FRENCH ONION TURKEY CASSEROLE
Use up your leftovers to make this savory "bread pudding"...it's so simple to make, and so tasty. You'll enjoy making it for brunches, light dinners, and anytime you're in the mood for really good food.

- Heat the oven to 350 degrees F. Spray a 2-quart shallow baking dish with the cooking spray. Beat the eggs, soup, milk, 1/2 cup cheese and 1 tablespoon thyme in a large bowl with a fork or whisk. Add the bread cubes and turkey. Stir and press the bread cubes into the milk mixture to coat. Pour the bread mixture into the baking dish. Sprinkle with the remaining cheese and thyme. Let stand for 15 minutes. Bake for 45 minutes or until a knife inserted in the center comes out clean.

- Preheat the oven to 350°F

TURKEY FRENCH ONION CASSEROLE
This recipe is from an Oikos Greek Yogurt flier and with a few adjustments to my family's liking this turned out pretty good. You could even use different meats, or vegetables or noodles or cheeses.

Steps:
- In a large skillet over medium heat, add oil and butter and sauté onions and garlic, stirring occasionally. Cook about 1 minute. Sprinkle in flour and stir until well blended, add Basil, salt and pepper. Slowly stir in milk.
- Continue cooking,stirring frequently, until sauce thickens. Add cheese and stir until cheese has melted. Remove from heat and fold in yogurt. Pour sauce into a bowl and set aside.
- In the same skillet add rice, broth and spinach. Stir until well blended and cook until spinach has wilted. Heat oven to 350^. Coat a 2 quart baking dish with cooking spray.
- Pour rice mixture into baking dish. Cover with turkey and then sauce. Sprinkle top with French onions or slivered almonds if desired or leave plain. Bake for 20 minutes.
