4 oz European butter (salted and room temperature)
1 tablespoon flaky sea salt (such as Maldon salt)
2 bunches radishes (with greens attached)

Steps:

  • Prep and wash the radishes in cold water. Pat them dry with a paper towel. Cut them in half or in quarters if radishes are larger, keep the greens attached to the radishes.
  • Add radishes and softened butter to a plate or wooden board. Sprinkle with flaky sea salt. To serve, using a butter knife, add butter and salt on a radish and enjoy. Serve on its own or with sliced baguette.

Softened butter soothes the peppery bite of freshradishes. Serve the flavored salts, the softened butter,and the whole radishes in separate dishes, andallow guests to dip as they like.

3 tablespoons whole fennel seeds
2 tablespoons whole cumin seeds
2 cups coarse salt
2 teaspoons ground paprika
1 1/2 teaspoons cayenne pepper
24 medium radishes, trimmed
8 tablespoons (1 stick) unsalted butter, room temperature

Steps:

  • Toast fennel seeds in a dry skillet over medium heat, shaking pan continuously, until aromatic, about 4 minutes. Transfer to a spice grinder; grind until seeds are no longer coarse. Repeat with cumin seeds.
  • In a small mixing bowl, stir ground fennel seeds into 1/2 cup coarse salt; transfer to a small serving bowl. Wipe out mixing bowl, then mix ground cumin seeds into 1/2 cup coarse salt; transfer to another small serving bowl. Wipe out mixing bowl, then stir paprika and cayenne pepper into 1/2 cup coarse salt; transfer to a third serving bowl.
  • Arrange radishes on a serving platter. Pour the remaining 1/2 cup salt into another serving bowl. Transfer softened butter to a slightly larger bowl. Serve.

  • Neatly cut the butter into 4 small portions, and set on plates.
  • Pile a small amount of salt on each plate.

2 bunches radishes with the tops intact
Sea salt
Good salted butter or Herbed Butter, recipe follows
1 French baguette, sliced diagonally, and lightly toasted
1/4 pound unsalted butter, at room temperature
1 1/2 teaspoons minced scallions
1 1/2 teaspoons minced fresh dill
1 1/2 teaspoons minced fresh parsley leaves
1/2 teaspoon freshly squeezed lemon juice
1/2 teaspoon kosher salt
Pinch freshly ground black pepper

Steps:

  • Arrange the radishes on a bed of sea salt. Spread the butter on slices of toasted bread and arrange artfully on a platter. Serve at room temperature.
  • Combine all the ingredients in the bowl of an electric mixer fitted with the paddle attachment on low speed until combined. Do not whip.

Sliced radish and butter, finished with a pinch of salt is a simple French snack where the butter cuts the hot pepperiness of the radish, giving you an indulgent low-carb treat in seconds. I use butter very rarely, otherwise, but it does work here. This is my homemade version of the popular French snack. Use the best radishes you can find (the greens should be bright and not wilted, and the radish should be firm) and quality butter at room temperature.

Steven Satterfield, the chef at Miller Union in Atlanta, included this very French picnic recipe in his cookbook, "Root to Leaf." As he points out, the key is to use a lot of butter, a lot of radishes and plenty of salt. The recipe yields four sturdy desk- or school-lunch sandwiches, or you can divide them further, into a dozen little bites for hors d'oeuvres.

1 baguette
12 tablespoons (1 1/2 sticks) unsalted butter, room temperature

1 small handful arugula
1 teaspoon finely minced fresh garden herbs, like chives or tarragon

Steps:

  • Slice the baguette lengthwise and then crosswise, creating four quarters. Spread butter on the tops and bottoms of each quarter and sprinkle with salt. Pile sliced radishes onto the bottoms, then lay the arugula on top of them and sprinkle with the herbs. Top the sandwiches and press them down firmly.
  • Serve as is, cut into small sandwiches for hors d'oeuvres, or wrap for lunch.
