HERBY STUFFED TOMATOES

6 medium vine-ripened tomatoes, tops removed and reserved (like "hats"), insides scooped out and reserved
1 tablespoon honey
3 tablespoons extra-virgin olive oil
Kosher salt
1 tablespoon grated ginger
1 tablespoon red wine vinegar
2 teaspoons ground cumin
1 bunch scallions (6 to 8), coarsely chopped, green and white parts both
One 15.5-ounce can low-sodium chickpeas, drained and rinsed
1 generous cup spinach, coarsely chopped
1 generous cup arugula, coarsely chopped
8 leaves fresh basil
Freshly ground black pepper
1/2 cup finely grated Parmesan cheese

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment.
  • Arrange the tomatoes cut-side up with space between each on the prepared baking sheet. Drizzle with the honey and 2 tablespoons of the olive oil and season with salt. Bake until slightly tender, 5 to 6 minutes. Set aside.
  • In a large heavy-bottomed pot, heat the remaining 1 tablespoon olive oil over medium heat. Add the ginger, vinegar, cumin, scallions and reserved insides of the tomatoes and stir to combine. Add the chickpeas, spinach and arugula and cook until the greens are wilted, about 1 minute. Remove from the heat. Tear 2 leaves of basil and stir into the filling. Season with salt and pepper.
  • Put 1 basil leaf into each tomato base and gently spoon in a liberal amount of filling. Bake until piping hot, 12 to 15 minutes. Top each stuffed tomato with grated Parmesan and a tomato "hat."

BAKED STUFFED TOMATOES WITH HERBS



Baked Stuffed Tomatoes with Herbs image

When the weather is just too wonderful to cook indoors, this stuffed tomato recipe can be cooked on a grill over medium heat for 10 to 15 minutes instead of being baked in the oven.

6 ounce day-old white bread, torn into small pieces (4 cups)
0.5 cup olive oil
1 cup whole pecans, walnuts, and/or almonds, coarsely chopped
4 large or 5 medium tomatoes
1 cup chopped fresh mushrooms
2 tablespoon fresh thyme, marjoram, or oregano leaves
2 garlic cloves, minced
Salt and pepper

Steps:

  • Preheat oven to 400°F. Toss bread with 4 Tbsp. of the olive oil and spread on a rimmed baking sheet with the nuts. Bake 5 to 7 minutes or until bread is crisp and golden and nuts are toasted.
  • Halve the tomatoes. Remove and discard seeds. Scoop out flesh from tomato halves, coarsely chopping any large pieces, and place in a medium bowl. Add toasted bread and nuts, mushrooms, thyme, garlic, 1 tsp. kosher salt, 1/2 tsp. ground black pepper, and remaining 4 Tbsp. olive oil; toss. Spoon bread mixture into tomato halves. Place on baking sheet.
  • Bake 15 to 20 minutes or until tops are browned and tomatoes just start to collapse. If you like, top with additional thyme. Serve immediately. Serves 4.

1 cup chopped onion
1 garlic clove, minced
1 tablespoon plus 2 teaspoons butter, divided
1/4 cup plus 1 tablespoon seasoned bread crumbs
2 tablespoons grated Parmesan cheese
4 large tomatoes, halved
1 tablespoon chopped fresh basil
1 tablespoon minced fresh parsley

Steps:

  • In a small skillet, saute onion and garlic in 1 tablespoon butter until tender. Melt remaining butter. In a small bowl, combine the onion mixture, bread crumbs, cheese and melted butter. Spoon 2 tablespoons onto each tomato half., Place on a baking sheet. Broil 8 in. from the heat for 4-5 minutes or until lightly browned. Sprinkle with basil and parsley. Serve immediately.

2 large ripe tomatoes
1 (10 ounce) can diced tomatoes with green chile peppers, partially drained
½ cup dry bread crumbs
⅔ cup shredded Cheddar cheese
¼ pound smoked sausage, cut into 1 inch pieces

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut the tops off of the tomatoes and use a knife to cut around the inside, separating the flesh from the skin. Scoop out the flesh. Place the tomatoes in a small baking dish. In a small bowl combine the canned tomatoes with the bread crumbs, 1/3 cup of cheese and the sausage; mix well. Spoon the mixture into the tomato skins and top with the remaining 1/3 cup of cheese.
  • Bake in preheated oven for 15 minutes.

