5 tablespoons unsalted butter, softened
3 tablespoons finely chopped shallots
3 tablespoons finely chopped flat-leaf parsley
2 teaspoons finely chopped tarragon
1 1/2 teaspoons grated lemon zest
1 tablespoon fresh lemon juice
2 lb haricots verts or other green beans, trimmed

Steps:

  • Stir together all ingredients except haricots verts with 3/4 teaspoon salt and 1/4 teaspoon pepper in a large bowl until combined well.
  • Cook beans in a large pot of boiling salted water (1 tablespoon salt for 6 quarts water), uncovered, until crisp-tender, about 6 minutes, then drain. Toss with herb butter.
  • Do Ahead
  • Herb butter can be made ahead and chilled, covered, 3 days or frozen, rolled into a cylinder in plastic wrap and kept in a sealed bag, 1 week. Haricots verts can be trimmed 1 day ahead and chilled in a sealed bag lined with paper towels.

1 pound very small, firm green beans, cleaned
3 tablespoons butter
3 tablespoons peeled and chopped shallots
1/4 teaspoon salt, or to taste

Steps:

  • Bring the water to a boil. Add the beans and cover the pot. Continue cooking the beans, covered, for 3 to 5 minutes until tender but firm. Drain and rinse under cold water.
  • At serving time, heat the butter in a skillet, add the shallots and saute for about 1 minute, until the shallots start to brown.
  • Add the beans, salt and pepper, and saute briefly. Sprinkle with lemon juice and serve with the chicken.

  • Bring 1 inch of water to a boil in a high-sided saute pan. If using fresh beans, cut them lengthwise while you wait for the water to boil.
  • Add salt and green beans to boiling water and cook until just tender. Drain beans and rinse under cold water to stop the cooking. Return the skillet to medium heat and add the butter. When butter is melted, add the almonds and cook until golden brown.
  • Return the green beans to the pan, along with the juice of 1/2 a lemon, add salt and pepper, to taste. When warmed through, top with fried onions.

  • Preheat an oven to 225 degrees F (110 degrees C).
  • Slice the cherry tomatoes in half, and arrange them, cut sides up, on a baking sheet. Sprinkle them with salt, pepper, and the bay leaf; drizzle with 1/4 cup olive oil.
  • Bake the tomatoes until they are shriveled and dry on the outside, but a little moist inside, about 2 hours.
  • Toast the pine nuts in a small pan over medium-low heat, gently shaking the pan as they toast, until beginning brown and fragrant, 2 to 3 minutes; set aside.

I created this Asian-inspired dish last night. It is permissible for phase one of the South Beach Diet and we LOVED it. I used frozen french beans from Trader Joe's, but fresh beans would be wonderful! Amounts are highly approximated; I didn't measure when making this, but this is pretty similar to what I did. (If using fresh beans, you'd probably want to blanch them in boiling water and then plunge in ice water, and *then* add to the pan.)

1 tablespoon olive oil
2 -3 garlic cloves
6 large button mushrooms, sliced
1/2-3/4 cup whole almond (more or less to taste and to fit your dieting goals)
1/2 lb frozen French-cut green beans (like those found at Trader Joe's but any would work, including fresh, also, you may want to add more)
soy sauce, to taste

Steps:

  • Heat oil over medium heat.
  • Sauté garlic until soft, being careful not to let it burn.
  • Add sliced mushrooms and sauté until they look fairly cooked and shiny (about 5 minutes).
  • Add almonds and sauté for a couple more minutes.
  • Finally, add frozen green beans and splash of soy sauce.
  • Stir frequently until beans are just cooked and, of course, no longer frozen.
  • If not on the south beach diet or watching sugar intake, you could add oyster sauce or other Asian condiment to the mixture.

