1 1/2 sticks (12 tablespoons) unsalted butter or margarine, cut into small pieces, plus more for the pan
12 ounces bittersweet chocolate, chopped
6 large eggs
1/2 cup sugar
Pinch of kosher salt
Unsweetened cocoa powder, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter the bottom and side of a 9-inch springform pan. Combine the chocolate and 1 1/2 sticks butter in a heatproof bowl. Place the bowl over a saucepan of simmering water (do not let the bowl touch the water) and stir until melted and combined. Remove the bowl from the saucepan and let cool slightly.
  • Combine the eggs, sugar and salt in a large bowl. Beat with a mixer on medium-high speed until pale and thick, 5 to 8 minutes.
  • Gently fold half of the melted chocolate mixture into the egg mixture until just combined, then gently fold in the rest. Pour the batter into the prepared pan and bake until the top is no longer shiny and barely jiggles and a toothpick inserted into the center comes out with only a few crumbs, 35 to 45 minutes. Transfer to a rack and let cool completely in the pan. Remove the springform ring and transfer to a platter; dust with cocoa powder.

1/4 teaspoon cream of tartar

Steps:

  • Place egg whites in a large bowl; let stand at room temperature 30 minutes. Preheat oven to 350°. In top of a double boiler or a metal bowl over barely simmering water, melt chocolate and butter; stir until smooth. Remove from heat; cool slightly., In another large bowl, beat egg yolks until thick and lemon-colored. Beat in chocolate mixture. With clean beaters, beat egg whites and cream of tartar on medium speed until foamy., Gradually add sugar, 1 tablespoon at a time, beating on high after each addition until sugar is dissolved. Continue beating until stiff glossy peaks form. Fold a fourth of the egg whites into chocolate mixture, then fold in remaining whites., Transfer to a greased 9-in. springform pan. Bake until a toothpick inserted in center comes out with moist crumbs, 40-45 minutes (do not overbake). Cool completely on a wire rack., Loosen sides from pan with a knife. Remove rim from pan. If desired, dust with confectioners' sugar.

10 ounces bittersweet chocolate, finely chopped (1 2/3 cups)

4 large eggs, room temperature

Steps:

  • Preheat oven to 350 degrees. Oil an 8-inch round cake pan. Line bottom with parchment; oil parchment and dust with cocoa.
  • Melt together 1/2 cup oil and 8 ounces (1 1/3 cups) chocolate in a heatproof bowl set over a pan of simmering water, stirring, until smooth. Remove from heat and whisk in sugar until combined. Steps:

  • Preheat oven to 350 degrees. Make the cake: Butter a 9-inch springform pan. Whisk together cocoa and boiling water until cocoa dissolves and mixture is smooth. Stir in kirsch.
  • Beat butter and 1 cup sugar with a mixer on medium speed until pale and fluffy. Beat in egg yolks, 1 at a time, scraping down sides of bowl between additions. Add cocoa mixture and almonds, and beat until combined. Transfer to a large bowl.

  • Pour batter into pan, and transfer to a baking sheet. Bake for 30 minutes. Remove from oven, and cover cake with parchment-lined foil. Bake until a toothpick inserted into the center comes out clean, about 30 minutes more. Transfer to a wire rack, and let cool for 45 minutes. Run a knife or an offset spatula around edge of cake to loosen, and release sides of pan to remove.
  • Make the meringue: Whisk egg whites and sugar in a clean heatproof bowl of a mixer set over a pan of simmering water until sugar dissolves and mixture is hot to the touch, about 3 minutes. Whisk on medium speed until soft peaks form. Whisk in kirsch. Whisk until stiff peaks form.
  • Spread cherry preserves on top of cake. Spread meringue over preserves using an offset spatula, making decorative swirls. Caramelize peaks of meringue using a handheld kitchen torch or under the broiler.

