1 egg white
⅛ teaspoon vanilla extract
1 pinch salt
¼ cup unbleached all-purpose flour
¼ cup white sugar

Steps:

  • Preheat oven to 400 degrees F. Butter a cookie sheet. Write fortunes on strips of paper about 4 inches long and 1/2 inch wide. Generously grease 2 cookie sheets.
  • Mix the egg white and vanilla until foamy but not stiff. Sift the flour, salt, and sugar and blend into the egg white mixture.
  • Place teaspoonfuls of the batter at least 4 inches apart on one of the prepared cookie sheets. Tilt the sheet to move the batter into round shapes about 3 inches in diameter. Be careful to make batter as round and even as possible. Do not make too many, because the cookie have to be really hot to form them and once they cool it is too late. Start with 2 or 3 to a sheet and see how many you can do.
  • Bake for 5 minutes or until cookie has turned a golden color 1/2 inch wide around the outer edge of the circle. The center will remain pale. While one sheet is baking, prepare the other.
  • Remove from oven and quickly move cookie with a wide spatula and place upside down on a wooden board. Quickly place the fortune on the cookie, close to the middle and fold the cookie in half. Place the folded edge across the rim of a measuring cup and pull the pointed edges down, one on the inside of the cup and one on the outside. Place folded cookies into the cups of a muffin tin or egg carton to hold their shape until firm.

3 tablespoons sugar
1 large egg white
1/2 teaspoon vanilla extract
1/3 cup all-purpose flour

Steps:

  • Preheat oven to 400°. Write fortunes on small strips of paper (3-1/2x1/4-in.); set aside. Line a baking sheet with parchment. Using a pencil, draw two 3-1/2-in. circles on a sheet of parchment. Place paper, pencil mark down, on a baking sheet; set aside., In a small bowl, beat butter, sugar, egg white and vanilla. Add flour; mix well. Spread 1 tablespoon batter over each circle. Bake 4-5 minutes or until lightly browned., Slide parchment onto a work surface. Cover one cookie with a kitchen towel. Place a fortune in the center of the other cookie; loosen cookie from parchment with a thin spatula. Fold cookie in half over fortune strip so the edges meet; hold edges together for 3 seconds., Place center of cookie over the rim of a glass; gently press ends down to bend cookie in middle. Cool 1 minute before removing to a wire rack. Repeat with second cookie. If cookies become too cool to fold, return to oven to soften for 1 minute. Repeat with remaining batter and fortunes.

2 egg whites, room temperature
6 tablespoons butter
1/4 cup sugar
1/2 cup flour, sifted
1/4 teaspoons vanilla extract

Steps:

  • Cut a stencil out of a plastic coffee can lid in the shape of a 3-inch disk. Whip the egg whites until stiff and chill. In a mixer, cream the butter, then add the sugar and continue mixing. Add the flour and blend in, then add the vanilla and blend again. Add the chilled egg whites and mix on low until well incorporated and the batter is smooth. With a small offset spatula, spread batter through the stencil so it is a circle onto a silpat or parchment paper, about 6 per cookie sheet. Bake in a preheated 350-degree oven until light golden brown, 7 to 8 minutes. Quickly remove the pan from the oven and one at time place a fortune across the center with a bit hanging out. Fold cookie circle in thirds over fortune with flaps only slightly overlapping each other. Turn over and bring opposing sides together and pinch. Let cool.

This is a great recipe that came from the Food Network, so I wanted to post it here (I was looking for a really good fortune cookie recipe on here). One thing, I did find that when I used the recommended tablespoon in putting the batter on the cookie sheet, the centers of the cookies were too "doughy" and the edges were golden brown, and the cookies broke when I tried to bend them into the fortune cookie shape. So, using a rubber bowl scraper, I put a small amount on the cookie sheet and just swirled it around until it was a nice, thin layer, about 3-inches in diameter. This worked perfectly! But, when the recipe says only make a few at a time, it's no joke! These harden quickly and unless you've got others in the kitchen to help or you move with lightning speed, I suggest only making 2 or 3 at a time.

