1 tablespoon lemon juice
1 tablespoon rice vinegar
1 tablespoon white balsamic vinegar
1 tablespoon honey
1/2 teaspoon salt
1/2 teaspoon Dijon mustard
1/4 teaspoon coarsely ground pepper
2/3 cup coarsely chopped peeled fresh pear
1/3 cup olive oil
SALAD:
1 large pear, thinly sliced
1 tablespoon lemon juice
8 cups torn romaine lettuce
Salt and pepper to taste
1 cup glazed pecans
1 cup (4 ounces) crumbled Gorgonzola cheese
1/2 cup dried cherries

Steps:

  • Place the first eight ingredients in a blender; cover and process until smooth. While processing, gradually add oil in a steady stream., For salad, toss sliced pear with lemon juice. In a large bowl, toss romaine with 1/2 cup dressing; season with salt and pepper to taste. Top with pear, pecans, cheese and cherries. Serve immediately with remaining dressing on the side.

4 medium apples, thinly sliced
2 medium pears, thinly sliced
1 medium cucumber, seeded and chopped
1 medium red onion, halved and thinly sliced
1/4 cup apple cider or juice
1 tablespoon snipped fresh dill or minced fresh tarragon
1 tablespoon olive oil
1 tablespoon spicy brown mustard
2 teaspoons brown sugar
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large bowl, combine apples, pears, cucumber and onion. In a small bowl, whisk remaining ingredients until blended. Pour over apple mixture and toss to coat. Refrigerate until serving.

Fresh Poached Pear, Toasted Pecan and Bleu Cheese Salad with Pear Vinaigrette image

1 head Boston lettuce
3/4 cup Pear Vinaigrette, recipe follows
4 ounces bleu cheese, crumbled
1/2 cup pecans, lightly toasted
2 Poached Pears, recipe follows, halved and cored
4 Bosc pears
1 cup white wine
2 cups water
2 tablespoons sugar
1/2 vanilla bean, split
2 whole star anise
1 lemon peel
1 orange peel
1 small cinnamon stick
2 poached pears, recipe above, pureed
1/4 cup walnut oil
1/4 cup red wine vinegar
1/4 cup poaching liquid from the poached pears
Salt and freshly ground black pepper, to taste

Steps:

  • To assemble salad, wash lettuce well and drain until very dry. Toss leaves in the Pear Vinaigrette in a salad bowl. Add the bleu cheese and pecans.
  • Place a mound of lettuce on each of 4 plates. Serve with 1/2 a Poached Pear.
  • Peel pears, leaving stems intact and trimming bottom to "seat" them firmly in bottom of large stockpot.
  • Into the stockpot, add the wine, water, sugar, vanilla bean, star anise, lemon and orange peels, and cinnamon stick and bring to a boil over high heat. Reduce heat and simmer for 20 to 25 minutes. Remove from stove and let cool to room temperature before refrigerating. Reserve 1/4 cup of poaching liquid for the vinaigrette.
  • Place ingredients in large bowl and whisk together. Store in an airtight container in the refrigerator for up to 1 week.

6 fresh figs (green or purple), sliced in 1/2
4 tablespoons crumbled Gorgonzola
4 tablespoons toasted chopped pecans
Lemon Vinaigrette, recipe follows
1 cup extra-virgin olive oil
1/2 cup fresh lemon juice
1 teaspoon salt
1 teaspoon lemon extract
2 tablespoons lemon curd
1 tablespoon honey
1 teaspoon Dijon mustard

Steps:

  • Place a pile of greens on each salad plate. Arrange the fruits on top and sprinkle with cheese and nuts. Lightly drizzle with vinaigrette.;
  • Combine all the ingredients in a bowl and whisk to combine.

1 teaspoon ground cinnamon
1 cup walnuts
1 (15.25 ounce) can pears in light syrup, drained reserving syrup
3 tablespoons white wine vinegar
3 tablespoons fat-free vanilla yogurt
2 tablespoons honey
¾ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 teaspoon vanilla extract
1 pinch ground nutmeg
½ (10 ounce) package mixed salad greens
½ (10 ounce) bag spinach leaves
1 pear - peeled, cored and sliced
½ cup dried cherries
⅓ cup crumbled feta cheese

Steps:

  • Combine sugar, cinnamon and walnuts in a skillet over medium heat. Mix together until sugar and cinnamon are melted and walnuts are evenly coated. Remove from heat. Spread walnuts on a large plate to cool.
  • In the container of a blender, combine the drained pears, 1/3 cup of the reserved syrup from the can, vinegar, yogurt, honey, salt, pepper, vanilla extract, and nutmeg; blend until smooth.

2 cups shredded romaine lettuce
3 red pears, sliced
2 medium carrots, shredded (about 1 cup)
1 green onion, chopped
2 teaspoons sesame seeds, toasted (optional)
1/4 cup olive oil or 1/4 cup vegetable oil
2 tablespoons rice vinegar
1 tablespoon soy sauce
2 teaspoons sugar
1/2 teaspoon toasted sesame oil
1/4 teaspoon dry crushed red pepper

Steps:

  • To make the dressing:.
  • Whisk the vinegar, soy sauce, sugar, sesame oil and red pepper with the oil. Set aside. (Makes 1/2 cup).
  • To make salad:.

2 (10 ounce) packages fresh spinach leaves
3 -4 ripe pears, cut into 1/2 inch cubes
1 small red onion, thinly sliced
3/4 cup sugar
1/3 cup white vinegar
1 teaspoon ground dry mustard
1 teaspoon salt
1 cup vegetable oil
1 1/2 tablespoons poppy seeds

Steps:

  • Tear spinach leaves into bite-sized pieces and place in large salad bowl (Amount of spinach can be varied based on how much dressing you like on your salad).
  • Add pears and onion.
  • In food processor with steel knife blade, combine sugar, vinegar, mustard, and salt.
  • With machine running, add oil through feed tube and process until dressing is thick (The slower you add the oil, the thicker the dressing).
  • Add poppy seeds.
  • Drizzle salad with dressing and toss well to coat.
  • Serve immediately.
  • You can make the dressing ahead and mix salad right before serving.

Dressing:
1 teaspoon dry mustard
1/2 teaspoon salt
pepper to taste
1 tablespoon honey
3 tablespoons cider vinegar
1/3 cup extra-virgin olive oil
Salad:
3 ripe red pears, sliced thinly
1 avacado peeled and sliced
1/2 cup orange juice
6 strawberries sliced
6 cups spring mix
5 ounces gorgonzola cheese
1/2 cup chopped green onion
1/2 cup carmal

Steps:

  • For dressing, combine the dry mustard, salt, pepper, honey, and vinegar in a bowl. Whisk in the olive oil to blend. Set Aside. For the salad, in a bowl toss the pears and avocado with the orange juice and set aside. Place the lettuce in a serving bowl and top with the pears, avocado, onion, strawberry, cheese, and pecans. Toss with the dressing just before serving.