1 pound semisweet chocolate, coarsely chopped
1/4 cup amaretto
8 large eggs
1/4 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
Confectioners' sugar or cocoa powder, for garnish
Fresh raspberries, for garnish

Steps:

  • Preheat oven to 325 degrees F.
  • Using 1/2 tablespoon butter grease a 9-inch springform pan and line bottom with a parchment round. Cover pan underneath and along sides with foil and set in a roasting pan. Bring a medium saucepan of water to boil.
  • Combine the chocolate, butter, and amaretto in a metal bowl set over simmering water or in the top of a double boiler. Melt the mixture, stirring constantly, until smooth and creamy, about 5 minutes; reserve.
  • Meanwhile combine eggs, sugar, vanilla, and salt in a large bowl and beat with an electric mixer until frothy and almost doubled in volume, about 5 to 10 minutes. Fold 1/3 of egg mixture into chocolate mixture using a rubber spatula. Repeat this process 2 more times - until all of egg mixture has been folded into chocolate mixture.
  • Pour batter into prepared springform pan and place in the roasting pan. Pour enough boiling water into the roasting pan to come about halfway up the sides. Bake until cake has risen slightly and edges are just beginning to set, about 40 to 45 minutes. Remove cake from roasting pan and cool on wire rack to room temperature. Remove foil, cover, and refrigerate overnight.
  • Remove cake from refrigerator about 30 minutes before serving. Remove springform pan sides, invert cake onto a large plate, and peel away the parchment paper from bottom. Reinvert cake on another large plate or serving platter and garnish with confectioners' sugar or cocoa powder immediately before serving.

1 1/2 cups sugar
1 1/2 teaspoons instant coffee granules
3/4 cup boiling water
3/4 cup butter, softened
6 eggs, at room temperature
1 tablespoon vanilla extract
1 1/2 cups frozen unsweetened raspberries
1/2 cup sugar
1 tablespoon Chambord raspberry liquor
1 1/2 cups heavy cream
2 tablespoons sugar
1 1/2 teaspoons vanilla extract
fresh raspberry, for garnish

Steps:

  • Preheat oven to 350°F.
  • Position rack in lower third of the oven.
  • Butter the bottom and sides of a 9"x2" round springform pan.
  • Line bottom of pan with round of parchment or waxed paper and butter paper.
  • In a food processor fitted with metal blade, place chocolate, sugar, and coffee.
  • Cover and process for 15-20 seconds, until finely ground.
  • With motor running, pour boiling water through the feed tube.
  • Process for 10-15 seconds, until chocolate is completely melted.
  • Using a rubber spatula, scrape down sides of work bowl.
  • Add butter and process for about 5 seconds or until incorpaorated.
  • Add eggs and vanilla and process for about 5 seconds or until mixture is smooth and creamy.
  • Scrape chocolate batter into prepared pan and smooth top with rubber spatula.
  • Bake for 55 minutes, until edges of the cake are puffy and center is just set.
  • Cool cake in pan on wire racks for 30 minutes.
  • Cover and refrigerate for at least 3 hours or until ready to serve.

  • In medium saucepan, place frozen raspberries and sugar.
  • Cook over medium heat stirring constantly with wooden spoon until sugar is completely dissolved and berries are soft.

  • Strain raspberrey mixture through a fine-meshed sieve into a bowl.
  • Add liqueur, cover and refrigerate.

  • Run a thin-blended knife around edge of cake to loosen it from sides of springform pan.

  • Invert cake onto a serving plate.
  • Peel off paper and refrigerate while preparing whipped cream.

1/4 cup canola oil
3 tablespoons butter
6 eggs, separated
1/4 teaspoon salt
1/2 cup dark brown sugar
1/4 cup granulated sugar
1 teaspoon vanilla extract
2 tablespoons Dutch-process cocoa

Steps:

  • Preheat the oven to 325 degrees F. Grease a 9-inch springform pan and line the bottom of the pan with parchment.
  • Finely grind the hazelnuts in a food processor until they reach a coarse, sandy consistency.
  • Either in the microwave or in a double boiler over hot water, melt the chocolate with the oil and butter, stirring together to form a homogenous mixture. Set aside in a warm place.