2 egg whites
1 tsp vanilla extract
1 tsp almond extract
3 tbsp sunflower oil
100g plain flour
2 tsp cornflour
100g caster sugar
1 ½ tbsp black sesame seeds

Steps:

  • Preheat the oven to 180C/160 fan/gas 4 and line a large baking sheet with baking parchment, or use a silicone baking sheet. Write or print fortunes on paper measuring 6cm long by 1cm wide.
  • Put the egg whites, vanilla, almond extract, oil and 2 tsp cold water into a bowl and whisk with an electric hand whisk until frothy, 20-30 secs. Measure the flour, cornflour, sugar and a good pinch of salt into a bowl, then sift into the egg white mixture. Whisk everything together until you have a smooth batter-like consistency. Chill the mixture for 1 hr.
  • Next, put a tbsp of mixture onto the prepared baking sheet. Oil a metal spoon, then use the back of it to swirl the mixture out into a 8-10cm circle. Repeat with another tablespoon of the mixture, to create 2 cookies. Make sure there is space between each cookie as they will spread in the oven. It is best to only bake 2-3 cookies at a time, as you will need to shape them whilst they are hot. Sprinkle 1 of the cookies with black sesame seeds, then bake for 10-12 mins until the edges of the cookies turn golden.
  • One at a time remove the cookies with a palette knife once they are out the oven. You want them to still be soft so you can shape them so work quickly. Turn the cookie over so that the sesame seeds are face down and put the fortune in the middle of the circle. Fold the circle in half to secure the fortune and pinch the 2 edges together to seal. Pop the cookie on the rim of a mug or cup and very gently pull the 2 corners down to get the fortune cookie shape. Hold for 10 secs, then transfer the cookies to muffin tins so that they hold their shape whilst cooling completely. Repeat with the remaining cookie mixture.

  • Preheat the oven to 425˚F (220˚C).
  • Add the egg whites and vanilla extract to a medium bowl and use a whisk or hand mixer to beat until frothy, about 1 minute.
  • Sift in the flour, sugar, and salt through a fine-mesh sieve.
  • Using a spatula, gently incorporate into the batter until paste-like.
  • Add the water, 1 tablespoon at a time, until the batter is smooth and falls into ribbons when the spatula is picked up.
  • Place 1 tablespoon of batter onto a silpat-lined baking sheet and spread into a 3-inch (7-cm) circle.
  • Repeat with another tablespoon of batter, making sure to only leave two circles on the silpat.
  • Bake for 8 minutes, until the edges become golden brown.
  • Working quickly, use a spatula to remove the cookies from the pan. Add a fortune in the middle, fold the cookies in half, then place the flat side on the lip of a cup, folding the edges down into a fortune cookie shape. 1 large egg white
¼ cup white sugar
1 tablespoon milk

  • Print and cut out 3-inch wide paper fortunes.

Nonstick cooking spray, for the baking sheet

Steps:

  • Preheat the oven to 375 degrees F.
  • In a medium bowl, whisk together the sugar, flour, salt and cardamom. In a separate medium bowl, whisk together the extracts and egg whites. Sift in the dry ingredients and whisk it -- whisk it good -- until you have a smooth batter.
  • Grease a baking sheet with cooking spray. Spread 1 tablespoon of batter into a 3-inch circle on the baking sheet (it helps to use the lid of a mason jar as a guide); make 2 more circles on the baking sheet (only bake 3 circles at a time so you have time to mold the cookies before they cool). Bake until the edges are brown, 5 to 7 minutes.

CHOCOLATE-DIPPED FORTUNE COOKIES

  • Preheat oven to 400 degrees. Line a baking sheet with a nonstick baking mat; set aside.
  • In the bowl of an electric mixer fitted with the whisk attachment, beat egg whites and sugar on medium speed for 30 seconds. Add flour and salt and beat until combined. Add butter, heavy cream, and almond extract and beat until combined, about 30 seconds.
  • Place a 5-inch round plastic template on prepared baking sheet; spread batter to fill. Repeat process once (two cookies per baking sheet). Transfer to oven and bake until edges turn golden brown, 6 to 7 minutes.
  • Transfer baking sheet to a heat-resistant surface. Working as quickly as possible, slide an offset spatula under one of the cookies. Lift it up, and, using your fingers, fold the cookie in half, pinching the top together to form a loose semicircle (if you are placing a message in the cookie, you should fold it in at this point). Hold the cookie with your index fingers inserted at each open end and slide your thumbs together along the bottom line. Press into the center while bending the two open ends together and down to form the shape of a fortune cookie. This whole process should take about 10 seconds. Once the cookie hardens, which begins to happen almost immediately, you cannot fold it into the shape. Transfer fortune cookies to the cups of a large muffin tin to cool. Repeat process with remaining batter. To avoid wasting batter, try the shaping process with a circle of paper first.

