1 red onion, sliced
2 cups fresh pineapple, cut into chunks
2 tablespoons olive oil
1 tablespoon flour
2 teaspoons chili powder
2 teaspoons cinnamon
2 teaspoons kosher salt
1 teaspoon cumin
1 teaspoon ground black pepper
1/2 teaspoon cayenne
4 -6 chicken breasts

Steps:

  • in 2 tbsp oil, saute onion in skillet.
  • add pineapple, cook until softened, set aside.
  • combine rub ingredients and rub on breasts, coating well.
  • brown in oil, 3 minutes per side, until browned.
  • add pineapple mixture back to skillet.
  • cover and simmer 5 minutes,, turn breasts over and cook 5 mins more serve over couscous.

4 boneless skinless chicken breasts, pounded to 1/3-inch uniform thickness
salt, to taste
cracked black pepper, to taste
1/4 cup flour
grapeseed oil, for frying
butter, for frying
handful of fresh pineapple sage leaf, washed and chopped
2 tablespoons ginger puree (read *Note)
1/2 cup white wine
1 cup chicken broth
1 lb pasta (we like gemelli or fettuccini)
cracked black pepper, to taste
whole pineapple sage leaf

Steps:

  • Preparing the chicken: If you have a little time before cooking dinner, lightly salt and pepper the chicken breasts. It's great if you can do this the night before, but it's not necessary.
  • Mix about a half teaspoon of salt in with the flour along with a little pepper. Dredge both sides of the chicken lightly in the flour. (I used a small fine mesh sieve to evenly and lightly coat the chicken.).
  • Heat a large heavy skillet (with a lid) over medium high heat, with a little grape seed oil and about half a tablespoon of butter. Quickly sear both sides of the chicken breast until just faintly golden; you don't want the insides to cook much at all.
  • Cover tightly and turn the heat down very low. Cook for 10 minutes without lifting the lid. Remove from the heat and let sit for another 10 minutes, still tightly covered.
  • Transfer chicken to warming plate, tented with foil to keep it warm.
  • *Note: to make your own ginger puree, finely grate 1 tablespoon fresh ginger and stir in about 1 tablespoon softened honey (or cane sugar). Please, NO dried ginger.
  • Whisk the ginger puree into the wine.
  • Heat the skillet with the pan juices and fat, scrapping up any fond (brown bits) from the bottom of the pan, and sautè the sage leaves just until wilted.
  • Deglaze the pan with the wine and ginger mixture, letting it bubble until slightly reduced.
  • Add the broth and cook until reduced by half.
  • Meanwhile, cook the pasta in salted boiling water according to package instructions. Drain and toss with the ginger sauce. I saved a little bit of the ginger sauce to pour over the chicken. OR: Place the pasta on the platter, then the chicken and pour all the sauce evenly on top of the mixture.
  • Serve the chicken on top of the pasta. Garnish with a few whole pineapple sage leaves.
  • Serving suggestion: steamed vegetables and/or a tossed salad using seasonal produce. Basmati rice or jasmine rice is another option instead of pasta.

When my daughter spent a summer in China, she told me about lychees, a pink fruit they would pick and eat right off the trees. I'd never heard of them, but found canned lychees in an international market and began a search for recipes using them. This recipe intrigued me because of the unusual mix of juices in the sauce (tomato, orange, and pineapple). It also calls for chestnut flour, which I've never used, but I've been told it's sold in World Market, Whole Foods, and specialty food stores. This recipe is from the Empress of China Restaurant in San Francisco, California.

1 fresh pineapple
1 1/2-2 lbs boneless skinned chicken breasts, cubed
1/4 cup chestnut flour
2 cups oil
1/2 white vinegar
1/2 cup pineapple juice
1/2 cup orange juice
1/2 cup tomato juice
1/2 cup sugar
1 1/2 teaspoons salt
1/2 fresh lemon
1 tablespoon cornstarch
2 tablespoons water
1 (8 ounce) can lychees

Steps:

  • Cut pineapple in half. Remove fruit from shell, dice, and set aside.
  • Dip chicken in flour. Deep fry in very hot oil until golden brown, about 5 minutes; drain on paper towels.
  • Combine vinegar and juices, sugar and salt in saucepan. Squeeze lemon juice into sauce and place lemon half in pan. Bring to boil. Remove lemon shell.
  • Stir in cornstarch dissolved in water. Return to boil and cook, stirring until thick and clear, about 1 to 2 minutes.
  • Blend in chicken, pineapple and lychees and heat through. Serve immediately.

