4 large apples (Whatever you prefer, although I use Gala)
1 (8 ounce) can pineapple tidbits
1 (6 ounce) box jello fat free sugar-free instant butterscotch pudding mix
1/4 cup chopped peanuts (optional)

Steps:

  • Cut up apples into small pieces.
  • Add in all other ingredients (pineapple juice included) and mix.
  • Chill for 1 hour.
  • 2 Points per serving (1 cup).

2 medium sweet apples, cored and cubed
1 green bell pepper, diced
¼ cup chopped red onion
1 (15 ounce) can kidney beans, rinsed and drained
2 tablespoons white wine vinegar
1 tablespoon honey
2 teaspoons Dijon mustard
ground black pepper to taste

Steps:

  • In a medium bowl, combine the apples, bell pepper, red onion and kidney beans. In a separate bowl, whisk together the vinegar, honey, mustard and pepper. Pour over the salad, and stir gently to coat.

6 cups apples
1/2 cup raisins
1/3 cup walnuts, chopped
4 ounces non-fat vanilla yogurt, Weight Watchers Brand
2 tablespoons honey

Steps:

  • Cut the apples into cubes and combine the cubed apples, raisins and walnuts.
  • Mix the yogurt with the honey and toss the yogurt mixture with the apples.
  • Refrigerate until ready to serve.

1 can (20 ounces) unsweetened pineapple chunks
1/4 cup butter, cubed
1/4 cup sugar
1 tablespoon lemon juice
2 tablespoons cornstarch
2 tablespoons cold water
1 cup mayonnaise
8 cups chopped tart apples
2 cups green grapes
2 teaspoons poppy seeds
3/4 cup chopped pecans, toasted

Steps:

  • Drain pineapple, reserving juice; set the pineapple aside. Place juice in a saucepan; add butter, sugar and lemon juice. Bring to a boil. Combine the cornstarch and cold water until smooth; add to the saucepan, stirring constantly. Return to a boil; cook and stir for 2 minutes. Chill. Stir in mayonnaise. In a large bowl, combine pineapple, apples, grapes, poppy seeds and cooked dressing. Fold in the pecans just before serving.

Four Cups & One Apple Salad is my favorite salad to serve with Shish Kabobs in the summertime. It is very easy to stir up and chill for dinner tonight or tomorrow night. I always use the fat free sour cream! This dish is a favorite with guests and my family. We prefer the apple to be a Granny Smith green one.
