An easy, sugar-free flourless chocolate cookies recipe with just 6 ingredients! Chocolate almond butter cookies are fudgy, chewy, and take just 20 minutes.

1 cup Besti Powdered Monk Fruit Allulose Blend
1/3 cup Cocoa powder
1/4 tsp Sea salt
2 large Egg whites ((at room temperature) - (1/3 cup of egg whites))
1 tsp Vanilla extract
1/2 cup Almond butter
1/2 cup Sugar-free dark chocolate chips
Flaky sea salt ((optional))

Steps:

  • Preheat the oven to 350 degrees F (177 degrees C). Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together Besti, cocoa powder, and sea salt, breaking apart any lumps, until smooth. (Sift if necessary.)
  • Whisk in the egg whites and vanilla, until smooth. It will seem very dry at first, but keep stirring with the whisk until it's smooth and the batter starts to get runny. Stir in the almond butter. Finally, stir in the chocolate chips. The mixture will be thick.
  • Use a medium cookie scoop to drop 1 1/2 tablespoons of batter at a time onto the lined baking sheet, about 2 inches apart. (They will spread during baking.)
  • Bake for 10-12 minutes, until the tops are set. They will be slightly sticky and too fragile to move right away.
  • Sprinkle with flaky sea salt if desired right when you take the cookies out of the oven (optional).
  • Cool completely before moving, to allow cookies to firm up. Then, gently peel the parchment paper away from the bottoms to release.

Glossy and near black in color, these intense, easy-to-make chocolate cookies are like a cross between fudge and the deepest of brownies -- and gluten-free to boot. We discovered them in "The Fearless Baker" by Erin Jeanne McDowell. A little cinnamon gives them a spicy complexity, but you can leave it out for a more purely chocolate flavor. Be sure to use bittersweet rather than semisweet chocolate, or they could end up cloying rather than balanced.

3 cups/340 grams confectioners' sugar
1 1/2 cup/106 grams unsweetened cocoa powder
1/2 teaspoon ground cinnamon (optional)
1/4 teaspoon fine sea salt
1 1/2 teaspoons vanilla extract
1 cup/140 grams bittersweet chocolate chunks
Flaky sea salt, for sprinkling

Steps:

  • Heat the oven to 350 degrees and line 2 rimmed baking sheets with parchment paper.
  • In a large bowl, whisk the eggs until well blended.
  • In another large bowl, sift together confectioners' sugar, cocoa powder, cinnamon and salt. Whisk into eggs, changing to a spatula when the batter becomes too thick to whisk. Stir in vanilla and chocolate.
  • Use a 2-tablespoon cookie scoop to scoop cookies onto prepared baking sheets, leaving 1 1/2 inches between them. Sprinkle with flaky salt.
  • Bake, rotating front to back, and top to bottom, halfway through, until set around the edges, cracked on top and slightly underbaked in the middle, 10 to 13 minutes. Transfer to a rack and let cool completely on the baking sheets. Store carefully in an airtight container.

1/2 cup unsweetened cocoa
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
8 ounces semisweet baking chocolate, broken
4 ounces unsweetened baking chocolate, broken
1 1/2 cups firmly packed light brown sugar
3/4 cup unsalted butter
3 eggs
1 teaspoon vanilla
18 ounces semi-sweet chocolate chips
1 cup whipping cream (optional)
2 tablespoons unsalted butter (optional)
2 tablespoons granulated sugar (optional)
12 ounces semisweet baking chocolate, broken (optional)

Steps:

  • To prepare Cookies: Preheat oven to 325 degrees.
  • Sift together cocoa, flour, baking soda and salt onto a sheet of wax paper.
  • Set aside.
  • Heat 1 inch of water in the bottom of a double boiler over medium heat.
  • Place semisweet and unsweetened baking chocolate in top half of the double boiler. Tightly cover the top pan with plastic wrap and heat 12 to 15 minutes. Remove from heat and stir chocolate until smooth. Keep at room temperature.
  • Place brown sugar and butter in the bowl of electric mixer and beat on medium speed 1 minute. Scrape down bowl and beat on high speed additional 30 seconds. Scrape down bowl. Add eggs, 1 at a time, while beating on medium, stopping to scrape down bowl after incorporating each addition.
  • Add vanilla and beat on medium 30 seconds. Add melted baking chocolate and beat on low 10 seconds more. Scrape down bowl and beat additional 30 seconds. Add flour mixture and beat on low until thoroughly combined, 20 to 30 seconds. Remove bowl from mixer, add chocolate chips and mix thoroughly with rubber spatula.
  • Using 2 baking sheets, portion 6 to 8 cookies per baking sheet by dropping 2 level tablespoons batter per cookie onto each sheet. Place pans on top and middle shelves of oven. Bake 18 to 22 minutes, rotating sheets from top to bottom about halfway through baking time. Cool cookies on pans 5 to 6 minutes.
  • Transfer cookies to wire rack. Repeat procedure until all cookies have been baked. Cool cookies thoroughly before storing in sealed plastic container.
  • To prepare Chocolate Ganache: Heat cream, butter and sugar in medium.
  • saucepan over medium-high heat. When hot, stir to dissolve sugar. Bring mixture to boil.

These dense and chewy cookies are made without butter or flour, and have an intense chocolate flavour. This recipe is from the Bon Appétit Test Kitchen (Bon Appétit Magazine, June 2008). Can also roll cookies in sugar prior to baking.

nonstick vegetable cooking spray
1 1/2 cups bittersweet chocolate chips, divided (about 9 ounces)
3 large egg whites, room temperature
2 cups powdered sugar, divided (can also use granulated sugar)
1/2 cup unsweetened cocoa powder
1 tablespoon cornstarch
1/4 teaspoon salt

Steps:

  • Preheat oven to 400°F Spray 2 large baking sheets with nonstick spray. Melt 1 cup chocolate chips in glass bowl in microwave, stirring twice, about 2 minutes. Cool slightly.
  • Using electric mixer, beat whites in large bowl to soft peaks. Gradually beat in 1 cup sugar. Continue beating until mixture resembles soft marshmallow creme.
  • Whisk 1 cup sugar, cocoa, cornstarch, and salt in medium bowl to blend. On low speed, beat dry ingredients into meringue. Stir in lukewarm chocolate and 1/2 cup chocolate chips (dough will become very stiff).
  • Roll 1 rounded tablespoon dough into ball (can coat in additional sugar if you want).
  • Place on prepared sheet. Repeat with remaining dough, spacing 2 inches apart. Bake until puffed and tops crack, about 8-10 minutes (don't overbake!). Cool on sheets on rack 10 minutes. Transfer to rack; cool.