1 18-oz jar apricot preserves (1 1/2 cups)
1/2 cup dried apricots, snipped
3 tablespoons lemon juice
1/2 cup chopped toasted almonds
1 cup fresh raspberries
1/2 cup sliced fresh apricots or dried apricots, cut into slivers

Steps:

  • Allow egg yolks and whites to stand at room temperature for 30 minutes. Meanwhile, greast two 9-inch round cake pans. Line the bottoms of the pans with waxed paper; grease the waxed paper. Dust the insides of the pans with the cocoa powder; set aside. In a small saucepan cook and stir bittersweet chocolate over low heat until melted. Cool chocolate for about 10 minutes. Preheat oven to 350°F. In a large bowl beat the butter with an electric mixer on medium to high speed for 30 seconds. Add sugar and potato starch; beat until combined. Beat in the melted chocolate until combined. Add the egg yolks two at a time, beating well after each addition. Thoroughly wash beaters. 5 large eggs
1/4 cup sugar
1/3 cup dark corn syrup
3/4 cup whipping cream
8 ounces semisweet chocolate, chopped
1 1/2 tablespoons unsalted butter, room temperature
1 1/2 tablespoons light corn syrup

Steps:

  • For cake: Preheat oven to 350°F.
  • Butter and flour 9 inch diameter cake pan with 2 inch sides.
  • Line bottom of pan with parchment.
  • Dust pan with flour; tap out excess.
  • Stir butter and chocolate in heavy medium saucepan over low heat until smooth.
  • Set aside.
  • Using electric mixer, beat eggs and sugar in large bowl until slightly thickened.
  • Add corn syrup and beat until slowly dissolving ribbons form when beaters are lifted.

Steps:

  • Preheat the oven to 350°F and position a rack in the center. Lightly grease a 9-inch spring-form pan with nonstick cooking spray or butter, dust it with flour, and tap to knock out the excess.
  • Place the walnut pieces on a baking sheet and toast them until they are golden brown and aromatic, 12 to 14 minutes.

1 cup granulated sugar
1 1/2 cups light corn syrup
20 ounces good-quality semisweet chocolate, preferably French or Belgian cut into small pieces plus, 8 ounces additional chocolate
2 sticks (16 tablespoons) unsalted butter
10 whole eggs
1/2 cup heavy cream

Steps:

  • Preheat the oven to 350 degrees.
  • In a heavy bottomed pot, combine the sugar and corn syrup and bring to a boil. Reduce the heat to low and cook for 5 minutes. Remove from the heat. Melt the 20 ounces chopped chocolate in the top of a double boiler over simmering water. Stir the chocolate occasionally as it melts. Remove the pan from the heat and stir in the butter. Set aside to cool slightly. With an electric mixer, beat the eggs at high speed until frothy. Lower the speed to medium and carefully pour the hot syrup into the beaten eggs. Add the melted chocolate and butter mixture and blend to a smooth consistency. Butter a 10 inch to 12inch round cake pan lightly and pour in the chocolate mixture. Set the cake pan into a larger pan (such as a roasting pan) and add hot water to rise halfway up the sides of the cake pan. Place in the preheated oven and bake about 45 to 50 minutes.
  • Being very careful not to scald yourself or get water into the torte, remove the pans from the oven, and remove the cake pan from the water bath. Cool the torte completely to room temperature before unmolding. Run a sharp knife around the inner circumference of the pan. Place a plate over the pan, invert, and, if necessary, tap the bottom of the pan with the knife handle to encourage the torte to release.
  • The torte should then be refrigerated for at least 3 hours before serving. While the torte is cooling, place the heavy cream in a thick bottomed pot and begin to heat gently. Add the remaining 8 ounces of chocolate, stir together while the chocolate begins to melt in the hot cream. Being careful not to burn, boil or scorch the chocolate, when the chocolate has melted almost entirely, remove from the heat and allow to cool for several minutes before pouring over the torte for a glossy "finish". Place the unmolded torte on a baking rack with a cookie sheet underneath, and pour slightly cooled chocolate ganache directly onto the center of the torte in one motion so that it will flow out in one smooth sheet over the top and sides of the torte. You can gently help this along with the aid of a spatula but is important to use still warmed ganache.
  • Allow to dry a few moments at room temperature. Then place the torte, baking rack, and cookie sheet into the refrigerator to chill completely and set firm. If you haven't overheated the chocolate or cream, this "ganache" will set and harden into a shiny "couverture" during the hour the torte is chilling in the refrigerator.