1/2 tablespoon corn flour
1/8 cup sugar
1/8 teaspoon salt
2 tablespoons vegetable oil
28 grams egg white
1/4 teaspoon water
1/2 teaspoon vanilla extract
1/8 teaspoon almond extract

Steps:

  • Sift the flour and corn flour. Add sugar and salt. Mix well. Stir in the oil, egg whites, water, vanilla and almond essence. Mix well.
  • Next heat a non stick pan (medium heat). Drop a heaping tablespoon of batter into the pan. Then spread the batter with a spoon into a cookie about 4 inches in diameter. Cook until light golden brown on both sides, flipping once the first side is golden.
  • Next, (write your own fortune), place a fortune paper (2 1/2 x 1/4 inches)in the center of the cookie and while the cookie is still soft and pliable, fold in half. Then fold the edges together and down. Again fold cookie in half. You are looking for a fortune cookie/crescent shape.
  • Now place in muffin pan to hold shape and bake in oven about 5 minutes (temperature 200 C) Enjoy!!

  • Pour 1 tablespoon batter onto half the baking sheet. Spread with a spoon into a thin 5 inch circle; repeat on other half of sheet. Bake until edges turn golden brown, about 8 minutes.
  • Place baking sheet on a heat-resistant surface. Working quickly, slide a spatula under one cookie. Lift and place on a dish towel. Fold cookie in half, pinching at top to form loose semicircle. Insert index fingers into ends; press indentation into center of cookie while bending ends together to form shape of a fortune cookie. This should take about 10 seconds. Once the cookie hardens, you cannot fold it. Repeat with other cookies. Write your message on long strips of sturdy art paper, and thread through cooled cookie.

2 large egg whites
1/2 teaspoon pure vanilla extract
1/2 teaspoon almond extract
3 tablespoons vegetable oil
8 tablespoons all-purpose flour
1 1/2 teaspoons cornstarch
1/4 teaspoon salt
8 tablespoons granulated sugar
3 teaspoons water

Steps:

  • Write fortunes on pieces of paper that are 3 1/2 inches long and 1/2 inch wide. Preheat oven to 300 degrees Fahrenheit. Grease 2 9-X-13 inch baking sheets.
  • In a medium bowl, lightly beat the egg white, vanilla extract, almond extract and vegetable oil until frothy, but not stiff.
  • Sift the flour, cornstarch, salt and sugar into a separate bowl. Stir the water into the flour mixture.
  • Add the flour into the egg white mixture and stir until you have a smooth batter. The batter should not be runny, but should drop easily off a wooden spoon.
  • Place level tablespoons of batter onto the cookie sheet, spacing them at least 3 inches apart. Gently tilt the baking sheet back and forth and from side to side so that each tablespoon of batter forms into a circle 4 inches in diameter.
  • Bake until the outer 1/2-inch of each cookie turns golden brown and they are easy to remove from the baking sheet with a spatula (14 - 15 minutes).
  • Working quickly, remove the cookie with a spatula and flip it over in your hand. Place a fortune in the middle of a cookie. To form the fortune cookie shape, fold the cookie in half, then gently pull the edges downward over the rim of a glass, wooden spoon or the edge of a muffin tin. Place the finished cookie in the cup of the muffin tin so that it keeps its shape. Continue with the rest of the cookies.

These are really fun to make for a party or informal get together. I made them for New Years' Eve this past year and wrote my own fortunes. The guests were totally impressed with them! They are a little tricky to work with--you have to be fast and shape them while they are still warm so they don't set. Recipe courtesy of Gale Gand's show "Sweet Dreams."

