Leftover Rice Made Into Spanish Rice image

If last night's stir fry resulted in leftover steamed rice, one thing you can do with it is turn it into Spanish rice. This is just about as good as Spanish rice made the traditional way.

3 cups cooked rice (leftover white or brown)
1 tablespoon olive oil
1 tablespoon butter
1/2 onion, diced
4 minced garlic cloves
1/2 cup tomato sauce (or more)
1/4 cup water
1/4 teaspoon coriander
salt and pepper

Steps:

  • Heat the oil and butter in a skillet over medium heat.
  • Saute onion until soft.
  • Add garlic and saute another minute.
  • Add the rice and saute a couple more minutes.
  • Add tomato sauce, water, and coriander.
  • Stir and bring to a simmer.
  • Reduce heat, cover, and simmer 15-20 minutes, stirring occasionally until the sauce is absorbed and the rice has lost most of its stickiness.
  • Salt and pepper to taste.

I had leftover rice to use and wanted something fresh tasting to accompany grilled salmon. This was just the ticket! Use any fresh herbs as long as they are mild like dill, parsley, cilantro, chives....Use this recipe as your base or as is. For a vegan dish use olive oil rather than butter. And, depending on how juicy your lemon is you may want to add more of the oil/butter.

2 cups rice, cooked
2 tablespoons butter
1 garlic clove, minced
1 lemon, juice and zest of
kosher salt
fresh ground black pepper
3 tablespoons fresh basil, roughly chopped

Steps:

  • In a skillet, heat the butter and then on low heat saute the garlic for 1-2 minutes, just to soften it.
  • Toss the rice with the lemon zest and lemon juice and season with salt and pepper.
  • Add the rice to the skillet and reheat.
  • Remove from heat and toss with the basil before serving.
