Dinner's in an easy-to-assemble packet! Grill meat, potatoes and carrots for a satisfying meal.

1 1/2 lb lean (at least 80%) ground beef
1 package (1 oz) onion recipe and dip soup mix (from 2-oz box)
1 egg
3/4 cup milk
1/2 cup Progresso™ plain bread crumbs
1/3 cup ketchup
1 bag (1 lb 4 oz) refrigerated new potato wedges
3 cups ready-to-eat baby-cut carrots
Fresh parsley, if desired

Steps:

  • Heat gas or charcoal grill. Cut 6 (18x10-inch) sheets of heavy-duty foil; spray with cooking spray. In medium bowl, mix beef, dry soup mix, egg, milk and bread crumbs. Shape into 6 loaves, 4x2 1/2x1 inch. Place 1 loaf on each foil sheet; top each with about 1 tablespoon of the ketchup. Place about 1/2 cup potatoes and 1/2 cup carrots around each loaf.
  • Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packets on grill. Cover grill; cook over medium heat 25 to 30 minutes, rotating packets 1/2 turn after 15 minutes, until vegetables are tender and meat thermometer inserted in center of loaves reads 165°F. To serve, cut large X across top of each packet; carefully fold back foil to allow steam to escape. Garnish with parsley.

½ cup finely chopped onion
1 (24 ounce) jar RAGÚ® Old World Style® Traditional Sauce, divided
⅓ cup panko bread crumbs
1 egg
2 tablespoons chopped fresh Italian parsley
2 cloves garlic, minced
½ teaspoon salt, divided
¼ teaspoon freshly ground pepper
4 cups assorted vegetables, such as quartered mushrooms, broccoli florets, sweet pepper cut into 1-inch pieces, or zucchini cut into 1-inch chunks
1 tablespoon olive oil

Steps:

  • Preheat oven to 375 degrees F. Line a 15x10x1-inch baking pan with foil, coat a twelve 2 1/2-inch muffin tin with nonstick cooking spray; set aside.
  • In a medium bowl combine beef, onion, 1/2 cup of RAGÚ® Old World Style® Traditional Sauce, bread crumbs, egg, parsley, garlic, 1/4 tsp salt and 1/8 tsp pepper.
  • Divide mixture among muffin cups, pressing meat mixture into each.
  • In a large bowl toss the vegetables with oil, remaining salt and remaining pepper. Place in the baking pan. Place the baking pan and muffin cups on two separate oven racks. Bake 30 minutes or until an instant-read thermometer inserted in meat loaves registers 160 degrees F. Remove pans from oven. Remove meatloaves from muffin cups. Serve meatloaves topped with remaining warmed RAGÚ® Old World Style® Traditional Sauce with vegetables on the side, and garnish with additional chopped parsley.

2 large eggs, lightly beaten
1 cup tomato juice
3/4 cup quick-cooking oats
1/4 cup finely chopped onion
1/2 teaspoon salt
1-1/2 pounds lean ground beef (90% lean)
1/4 cup ketchup
3 tablespoons brown sugar
1 teaspoon prepared mustard
1/4 teaspoon ground nutmeg
3 large potatoes, peeled and cut into 1/2-inch pieces
3 tablespoons olive oil, divided
1/2 teaspoon garlic salt, divided
1/4 teaspoon pepper, divided
1 pound fresh asparagus, trimmed and halved

Steps:

  • Preheat oven to 425°. In a large bowl, combine eggs, tomato juice, oats, onion and salt. Add beef; mix lightly but thoroughly. Shape into six 4x2-1/2-in. loaves; place on a sheet pan or large shallow roasting pan. Combine ketchup, brown sugar, mustard and nutmeg; brush over loaves. , Combine potatoes with 2 tablespoons oil, 1/4 teaspoon garlic salt and 1/8 teaspoon pepper; toss to coat. Add to pan in a single layer. Bake 25 minutes., Combine asparagus with remaining 1 tablespoon oil, 1/4 teaspoon garlic salt and 1/8 teaspoon pepper; toss to coat. Add to pan. 5 shallots, peeled and quartered
12 baby new potatoes, quartered
4 medium zucchini, cut into 1inch chunks
2 tablespoons olive oil
2 cloves garlic, sliced
4 sprigs rosemary, leaves removed
1 teaspoon coarse salt
1/2 teaspoon freshly ground black pepper

Steps:

  • In a large bowl, combine the shallots, potatoes and zucchini. Drizzle with the olive oil and mix again. Add the sliced garlic, rosemary and salt and toss to coat vegetables.
  • Tear off a piece of foil large enough to hold the vegetables. Place the vegetables on the foil and bring fold up the sides to form a room pouch. Place the foil pouch on a hot grill or in a preheated 425 degrees F oven and roast until potatoes are tender and caramelized, about 25 minutes.

