8 ears corn (still in the husk)
2 red bell peppers, diced
2 fresh jalapenos, diced
1 cup heavy cream
1/2 cup milk
Salt and freshly ground black pepper
1 stick salted butter, cut into pieces

Steps:

  • Preheat the oven to 350 degrees F.
  • Remove the corn from the husks. In a large, deep bowl, slice off the kernels of corn with a sharp knife. Turn the knife to the dull side and scrape the cob all the way down to remove all the bits of kernel and creamy milk inside. (I do this inside the bowl because it goes everywhere if you cut it on a board.)
  • Add the red bell peppers, jalapenos, heavy cream, milk, salt to taste, a generous amount of pepper and butter and mix it well. Pour into a 9 by 13-inch baking dish. Bake until thoroughly warmed through, 30 to 45 minutes.

4 slices bacon
8 ears fresh corn
¼ cup butter
1 teaspoon salt
2 large tomatoes, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place bacon in a large, deep skillet. Cook over medium-high heat until crisp and evenly brown; drain. Chop bacon, and set aside.
  • Cut corn from cobs. There should be about 4 or 5 cups of corn kernels. Melt butter in a large skillet over medium heat. Add the corn, and cook for about 5 minutes, stirring constantly. Stir in the bacon and salt, and remove from heat.
  • Spread a layer of the corn mixture into the bottom of a 2-quart casserole dish, then layer with tomatoes. Repeat layers twice, ending with tomatoes on the top.
  • Bake uncovered in preheated oven for 30 minutes, or until corn is tender.

3 ears fresh corn on the cob
1 large zucchini, about 1/2 pound
1 large yellow pepper, about 1/2 pound
2 tablespoons butter
3/4 cup finely chopped onions
cup heavy cream
Salt to taste if desired
Freshly ground pepper to taste
1/3 cup finely shredded fresh basil

Steps:

  • Scrape the kernels from the corn. There should be about 2 1/2 cups.
  • Trim off the ends of the zucchini. Cut the zucchini into half-inch cubes. There should be about 2 cups.
  • Core, seed and remove the veins from the yellow pepper. Cut the pepper into half-inch pieces. There should be about 1 1/2 cups.
  • Heat the butter in a casserole and add the onions and pepper pieces.
  • Cook, stirring, about 2 minutes and add the zucchini and corn. Cook, stirring, about 1 minute. Add the cream, salt and pepper. Cover and cook 3 minutes. Add the basil and stir to blend. Serve.

2 cups cooked wild rice
3 -4 cups fresh corn kernels (scraped off the cob)
2 eggs, beaten
1 cup heavy cream
1 -2 teaspoon kosher salt (or table salt to taste)
cayenne pepper
6 tablespoons butter
1/2-1 cup milk, for thinning

Steps:

  • Preheat oven to 350 degrees.
  • Cook wild rice in chicken broth until almost done. Rice should still have a firm (but not crunchy) bite. Drain rice and allow to cool.
  • Scrape corn kernels into a large mixing bowl. Add in cream, butter, beaten eggs, salt, and cayenne pepper. Stir together.
  • Add in cooled wild rice, stirring gently. Splash in milk so that mixture is stirrable, but not overly juicy.
  • Taste for seasonings, adding more salt or cayenne pepper if needed.
  • Bake for 30 to 45 minutes, or until just turning golden brown on top and mixture is somewhat set.

1 1/2 c sour cream
2 c fresh (georgia) corn kernels, uncooked *
2 c monterey jack cheese, shredded **
1 can(s) can chopped green chilies, drained (i used mild) ***
1/2 c cheddar cheese, shredded
salt and pepper to taste
* I GOT 2 1/2 CUPS OF CORN KERNELS FROM 3 EARS OF CORN; I JUST ADDED THE EXTRA 1/2 CUP TO THE MIXTURE.
** IF YOU WOULD LIKE IT WITH A LITTLE MORE KICK, YOU CAN USE PEPPER JACK CHEESE
*** I ONLY FOUND A 4 OZ CAN OF THE GREEN CHILIES -I JUST USED THAT -IT WAS ENOUGH.

Steps:

  • 1. Combine the eggs and sour cream; stirring until well blended.
  • 2. Stir in remaining ingredients EXCEPT for the Cheddar Cheese.
  • 3. Spoon or pour into a quiche dish or a 8" x 8" casserole dish (I used a 10 inch tart dish -it worked well.), that has been sprayed with PAM.
  • 4. Top with the Cheddar Cheese.
  • 5. Bake uncovered at 350 degrees for 35 minutes, or until center is done. NOTE: I didn't pre-heat my oven, which may be the reason that I had to cook mine 45 minutes to be done in the middle and as brown as I like it. It tastes as good as it looks1!!!

8 ears fresh corn, cut from cob
1 cup chopped green bell pepper
1/2 cup chopped onion
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dry mustard
3 fresh tomatoes, peeled and sliced

Steps:

  • Preheat oven to 350°. Fry bacon in large skillet until crisp. Drain on paper towels. In same skillet, pour off all but 2 tablespoons bacon drippings. Add corn, bell pepper, and onion. Sauté 5 minutes. Combine crumbled bacon, salt, pepper, and mustard in small bowl. In greased 2-quart baking dish, layer 1/2 corn mixture, 1/2 bacon mixture, and 1/2 tomatoes. Repeat layers. Bake uncovered 35 minutes.