1/4 cup brewed coffee
2 tablespoons vegetable oil
2 tablespoons unsweetened applesauce
2 tablespoons Frangelico*
Glaze:
3 ounces Sugar free chocolate
2 tablespoons Frangelico*

Steps:

  • 1. Preheat oven to 350 degrees F. Lightly spray an 8-inch cake pan with cooking spray. Set aside. 2. Bake hazelnuts in preheated 350 degrees F oven until golden brown (approx. 5-7 minutes). Set aside. 3. Make cake. Melt chocolate in a small pan over low heat. Set aside. Place hazelnuts and remaining cake ingredients in a medium mixing bowl. Stir until well blended. Add chocolate and mix well. Pour into prepared 8-inch cake pan. Bake 15-20 minutes. Cake will seem slightly underbaked. 4. Remove cake from pan. Cool on a wire rack. 5. Place cool cake on a serving plate. 6. Make glaze. Place chocolate and Frangelico* in a small saucepan. Heat over low heat while stirring constantly. Pour melted chocolate glaze over torte. Refrigerate torte until ready to serve.

10 oz good imported bittersweet chocolate, broken into pieces
1/2 c (1 stick) unsalted butter or margarine, at room temperature
1/2 c granulated sugar plus more for sprinkling
5 large eggs, separated
1/3 c finely ground almonds (done in a food processor)
2 T kosher for passover cognac or dark rum
Whipped cream, optional
Fresh raspberries, optional

Steps:

  • Preheat oven to 300 degrees and grease well a 9-inch springform pan and line bottom with parchment paper. Melt the chocolate in a double boiler over hot, not boiling water. When the chocolate is melted, turn off the heat and leave it over the hot water to cool slowly. Meanwhile in a large bowl, beat the butter with 1/4 cup of the sugar until the mixture is fluffy and almost white. Add egg yolks and beat for 1 minute. Add the almonds and cognac and beat 2 minutes more. In a separate bowl, beat the egg whites until light and foamy while gradually adding the remaining 1/4 cup sugar. Continue beating the whites until they are stiff and shiny. Add the melted chocolate to the egg yolk mixture and mix with a rubber spatula until well combined. Fold in 1/4 of this chocolate mixture into the egg whites; then gradually fold the egg whites back into the rest of the chocolate mixture, taking care not to deflate the batter. Pour the mixture into the springform pan and bake until a tester comes out covered with a thick, moist, not wet, and crumbly coating. Allow cake to cool for 30 minutes in the pan. Loosen the edges with a knife and carefully turn the cake out onto a plate. Remove the parchment paper. Sprinkle with the sugar. Serve at room temperature or chilled with whipped cream and raspberries on the side.

1 lb semisweet chocolate
1 cup sugar
1/2 cup unsweetened cocoa powder
1/2 cup sour cream
1 teaspoon almond extract
6 eggs, separated and at room temperature
3 -4 tablespoons eau de vie or 3 -4 tablespoons Chambord raspberry liquor
1/2 cup seedless raspberry jam
3 cups fresh raspberries
whipped cream, to serve

Steps:

  • Preheat oven to 400 degrees. Lightly oil a 10-inch round cake pan, line bottom with parchment paper, spray oil on the parchment and dust with flour.
  • Over low heat, melt butter with chocolate. Remove from heat. Combine sugar with cocoa and whisk into chocolate. Whisk in sour cream, extract and egg yolks.
  • In a separate bowl, whip egg whites to soft peaks and fold into chocolate one third at a time. Turn mixture into cake pan, set in a large roasting pan, and pour in enough hot water to go 1 inch up sides of cake pan. Bake for 10 minutes, then reduce temperature to 325 degrees and bake for an additional 40 to 50 minutes; the center will appear soft and the sides firm. Remove from oven and cool on a rack. Refrigerate cake overnight.
  • The next day, remove cake from pan. Invert a plate on top, then flip pan over. Peel off parchment paper. Spread raspberry jam (mixed with the liqueur, if using) over top, then smother with raspberries. Serve with dollops of whipped cream.
  • NOTE: To make clean slices, use a knife warmed in hot water, then dried with a towel; clean knife and repeat for each slice.