EVOO, for brushing
1 cup organic ketchup
2 tablespoons chipotle in adobo puree
2 tablespoons dark amber maple syrup
2 tablespoons dark brown sugar
2 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
2 cloves garlic, finely chopped
Coarse black pepper
1 1/2 cups seasoned stuffing cubes
3/4 cup chicken stock
2 pounds ground turkey (use a mix of light and dark meat)
1 round tablespoon poultry seasoning
2 teaspoons cumin
Kosher salt and freshly ground pepper
1/2 small red bell pepper, finely chopped
1/4 cup finely chopped fresh cilantro or parsley
6 thin scallions, finely chopped
2 eggs
One 8-ounce brick extra-sharp yellow Cheddar, cut into small dice
4 medium sweet potatoes
1/2 to 2/3 cup chicken stock
2 tablespoons chopped fresh thyme
Juice of 1 small organic orange
Kosher salt and freshly ground pepper

Steps:

  • Preheat the oven to 375 degrees F. Brush a muffin pan (with 6 jumbo or 12 medium cups) with EVOO.
  • For the BBQ sauce: Combine the ketchup, chipotle puree, maple syrup, brown sugar, vinegar, Worcestershire sauce, garlic and pepper to taste in a small pot. Heat until the mixture starts to bubble, then reduce the heat to low and simmer until thickened, about 20 minutes, stirring occasionally.
  • For the meatloaves: Pulse the stuffing cubes in a food processor until crumbs form. Transfer to a bowl and moisten with chicken stock.
  • Combine the turkey, poultry seasoning, cumin and some salt and pepper in a large bowl. Add the moistened breadcrumbs, bell pepper, cilantro, scallions, eggs and cheese and mix gently to combine. Fill the muffin cups with the meatloaf mixture, mounding it a bit in the centers. Top with BBQ sauce. Place the pan on a baking sheet and bake for 40 minutes.
  • For the mashed sweet potatoes: While the meatloaves are cooking, peel and cube the sweet potatoes. Place in a pot and cover with water. Bring to a boil and cook until tender, then drain. Mash with the chicken stock, thyme, orange juice and salt and pepper to taste.
  • Serve the meatloaves with the mashed sweet potatoes.

MINI MEATLOAVES WITH BROCCOLI MASH

This is a great recipe for kids to help with. Have older kids help grate the zucchini and onion. Let younger kids get their (clean) hands dirty by mixing the beef mixture until well blended. They can even help mash the potatoes and broccoli together!

6 ounces ground pork
1 small zucchini, grated
1/2 small onion, grated
1/4 cup seasoned breadcrumbs
1 large egg, beaten
Kosher salt and freshly ground pepper
1/4 cup ketchup
1 tablespoon packed dark brown sugar
2 teaspoons soy sauce
2 large russet potatoes (about 1 1/2 pounds), peeled and cut into 2-inch chunks
2 cups frozen broccoli florets
3 ounces cream cheese
Carrot sticks, for serving

Steps:

  • Preheat the oven to 375˚ F. Coat 8 cups of a muffin pan with cooking spray. Combine the ground beef and pork, zucchini, onion, breadcrumbs, egg and 1 teaspoon each salt and pepper in a large bowl; mix with your hands until combined. Mix the ketchup, brown sugar and soy sauce in a small bowl.
  • Divide the meatloaf mixture evenly among the muffin cups, pressing to eliminate any air pockets. Bake 12 minutes. Spread the ketchup mixture on the meatloaves and bake until the glaze sets and the meat is cooked through, about 10 more minutes. Let rest 10 minutes.
  • Meanwhile, put the potatoes in a saucepan and cover with water; season with salt. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, about 20 minutes. Add the broccoli and cook until tender, about 4 minutes. Drain the vegetables and return to the pot. Add the cream cheese and mash well; season with salt. Serve the meatloaves with the broccoli mash and carrot sticks.
