FRENCH SCALLOPS
This is for the French Region in the Zaar World Tour. haven't made them yet but they look elegant and easy and we love Scallops!

Steps:
- Mix together four, salt and pepper. Coat scallops with flour mixture.
- Heat oil in a 10-inch skillet over medium heat. Add scallops and cook mixture 4 to 5 minutes, turning over in pan until scallops are golden brown. Remove with a slotted spoon. Keep warm.
- Lower heat. Add butter. When melted, add garlic and cook over low heat for about 2 minutes, stirring frequently. Cook until golden brown.
- Pour over scallops. Sprinkle with parsley.
- Yields 3 to 4 servings.

SCALLOPS WITH FRENCH SORREL SAUCE

Steps:
- 1. Remove muscle along side of each scallop. Wash and pat dry. 2. Spray skillet well with cooking spray. (Scallops are delicate and stick easily.) 3. Add olive oil and heat. 4. Quickly sear scallops on each side. 5. Serve with ΒΌ cup French sorrel sauce drizzled over scallops. 6. Garnish with two blood orange slices and a sprig of fresh thyme. SAUCE 1. Grate or zest lemon and reserve. 2. Place all ingredients in food processor and blend until smooth. Note : This sauce is also excellent over chicken, burgers, spaghetti squash, green beans, and whole-grain pasta. Sorrel leaves are brilliant green and provide a tangy and attractive sauce for fish or poultry. Sorrel is also an excellent digestive aid.