15 oz bittersweet chocolate, finely chopped
2 1/21/2 stick unsalted butter, cut into small pieces
6 egg yolks
3/4 c granulated sugar
1 tsp vanilla extract
1 1/2 tsp brewed espresso
5 egg whites, at room temperature
confectioners' sugar for dusting

Steps:

  • 1. Grease a pie pan and dust with the cocoa powder. In a microwave, combine the chocolate and butter. In a large bowl, using an electric mixer fitted with the whisk attachment, beat together the egg yolks, 6 tablespoons of the granulated sugar, the espresso, vanilla and salt on medium-high speed until pale and very thick, about 3 to 5 minutes. Gradually pour in the chocolate mixture and continue beating until well blended. In a separate bowl beat the egg whites on medium-high speed until foamy, about 1 minute. Gradually add the remaining 3 tablespoons granulated sugar and continue to beat until medium-firm peaks form, about 2 minutes. Scoop half of the egg whites onto the chocolate mixture and fold them in gently. Fold in the remaining whites just until no streaks remain. Pour the batter into the prepared pan and spread it out evenly. Bake in a 300F oven until the torte puffs slightly and a toothpick inserted into the center comes out very moist but not liquid, about 38-40 minutes. Transfer the pan to a wire rack and let cool for 30 minutes. Let the torte cool completely, then cover and refrigerate until very cold, at least 4 hours or up to overnight. Garnish the torte with the raspberries and dust with confectioners' sugar.

3 each eggs
2 each Egg whites
1/4 cup unsweetened cocoa powder
1 1/4 cups sugar
1 tablespoon Instant coffee granules
1/4 teaspoon salt
2 tablespoons potato starch

Steps:

  • 1. Preheat oven to 325 degrees. Line the bottom of a 9-inch springform pan with parchment paper. 2. Combine applesauce, prunes, and hot water in a blender or food processor andblend until smooth. 3. Place chocolate in a large microwavable bowl and cook on medium high power for 1 minute. Stir, then cook another 30 to 60 seconds, until completely melted and mixture is smooth. 4. Whisk oil into the melted chocolate, then whisk in reserved apple-prune puree. Whisk in eggs and egg whites, then whisk in cocoa, sugar, coffee, salt, and potato starch. Whisk until smooth and fully combined. 5. Pour batter into prepared pan and bake until a toothpick placed in the center comes out with moist crumbs, about 35 to 40 minutes. Don't overbake. 6. Cool for 1 hour on a wire rack, then refrigerate for at least 2 hours before serving. 7. To serve, carefully remove sides of pan. Invert cake onto one plate and peel off parchment paper, then invert onto a second plate so cake is right-side-up. Dust top with confectioners' sugar if desired. Garnish with raspberries and mint leaves if desired and slice into wedges.

1 cup whipping cream
1 cup sugar
1/2 teaspoon salt*
9 eggs
4 teaspoons vanilla
Cocoa powder

Steps:

  • For torte, grease bottom and side of a 10-inch springform pan; set aside. In heavy, large saucepan, combine the 16 ounces chocolate, the butter, sugar, 1 cup whipping cream, and salt, if using. Cook over medium-low heat until chocolate and butter are melted; stir frequently. Remove from heat. In a large bowl, whisk eggs and vanilla together. Slowly stir half of the chocolate mixture into eggs. Return egg mixture to remaining chocolate mixture, stirring until combined. Pour batter into prepared springform pan, placed on a foil-lined baking sheet. Bake in a 350 degree F oven for 45 to 50 minutes or until center is set and a knife inserted near center comes out clean. Remove from oven; cool thoroughly on a wire rack. Chill in the refrigerator about 4 hours or until firm. Set torte on serving plate. With a knife or narrow metal spatula, carefully loosen cake and remove side of pan. Cover and chill in the refrigerator for several minutes or until ganache is set. Sprinkle top with cocoa powder and serve with whipped cream.