Found this recipe in AllYou Magazine Sept 2008. Really can't mess this recipe up. I love using Campenelle tomatoes but if they are not available try finding Tomatillo tomatoes. Both of these are sturdy tomatoes that hold up well to stuffing/fillings and give you a good 2-3 bite appetizer.

8 tomatoes (Campenelle or Tomatillo would work best)
1 tablespoon unsalted butter
4 tablespoons olive oil
1/2 onion, finely chopped
4 garlic cloves, minced
3 cups fresh bread, crumbs
2 tablespoons chives, chopped
2 tablespoons fresh parsley, chopped
2 tablespoons fresh basil, chopped
1 teaspoon dried oregano
1 cup parmesan cheese, grated
1/4 cup tomato juice (saved from tomatoes above)
1 large egg, beaten
salt and pepper

Steps:

  • Preheat oven to 375°F Grease a 9x13" baking dish.
  • Cut tops off tomatoes and spoon out the flesh. Place flesh in a sieve and press down lightly to retain juices (you will need 1/4 cup of juice total). Blot insides of tomatoes with a towel to remove excess juices. Season insides with salt and pepper.
  • Melt butter with 2 tbs of the olive oil in a skillet over LOW heat. Add onion and saute for 5 minutes. Add garlic and saute for 3 minutes. Remove from heat.
  • Stir in bread crumbs, herbs and Parmesan. Stir in reserved 1/4 cup tomato juices and then the egg.
  • Stuff tomatoes with breadcrumb mixture. Place tomatoes in prepared baking dish in a single layer.
  • Drizzle with remaining 2 tbs of olive oil.
  • Bake for 30 minutes until topping is browned and crisp.
  • Serve immediately while hot/warm.

1 clove garlic, minced

  • Preheat oven to 400 degrees F.
  • Slice tomatoes in half horizontally and scoop out pulp and seeds. Salt insides and rest upside down on a sheet pan lined with a wire rack to extract juices, about 15 minutes. Meanwhile, in a medium bowl, mix together bread crumbs, garlic, basil, pepper, 1/4 cup of the grated Parmesan and oil. Stuffed Tomatoes with Confit Vegetables, Fresh Herbs and Smoked Salmon image

8 medium size tomatoes
4 ounces of smoked salmon
1 carrot peeled and small diced
1 bulb fennel diced
1 branch celery diced
1 red onion diced
1 cup of sour cream
1 cup of chicken stock
1 branch of dill, chives, and Italian parsley
Salt and pepper to taste

Steps:

  • Immerse tomatoes in boiling water for several about 30 seconds to loosen skin. Remove from boiling water and immerse in ice water to refresh. Remove the skin, keeping tomatoes in tacked, then cut the top cap off and reserve, remove the inside and discard. In a small saute pan over medium heat sweat all the vegetables together with a little bit of olive oil, then add the chicken stock and reduce until mixture is almost dry. Once cooked chilled vegetables in bowl over ice and fold the chopped herbs, the tiny bits of smoked salmon and the sour cream. Fill the tomatoes and serve 2 per order.

5 beefsteak tomatoes
1 cup flat leaf parsley, chopped
3/4 cup Italian seasoned breadcrumbs
1 cup provolone cheese, grated
1/4 teaspoon ground black pepper
1 teaspoon butter, softened
2 tablespoons extra virgin olive oil
1 garlic clove, finely minced (optional)

Steps:

  • Preheat the oven to 375 degrees F.
  • Cut the tomatoes in half, horizontally. Seed by gently squeezing the tomato halves. Use a small spoon to gently hollow out the inside of the tomatoes, being careful not to puncture the outer shell. Reserve the pulp.
  • Chop the reserved pulp and put in a medium bowl. Add the parsley, bread crumbs, cheese, optional garlic, and pepper and mix gently to combine.
  • Place the tomato halves in a buttered casserole dish, and fill with the bread crumb mixture.
  • Drizzle the top of the tomatoes with olive oil. Bake until the tops are browned, about 20 minutes.

