1 tablespoon butter
2 cups chopped onions
2 tablespoons chopped fresh rosemary or 1 teaspoon dried rosemary, crushed
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
12 slices French baguettes, 1/2 inch thick (2 to 3 inches in diameter)
1 -2 tablespoon butter (softened for spreading)
1 1/2 cups grated swiss cheese

Steps:

  • Melt one tablespoon butter in a nonstick frying pan over low heat.
  • Add the onion and cook stirring occasionally (do not burn) until tender and a golden brown (approx 15-20 minutes).
  • Stir rosemary, salt and pepper into the onions and remove from heat.
  • Preheat oven to 375 degrees F.
  • Lightly butter one side of each slice of french bread.
  • Place the bread, butter side down, on a baking sheet.
  • Divide the onion evenly over the top of the french bread, coving as most of the surface as possible.
  • Top the bread as evenly as possible with the grated cheese.
  • Bake for about 10 minutes until cheese is well melted.

Grilled cheese is a near-perfect food on its own, but adding bacon, kimchi or, in this case, heaps of caramelized onions really makes it special. Caramelizing onions takes a good half-hour, so save this recipe for when you have a little extra time and company (this recipe serves two). If time permits, you could even prep them ahead in a slow cooker. Rather than layer the grated Gruyère and the warm caramelized onions in the sandwich, you should stir them together before assembling, which guarantees that the cheese will melt evenly throughout and that each bite will contain the perfect ratio of fragrant cheese to jammy onions. A splash of sherry, red-wine or white-wine vinegar added to the onions balances out the buttery flavors, but a side salad dressed with a tangy mustard vinaigrette would do the trick, too.

4 tablespoons unsalted butter
1 pound yellow or Vidalia onions, peeled, halved and thinly sliced
Kosher salt and black pepper
2 teaspoons sherry, red-wine or white-wine vinegar (optional)
4 ounces Gruyère cheese, grated
4 slices bread, cut no wider than 1/2-inch thick

Steps:

  • In a large skillet over medium-high heat, melt 2 tablespoons butter. Add the onions and season with salt and pepper. Cover and cook, stirring once or twice, until the onions are softened, 3 to 5 minutes. Uncover, reduce the heat to medium-low, and cook, stirring occasionally, until deep golden brown, 20 to 25 minutes. If the onions look dry or like they might burn, add a few tablespoons of water at a time, scraping up any browned bits that are stuck to the bottom of the skillet. If desired, once the onions are done, deglaze the skillet with vinegar and cook until the liquid has evaporated, about 1 minute. Transfer the onions to a medium bowl and season to taste with salt and pepper. Wipe out the skillet, or wash it, if necessary.
  • Add the cheese to the onions and stir to combine. Put down two slices of bread, and scoop half of the cheese-onion mixture onto each one. Top with the remaining slices of bread, and press down gently.
  • In the skillet, melt 1 tablespoon butter over medium heat. Add the sandwiches and cook until the bottoms turn golden brown, 3 to 4 minutes, reducing the heat to prevent toast from darkening too quickly, if needed. Add the remaining 1 tablespoon butter, flip the sandwiches, press down and cook until the cheese has fully melted and the bottoms turn golden brown, 3 to 4 minutes. Serve immediately.

2 beef tenderloin steaks (4 ounces each)
1/2 teaspoon dried thyme
1/4 teaspoon pepper
Dash garlic powder
2 teaspoons butter, divided
1/4 pound small fresh mushrooms, halved
1 medium onion, thinly sliced
1/4 cup dry red wine or beef broth
1 can (10-1/2 ounces) condensed beef consomme, undiluted
2/3 cup water
2 slices French bread (1 inch thick), toasted

Steps:

  • Sprinkle steaks with thyme, pepper and garlic powder. In a large skillet over medium-high heat, brown steaks in 1 teaspoon butter on both sides. Remove and keep warm. , In the same skillet, saute mushrooms and onion in remaining butter until tender. Reduce heat to medium. Add wine or broth to pan, stirring to loosen browned bits; cook for 2-3 minutes or until liquid is reduced by half. Add consomme and water. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes., Return steaks to the pan. Cover and cook for 8-10 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Serve with toasted French bread.

1 1/4 lbs. of ground chuck
1/4 c minced fresh parsley
2 T minced scallions
1 tsp kosher salt
1/2 tsp black pepper
2 T all purpose flour
FOR THE SAUCE:
1 T olive oil
2 c sliced onions
1 tsp sugar
1 T minced garlic
1 T tomato paste
2 c low-sodium beef broth
1/4 c dry red wine
3/4 c kosher salt
1/2 tsp dried thyme
cheese toasts
minced fresh parsley
shredded Parmesan
CHEESE TOASTS:
4 slices Italian baguette, cut diagonally (1/2-inch thick)
2 T unsalted butter, room temperature
1/2 tsp minced garlic
1/4 c shredded Swiss cheese
1 T shredded Parmesan

Steps:

  • COMBINE ground chuck, 1/4 c parsley, scallions, salt, and pepper. Divide evenly into four portions and shape each into 3/4 to 1-inch thick oval patties. Place 2 T flour in a shallow dish; dredge each patty in flour. Reserve 1 tsp flour. HEAT oil in a sauté pan over medium-high heat. Add patties and sauté 3 minutes on each side, or until browned. Remove from pan. ADD onions & sugar to pan; sauté 5 minutes. Stir in garlic and tomato paste; sauté until paste begins to brown, 1 minute. Sprinkle mixture with reserve flour, cook 1 minute. 1/2 cup unsalted butter
3 tablespoons all-purpose flour
2 large white onions, chopped into small pieces
4 cups homemade or low-sodium canned chicken stock
4 cups homemade or low-sodium canned beef stock
1 teaspoon salt
1/4 teaspoon freshly ground pepper
18 thin slices French baguette
2 cups shredded Swiss cheese (1/2 pound)

Steps:

  • In a large, heavy-bottom saucepan, melt the butter over medium heat. Add flour and chopped onions; saute, stirring occasionally, until onions are soft and translucent, about 15 minutes.
  • Pour chicken and beef stocks into the saucepan, and stir to combine. Bring mixture to a boil. Reduce heat to low, and simmer 15 minutes. Add salt and pepper.