1 cup finely chopped fresh pineapple
3 tablespoons chopped fresh mint or snipped fresh cilantro
2 tablespoons finely chopped red onion
1 tablespoon fresh lemon juice
3/4 teaspoon grated peeled gingerroot
1 teaspoon Chili Powder (page 277) or no-salt-added chili powder
1/2 teaspoon dried thyme, crumbled
1/4 teaspoon ground allspice
1/4 teaspoon pepper
1/4 teaspoon salt
4 boneless, skinless chicken breast halves (about 4 ounces each), all visible fat discarded
Cooking spray

Steps:

  • In a small bowl, stir together the salsa ingredients. Set aside.
  • In another small bowl, stir together the Chili Powder, thyme, allspice, pepper, and salt. Sprinkle over both sides of the chicken. Using your fingertips, gently press the mixture so it adheres to the chicken.
  • Lightly spray a large skillet with cooking spray. Heat over medium-high heat. Cook the chicken for 4 minutes. Turn the chicken over and lightly spray with cooking spray. Cook for 2 to 4 minutes, or until no longer pink in the center. Serve the chicken with the salsa on the side.

10 oz skinless, boneless chicken breast
2 cups unsweetened coconut milk
2 tbsp red curry paste
2 lime leaces, torn into thirds
2 tbsp fish sauce
1 tsp sugar
1 average pineapple, cut into 1/2 inch chunks
Strips of red pepper
2.5 cups freshly steamed rice

Steps:

  • 1. Slice the chicken into strips that are 1/4 inch thick, 2 inch long, and about 1 inch wide. If you find it difficult to cut thinly through fresh meat, leave it in the freezer for 15-20 minutes to harden slightly, and then slice. Reserve. 2. Heat 1 cup of coconut milk in a wok (or large frying pan) on high heat until it boils. Add red curry and stir-fry to dissolve for 1-2 minutes. Add lime leaves and fish sauce and stir briefly. Immediately add reserved chicken and sugar and stir-fry for 2 minutes, until the chicken in springy. Add pineapple and stir-fry for 2 minutes. Add remaining coconut milk and stir-cook for 2-3 minutes, until oil rises to the surface. 3.Transfer to a serving dish, top with red pepper and serve immediately, accompanied by steamed rice.

4 green onions, chopped
2/3 cup fresh cilantro leaves, chopped
2 tablespoons fresh lemon juice
1 1/2 teaspoons ground cumin
1 -2 tablespoon olive oil
4 boneless skinless chicken breast halves
3/4 teaspoon cinnamon, to taste
salt & pepper, to taste

Steps:

  • Chop fresh pineapple roughly and mix in a small bowl with green onions, cilantro, lemon juice, and cumin; season to taste with some salt& pepper; cover and chill (can be made 4 hours ahead).
  • Heat oil in a large skillet on medium-high heat.
  • Season both sides of chicken with some salt& pepper and some cinnamon to taste.
  • Saute chicken in oil about 5 minutes per side or until cooked through and no longer pink inside- but still moist.
  • Spoon pineapple mixture over each serving and serve immediately.

GRILLED TERIYAKI CHICKEN OR TOFU WITH FRESH GRILLED PINEAPPLE

A delicious teriyaki marinade - made with soy sauce, brown sugar, ginger, and garlic - lends a sweet, briny flavor to chicken or tofu (or both).

4-6 boneless
1/2 cup vegetable oil
1 cup soy sauce
3 tablespoons brown sugar
4 cloves garlic (minced)
2 tablespoons minced fresh ginger root
2 tablespoons sherry
1 fresh pineapple (peeled, cored, and cut into rings)

Steps:

  • In a small bowl, whisk together the vegetable oil, soy sauce, brown sugar, garlic, ginger, and sherry.
  • Prep the chicken
  • Cut off any fat and place in a large Ziploc bag. With a rolling pin, pound chicken to 1/2 inch thickness. Pour in the marinade (or half the marinade if doing 1/2 chicken and 1/2 tofu) and place the bag of chicken in the fridge. Let the chicken marinate for 6 - 8 hours, turning once or twice if you can.
  • Prep the tofu
  • Press the block of tofu to help get some of the moisture out. The best way to do this, I've found, is to line a plate with five or six paper towels, put the block of tofu on there, add another paper towel or two on top, and top with about four dinner plates. Let the dinner plates weigh down the tofu, pressing out the extra moisture, for 10-15 minutes. But watch your plates! Sometimes the tofu sinks down on one side and your plates are in danger of tumbling. Now lay the tofu slab on its back and slice into 5 - 6 slices about 3/4 inches wide (or 2 - 3 slices if using 1/2 chicken and 1/2 tofu). Lay tofu in a shallow bowl or pan and pour the marinade on the top. Unless you like your food salty (I admittedly do), I'd suggest marinating tofu for no more than a couple hours.
  • Cook it up
  • Heat your grill to about 350-375 degrees, pull your chicken and/or tofu out of the fridge, and plop it on the grill. Turning often (be very careful with the tofu), grill for about 15 minutes or until the chicken is no longer pink inside and the tofu is just getting crisp around the edges and has dark grill lines.
  • Grill the pineapple slices for about 2-3 minutes on each side and serve along side the chicken and/or tofu.