4 large tomatoes, tops cut off, and hollowed out, insides reserved
20 fresh spinach leaves, stemmed and finely chopped
1 green bell pepper, finely chopped
4 ounces feta cheese, crumbled (marinated is good)
1 jalapeno, seeded stemmed, and finely chopped
1 bunch fresh basil
1 bunch fresh chives
1 bunch fresh thyme
1 lime, juice of
2 tablespoons olive oil
salt and pepper
4 ounces fresh grated parmesan cheese

Steps:

  • Chop the insides of the tomatoes and put them in a bowl (I leave the seeds out as best I can).
  • Destem the spinach and chop finely, add to the bowl. Do NOT use frozen spinach for this, if you can't get fresh, use rucola lettuce, or mangold or something else.
  • Add the bell pepper, feta, herbs, and jalapeno, mix well.
  • As for the herbs, use whatever is fresh in your garden, be creative!
  • Add lime juice, and oil, stir well and add salt and pepper to taste. Stuff the tomatoes with the mixture, and top with parmesan cheese.
  • Leave in the fridge for 20 minutes before serving.

TOMATOES STUFFED WITH BULGUR AND HERBS



Tomatoes Stuffed With Bulgur and Herbs image

These stuffed tomatoes make a great summer dish. You can serve them either warm or at room temperature. I like using bulgur for stuffed vegetables, because it's light and softens quickly.

1/2 cup medium or coarse bulgur
Salt to taste
6 medium-size, ripe but firm tomatoes
1/2 cup mixed chopped fresh herbs, such as parsley, dill, mint, chives, chervil and basil
1/4 cup lightly toasted pine nuts
3/4 teaspoon cinnamon
2 tablespoons extra virgin olive oil
1 cup thickened yogurt or thick Greek yogurt
1 or 2 cloves garlic (to taste)
1 tablespoon chopped fresh mint

Steps:

  • Place the bulgur in a bowl and add 1/4 teaspon salt. Mix together. Bring 1 cup water to a boil, and pour over the bulgur. Allow to sit for 30 minutes or until the bulgur is soft and fluffy. Transfer to a strainer and press out excess water. Set aside.
  • Preheat the oven to 350 degrees. Slice off the tops of the tomatoes, about 3/4 inch down from the stem (or far enough down that it will be easy for you to hollow them out). Using a teaspoon or a grapefruit spoon, carefully scoop out the seeds, taking care not to cut through the skins. Place in a strainer set above a bowl. Rub the seed pods against the strainer to extract the juice. Discard the seeds. Carefully scoop out the pulp, and chop fine.
  • Mix together the bulgur, herbs, garlic, pine nuts, the chopped tomato pulp, 1/4 cup of the strained juice and 1 tablespoon of the olive oil. Season to taste with salt and pepper. Season the hollowed out tomatoes with salt and pepper. Fill each tomato with the bulgur filling (you may have some stuffing left over). Place in a baking dish that is small enough to fit the tomatoes snugly. Drizzle 1/2 teaspoon olive oil over each one, and place the caps on top. Pour about 1/2 inch of water into the pan, and cover with foil. Bake 45 minutes. Remove from the oven and uncover. Serve warm, or allow to cool to room temperature.
  • Puree the garlic with a pinch of salt in a mortar and pestle. Stir into the yogurt, along with the mint. Serve the stuffed tomatoes with a dollop of the yogurt.

1 cup rough bread crumbs from a rustic loaf
2 garlic cloves, smashed to a paste with a little salt
2 tablespoons chopped parsley
2 tablespoons chopped basil
1 teaspoon chopped thyme
1 ounce of grated Parmesan or pecorino cheese
Pinch of crushed red pepper, optional

Steps:

  • Heat oven to 375 degrees. With a paring knife, core tomatoes. Use a teaspoon to scoop out the center of each tomato. Season tomatoes with salt and pepper and place in a baking dish.
  • Mix together bread crumbs, garlic, parsley, basil, thyme, cheese and red pepper, if using. Put 2 to 3 tablespoons of bread-crumb mixture in the hollow of each tomato.
  • Bake 30 minutes, until bread-crumb mixture is nicely browned and tomatoes are soft. Let cool slightly before serving.
