1/2 cup fresh espresso
2 1/2 cups low-fat milk (2%)
1/4 cup granulated sugar
1 tablespoon dry pectin (this is a natural thickener found in the supermarket near the canning supplies, but can be excluded)

Steps:

  • Combine all of the ingredients in a pitcher or covered container.
  • Stir or shake until sugar is dissolved.
  • Chill and serve cold.
  • To make the mocha variety, add a pinch of cocoa powder to the mixture before combining.

1 cup low-fat milk
⅓ cup caramel sauce
3 tablespoons white sugar

Steps:

  • Blend ice, coffee, milk, caramel sauce, and sugar together in a blender on high until smooth. Pour drink into two 16-ounce glasses.
