1 (9 inch) pie shell
3 apples
3 fresh peaches
1 pear
1 cup raspberries
¾ cup white sugar
1 teaspoon ground cinnamon
3 tablespoons all-purpose flour
⅓ cup packed brown sugar
¾ cup all-purpose flour
6 tablespoons butter
½ cup chopped pecans

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Peel, core, and slice the peaches, apples, and pear. Place the fruit into a large bowl and add the raspberries. In a separate bowl, mix the white sugar, cinnamon, and 3 tablespoons flour. Pour the mixture over the fruit and gently toss the fruit to coat.
  • Mound fruit mixture into a 9-inch pie shell.
  • In a medium bowl, combine 3/4 cup flour and 1/3 cup brown sugar. Cut in the butter until the mixture resembles small peas. Stir in the chopped pecans and sprinkle the crumble on top of the fruit.
  • Bake at 400 degrees F (205 degrees C) for 35 to 40 minutes, or until filling is bubbly and the crust is golden brown. Cool on wire rack.

1 cup sliced rhubarb (1-inch pieces)
1 cup chopped peeled apple
1 cup blueberries
1 cup raspberries
1 teaspoon lemon juice
3/4 cup sugar
1/4 cup all-purpose flour
Pastry for double-crust pie (9 inches)
2 tablespoons butter
Additional sugar, optional

Steps:

  • In a large bowl, gently toss rhubarb, apple, berries and lemon juice. Combine sugar and flour; stir into the fruit and let stand for 30 minutes. , Line a pie plate with bottom crust. Add filling; dot with butter. Roll out remaining pastry to fit top of pie. Place over filling. Trim, seal and flute edges. Cut slits in pastry. Bake at 400° for 50-60 minutes or until crust is golden brown. Sprinkle with sugar if desired. Cool on a wire rack. Store in the refrigerator.

1 cup dried cranberries
1-1/2 cups boiling water
2 medium tart apples, peeled and sliced
1 medium peach, peeled and sliced or 1 cup frozen unsweetened sliced peaches
1 medium ripe pear, peeled and sliced
1 tablespoon lemon juice
1/2 cup sugar
1/2 cup packed brown sugar
1 teaspoon apple pie spice
1/2 teaspoon vanilla extract
3 tablespoons quick-cooking tapioca
1 package (15 ounces) refrigerated pie pastry
2 tablespoons butter, melted

Steps:

  • Place the cranberries in a large bowl; cover with boiling water. Let stand for 5 minutes; drain well and set aside. In a large bowl, toss the apples, peach and pear with lemon juice. Stir in the sugars, apple pie spice and vanilla. Add tapioca; let stand for 15 minutes. Stir in the cranberries.
  • Line a 9-in. deep-dish pie plate with one sheet of pastry; trim even with edge of plate. Add filling. Unroll second sheet of pastry; cut slits in pastry.
  • Place over filling; seal and flute edges. Brush with butter. Bake at 375° for 50-55 minutes or until crust is golden brown and filling is bubbly. Cool on a wire rack. Yield: 6-8 servings.