1/2 cup matzo meal
1/3 cup walnuts
2 large eggs
1 1/4 cups sugar, divided
2 teaspoons vanilla extract
1 cup grated peeled apple, preferably Delicious
2 tablespoons unsweetened cocoa powder
2 ounces bittersweet or semisweet chocolate, chopped
8 large egg whites, at room temperature
1/2 teaspoon salt
Confectioners' sugar, for dusting

Steps:

  • Preheat oven to 350°F. Combine matzo meal and walnuts in a food processor; process until nuts are finely chopped. Spread on a baking sheet and toast until fragrant, 5 to 10 minutes. Let cool. Whisk eggs, 3/4 cup sugar and vanilla in a large bowl until blended. Stir in the matzo mixture, apple, cocoa and chocolate. Beat egg whites and salt in large, clean bowl, with an electric mixer on medium speed until frothy. Increase speed to high and beat until soft peaks form. Add remaining 1/2 cup sugar 1 Tbsp. at a time, beating until glossy and stiff peaks form. Stir one-quarter of the beaten whites into the batter. Gently fold in remaining whites with a rubber spatula. Scrape the batter into an ungreased 9-inch springform pan, spreading evenly. Tap pan lightly on counter to release air bubbles. Bake torte until top springs back when touched lightly and a skewer inserted in the center comes out clean, 40 to 45 minutes. With a knife, loosen edges of torte. Let cool in pan on a wire rack. (Torte will sink in center.) Remove pan sides and place torte on a serving platter. Dust with confectioners' sugar and serve.

DO NOT MAKE THAT FACE!!! Trust me. I made that EWWWW face for over a year before I tried this. THIS CAKE MUST SIT OVERNIGHT!! Then it will me moist and dense. In fact, I made the cake and tried it fresh out of the oven. It was dry and yuck! I was so disappointed because I was looking for good cake for my baby's birthday. I had to go to work that night, but told my brother. "There is some chocolate cake in the microwave if you want some. But, it is not very good." Well, I got home the next morning around 11am. (did a shift an a half) and I was tired and hungry. I didn't feel like cooking anything and thought I would grab a piece of the cake. It was all gone!! So, I asked about it. He said that he had put a piece in Jenni's lunch and that he and our neighbor had eaten the rest of it over a pot of coffee. He said it was really good! Hmmmm. So, I made it again a week or so later and had some the next day. It was really good. ANYWAYS: to make a long story short, this cake MUST SIT OVERNIGHT. I used the recipe to make cupcakes for my little girl to take to school for any holiday or party. The kids loved them!!

1/2 - 1 cup(s) heavy cream (start with 1/2 cup and add til you have the consistency that you like)
*PLEASE MAKE NOTE THAT THIS RECIPE USES BLACK SOY BEANS NOT REGULAR BLACK BEANS!

Steps:

  • Preheat oven to 350 degrees
  • Drain and rinse Black Soy Beans in colander under running water.
  • Mix bean and butter in a food processor very well. (Will not be a smooth batter.) Add in the remaining ingredients.
  • Pour into a greased 8x8 baking pan, bake for 30 minutes. Or make 15 cupcakes, bake for 15-17 minutes.
  • FROSTING: Blend cream cheese, Ideal Sweetener (or Splenda) heavy cream (start with 1/2 a cup and add til you have the consistency that you like. I usually use about 3/4 of a cup) and vanilla until smooth. Spread on top of cakes or cup cakes. Can add food coloring to suit the situation. (Blue for boys, pink for girls birthdays. Red for Valentines. Red or Green for Christmas. Orange for Halloween or Thanksgiving. Pastels for Easter.
  • VARIATION: Can frost with spray whip cream.
  • NOTE: Allow to cool overnight. This an absolute must do!! These become moist and dense after 24 hours. If you serve before then, you will be disappointed because they will be dry and blah.
