HILL'S 7 LAYER SALAD
This is a bit different from the others because it contains water chestnuts! Great large family salad or for parties!

Steps:
- Fill the bottom of a large bowl 3/4 full of lettuce.
- Next layer - chopped celery.
- Next layer - chopped green onions.
- Next layer - frozen petite peas.
- Next layer - water chestnuts, place flat do not overlap
- Next layer - Carefully spread the mayo over the water chestnuts - sprinkle with sugar.
- Next layer - Sprinkle cheese and top with bacon.
- Refrigerate this overnight for best results and just before serving mix up - if you mix sooner it will get soggy.

SNOW PEAS WITH WATER CHESTNUTS
This is a simple veggie dish that goes well with almost anything. It looks nice enough for company or a holiday dinner. Fresh snow peas are the preference but frozen will work well too. 10 mins prep time is for frozen peas, fresh will take a bit longer.

Steps:
- Wash fresh snow peas if using; trim the ends and string.
- Defrost snow peas and dry on paper towels.
- Melt butter in a wok or lg skillet and add the peas, water chestnuts, garlic, salt, pepper and lemon juice.
- Cook over high heat, stirring, until veggies are tender crisp. Serve immediately.

Peas are about the only vegetable my DH likes, and this micowave recipe is so quick and easy. It came from the back of a bag of frozen peas!

Steps:
- In a 2 quart dish, combine peas and water; cover and microwave on HIGH for 7 minutes.
- Stir in remaining ingredients.
- Cover and microwave again on HIGH for 3 minutes or until heated through.
- Add salt to taste, if necessary.
STIR FRY SNOW PEAS & WATER CHESTNUTS
I usually like to add a little low sodium soy sauce just before serving. Attractive dish, great as part of a Chinese meal or any meal. For added color throw in some shoestring carrots - They cook very quickly and only need 1 minute befor adding the snowpeas.

- Bring the broth to a boil in a wok or skillet.
- Toss in the peas cover and cook for 1-2 minutes (do not over cook the peas), shake the pan a couple of times.
