 minutes. Place the wrapped tortillas in the oven to warm. Add the cumin and chili powder to the onion and cook 1 minute. Add the pinto beans and 1/2 cup water and cook for 5 minutes or until most of the water has evaporated. Remove from the heat and mash with a potato masher or fork until smooth with some lumps. Add salt and pepper, to taste, and keep warm while you cook the eggs. Heat the remaining 2 tablespoons oil in a large skillet over high heat until hot. Reduce the heat to medium-low, break the eggs into the pan and cook, covered, 5 minutes, or to desired doneness. Season with salt and pepper. To serve, spread some of the pinto bean mixture on each tortilla, top with 2 eggs, some of the cheese, salsa, and crumbled tortilla chips. Roll up and serve.   • After you remove the papery husk of the Mexican tomatillo, you're looking at a vegetable with a strong resemblance to a small green tomato. It doesn't taste like a tomato, though. Rather, it has a faintly lemony flavor all its own. Tomatillos are a key ingredient in the Mexican green salsa that is served with many dishes alongside red (or tomato-based) salsa. I have specified Tomatillo Salsa as the topping for the Fried Eggs and Refried Bean Tortillas, but it would also be delicious with any grilled or sauteed fish or chicken. Combine the tomatillos, scallions, cilantro, oil, lime juice, jalapeno, and garlic in a food processor and pulse until the ingredients are almost smooth with a few small chunks. Add salt and pepper, to taste. Cover and refrigerate until ready to serve.;

I first tried this at my Aunt Sonya's house, and my husband and I liked it so very much that we had to have the recipe. It has since become very much a favorite with us, and with his sisters (13 and 18) who spent a week with us this summer. I'm certain that this dish is not appropriately a "burrito," but alas, that's what we call it, so here it is. Sorry about the vague amount of some ingredients... but that's what I love about this recipe.

1 lb ground beef (or venison, if you are so fortunate)
1 (1 1/4 ounce) package taco seasoning
1 (15 ounce) can pinto beans with jalapeno peppers
cheddar cheese
7 flour tortillas
cooking oil

Steps:

  • Brown beef with taco seasoning. DO NOT add water to the seasoning as directed on the packet, as we have found this makes the filling much too runny.
  • Drain meat.
  • Mash beans or process in food processor. I sometimes remove a few of the jalapenos, but this is up to you.
  • Stir together beans and seasoned beef. Stir in cheese. One lady I know uses 1 cup, while we sometimes leave it out altogether. This, again, is personal preference.
  • Spoon filling into tortillas. We prefer "soft taco" sized tortillas, which will make about 7 burritos. Smaller sizes make them difficult to seal, while larger sizes tend to be "too much" for us, but they may be perfect for you! Be sure to fold in both end of the tortilla; seal shut with toothpicks.
  • Heat about 3/4" cooking oil in a pan. When hot, add 2-3 burritos. When the bottom turns a deep gold, after about 3 minutes, flip over and brown other side.
  • Drain on a wire rack over a paper-lined plate.