  • Fill a large saucepan with water, and bring to a boil. Add a handful of salt. Meanwhile, trim the ends off green beans, discarding any that are discolored or damaged. Add to the boiling water, and blanch for 2 to 3 minutes or until crisp tender. Drain the green beans. Immediately submerge in ice water to chill and to retain their bright color.
  • Alternatively, place the green beans in a colander. Place the colander on top of boiling potatoes to steam until tender, occasionally turning to cook evenly, about 3 to 4 minutes.

2 tablespoons good quality red wine vinegar (preferably Italian or French)

1/3 cup virgin olive oil
1/3 cup thinly sliced onion, for garnish
15 -20 basil leaves

Steps:

  • Place approximately 1/2 inch of water in a medium-sized stainless steel saucepan and add about 1/2 teaspoon salt.
  • Bring to a boil.
  • Add the string beans.
  • Cover and bring to a strong boil for 5 minutes.
  • They just turn crunchy, cooked and a wonderful green (not brownish!).
  • Using a skimmer, lift the beans from the pan and spread them on a large plate to cook off.
  • Toss the beans with 2 tbsp white wine vinegar and oil.
  • Season and set aside.
  • Peel the tomatoes if desired but it is not necessary.
  • Slice crosswise very thinly.
  • Place the seasoned string beans in the center of a large platter and arrange the slices of tomatoes around.
  • Sprinkle generously with salt and pepper.
  • Tomatoes need a lot of salt.
  • Then sprinkle with vinegar and oil.
  • Wash the fresh basil leaves and separate the leaves.
  • Pile the largest leaves together.
  • Roll the leaves into a tight bundle and slice them into very thin, long strips.
  • Cut the onion into very thin slices and separate the slices into individual rings.
  • With the beans at the center of the plate, sprinkle the onions on top, surround the green beans with tomato slices, and then arrange the sliced basil leaves around it forming a border.

I got this recipe from Good Housekeeping UK when at the Helsinki Airport a few weeks ago. Looked good and made for Canadian Thanksgiving. It was a hit! Very tasty and easy!

1/4 cup butter
1 small onion, finely chopped
3 -4 slices prosciutto
1 garlic clove, crushed
1 tablespoon parsley, chopped
5 ounces cream or 5 ounces half-and-half

Steps:

  • Cut the ends off the beans, then cook in salted boiling water until just tender. I steam them til they are still crisp and bright green.
  • Run cold water over beans to stop the cooking process.
  • Melt butter in a large pan and gently cook onions until soft, about 5 minutes.
  • Add Prosciutto, garlic, and parsley and cook for 3 minutes.
  • Add the cream, stirring constantly, and bring to a light boil. Do not leave unattended, otherwise cream will burn.

  • I did the sauce and green beans ahead, mixed them together and reheated on the stove. Turned out great!

  • 1. PREP: - Keep all ingredients frozen (french cut green beans and bacon) until ready to use. - Chop onions. Fine onions cook fast and are tender. - Cut frozen smoked thick-cut bacon in half and then in thin (1/8-1/4) strips. - Open bag of french cut green beans. - Have red pepper flakes and salt ready.
  • 2. Use a 10-12 inch skillet. Place teaspoon of oil in skillet and heat on medium high. Immediately add the bacon and push around for 30 seconds to separate the pieces. Add the onions to the pan. Saute' for about 1 minute. Add the frozen green french cuts on top of the onions and bacon strips. Don't mix. Do not cover, do not stir at this point. It looks like it's smoking, but it's just defrosting and won't burn in this stage on medium high to high heat.
  • 3. About 2- 3 minutes in begin blending ingredients together, Add the red pepper flakes--this is a good time to do this because you can see how much you are adding. For spicier beans add more pepper flakes--some like it hot ! Add salt. Stir occasionally to check the bottom to insure no burning. You'll see the green beans get limp and still nice and green--taste and season to your taste and cook for 5-8 minutes. Turn off heat, but leave on the burner and get the plates ready to serve. Leftover reheats for a take- to- work meal or next day side.
