1 ½ teaspoons white vinegar
½ cup milk, or as needed
1 cup white sugar
1 (4 ounce) package cream cheese, softened
½ cup butter, softened
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ½ cups fresh strawberries, mashed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x5x3-inch loaf pan.
  • Pour vinegar into a measuring cup. Fill with milk to the 1/2 cup measuring mark. Set aside.
  • Blend sugar, cream cheese, and butter together using a pastry blender in a large bowl until combined and smooth. Add 1 egg at a time, blending after each addition. Add vanilla extract and mix until combined.
  • Combine flour, baking powder, baking soda, and salt in a small bowl. Stir together until combined. Fold a quarter of the flour mixture at a time into egg mixture until batter is doughy. Fold in milk-vinegar mixture until blended, making sure not to overmix. Mix in mashed strawberries with their juices just until combined. Pour dough into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the loaf comes out clean, 50 to 60 minutes.

1 cup strawberry, sliced
2 tablespoons sugar
1 1/2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup vegetable oil (or canola)
1 teaspoon vanilla extract
2 eggs, beaten

Steps:

  • In a bowl, place the sliced strawberries. Sprinkle the slices with the 2 tablespoons of sugar. Place in the refrigerator for several hours or overnight. This will create a nice syrup with the berries.
  • Preheat the oven to 350°F.
  • Blend together the flour, 1 cup sugar, baking soda, and salt in a large mixing bowl.
  • In a medium mixing bowl, combine the oil, vanilla, eggs, strawberry slices and its syrup. Dump the strawberry mixture into the flour mixture, and mix just until blended.
  • Pour the batter into a greased loaf pan (9 inches x 5 inches) and bake for approximately 50 minutes.
  • HINTS: This bread is lovely with cream cheese. Egg substitute (like Egg Beaters) can be used instead of the eggs - just make sure you use the equivalent of 2 eggs. Chef Walter suggests variations of adding 1 1/2 cup chopped pecans or a bit of cinnamon to the batter, if you like.

I think it's best with a fruity beer, such as one with citrus or apple flavors, but you may use any favorite beer. You may also substitute lemon-lime soda for beer.

¼ cup white sugar
1 (12 fluid ounce) can or bottle fruity beer
1 ½ cups chopped strawberries
½ cup loosely packed chopped fresh basil leaves
1 tablespoon coarse sugar, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
  • Stir flour and white sugar together in a large mixing bowl. Pour in beer and stir. Add strawberries and basil and stir until well combined; batter will be stiff and sticky. Scoop batter into the prepared loaf pan. Sprinkle the top generously with coarse sugar.

1/2 cup shortening
1 cup sugar
1/2 teaspoon vanilla extract
2 eggs, separated
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup fresh strawberries, crushed or diced

Steps:

  • Cream shortening, sugar and vanilla until fluffy.
  • Beat in egg yolks.
  • Sift the remaining dry ingredients.
  • Add the sifted ingredients alternately with strawberries to creamed mixture.
  • Beat whites until stiff but not dry.
  • Fold into berry mixture.
  • Grease a loaf pan.
  • Place batter into pan.
  • Bake in a preheated 350Fº oven for about 1 hour.
  • Remove to rack to cool.
  • Remove from pan after 15 minutes and let cool completely.
  • Freezes well.

1 1/2 cups fresh strawberries, sliced
1 cup granulated sugar, divided
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
2 eggs
1/2 teaspoon vanilla extract
1/2 cup butter, melted

Steps:

  • Preheat oven to 350°. Lightly grease and flour a standard glass (8x5") loaf pan.
  • Rinse, core and slice the strawberries; place in a small bowl and sprinkle with 1/2 cup sugar.
  • In a large mixing bowl, blend together the remaining sugar, flour, baking powder, baking soda, salt and cinnamon.
  • In a medium bowl, beat the eggs until foamy, then add the vanilla and melted butter. Make sure the melted butter isn't too hot-just barely melted.