2 egg whites, room temperature
6 tablespoons butter
1/4 cup sugar
1/2 cup flour, sifted
1/4 teaspoon vanilla extract

Steps:

  • Cut a stencil out of a plastic coffee can lid in the shape of a 3-inch disk.
  • Whip the egg whites until stiff and chill.
  • In a mixer, cream the butter, then add the sugar and continue mixing.
  • Add the flour and blend in, then add the vanilla and blend again.
  • Add the chilled egg whites and mix on low until well incorporated and the batter is smooth.
  • With a small offset spatula, spread batter through the stencil so it is a circle onto parchment paper, about 6 per cookie sheet.
  • B ake in a preheated 350-degree oven until light golden brown, 7 to 8 minutes.
  • Quickly remove the pan from the oven and one at time place a fortune across the center with a bit hanging out.
  • Fold cookie circle in thirds over fortune with flaps only slightly overlapping each other.
  • Turn over and bring opposing sides together and pinch.
  • Let cool.

DRAGON SIZED FORTUNE COOKIES

A fun recipe from an old Sunset Chinese Cooking Book. It's easy to make and allows you to create your own fortunes!

1/2 cup flour
1 tablespoon cornstarch
1/4 cup sugar
1/4 teaspoon salt
1/4 cup vegetable oil
1/4 cup egg white (about 2 large eggs)
1 1/2 teaspoons water
1 teaspoon vanilla

Steps:

  • Write 3 fortunes on 1" x 3" pieces of paper.
  • You can use wise or funny sayings, puns -- personalized for the intended recipients.
  • Place fortunes and 2 pot holders near the oven so they'll be handy when needed.
  • Preheat oven to 300 F.
  • In a bowl, combine the flour, cornstarch, sugar and salt.
  • Blend in the vegetable oil.
  • Add the egg whites, water and vanilla.
  • Stir until smooth.
  • Bake cookies 1 at a time. (IMPORTANT).
  • Drop 1/3 cup of batter on a greased cookie sheet.
  • Spread evenly into a 10" circle.
  • Bake in oven until cookie turns a light golden brown (about 13 to 15 minutes).
  • Immediately place a fortune in the centre of the hot, pliable cookie.
  • Using the pot holders to protect your hands, bring two opposite ends of the cookie together, grasp the ends of the folded cookie and gently pull together to crease.
  • Hold the folded cookie for 1 minute to maintain its shape as it cools and becomes crisp.
  • Please Note: The oven temperature is extremely important. If the temperature raises above 300 F, the edges of the cookie will become overly brown and will crack when you try to fold it.
  • When the cookies have cooled completely, store in an airtight container.

ALMOND FORTUNE COOKIES

To make the fortunes for these cookies, cut 3- by 1/2-inch strips of paper and write or type your own fortunes with non-toxic ink. Because you must work quickly to shape the cookies, it's best to make them one at a time. Using more than one baking sheet is also helpful because you won't have to waste time waiting for the baking sheet to cool. A liquid measuring cup or deep heavy bowl is a good tool for shaping the cookies.

Yield Makes about 8 cookies

1 large egg white
1/4 cup all-purpose flour
1/4 cup sugar
1/4 cup finely chopped sliced almonds

Steps:

  • Preheat oven to 400°F. and butter a large round area (about 6 inches) in middle of a baking sheet.
  • In a small bowl whisk egg white just until foamy. Add flour, sugar, almonds and a pinch salt and beat until smooth. Put 2 teaspoons batter on buttered area of baking sheet and with back of measuring spoon spread batter evenly into a round about 3 inches in diameter.
  • Bake cookie in middle of oven until golden around edge but pale in center, about 5 minutes. Working quickly, with a spatula remove cookie from baking sheet and invert onto a work surface. Put a fortune in middle of cookie and fold cookie in half. Bend pointed edges of cookie toward each other and hook them onto rim of a liquid measuring cup or deep heavy bowl to cool completely.
  • Make more cookies with remaining batter in same manner, letting baking sheet cool between cookies. Cookies may be made 3 days ahead and kept in an airtight container.
