PAN-FRIED FLOUNDER FILLETS



Pan-Fried Flounder Fillets image

2 pounds flounder fillets
1/2 cup yellow cornmeal
1/8 tsp black pepper
1/4 cup butter or margarine
1 cup tarragon vinegar
1/2 cup sifted all-purpose flour
Cucumber Sauce
1 cup dairy sour cream
1/4 tsp salt
1/4 tsp paprika
1 tsp lemon juice
1 cup grated pared cucumber
dash pepper
dash of liquid hot pepper
1/2 tsp Worcestershire sauce

Steps:

  • Arrange flounder fillets in a shallow baking dish. Pour on vinegar and let fish marinate for 10 minutes.
  • Meanwhile, combine the flour, cornmeal, salt and pepper; use mixture to coat fillets evenly on both sides.
  • In hot butter in a large skillet, sauté the fillets until golden brown, approximately 4 minutes on each side. In the meantime make the cucumber sauce by combining all sauce ingredients; sour cream, salt, paprika, lemon juice cucumber liquid hot sauce, Worcestershire sauce and a dash of pepper.
  • Serve flounder with sauce.

1 1/2 lbs orange roughy fillets
1 (8 ounce) container sour cream
1/4 cup shredded parmesan cheese
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons Italian seasoned breadcrumbs
2 tablespoons butter or 2 tablespoons margarine, melted

Steps:

  • Place filets in single layer in a lightly greased 13x9" pan.
  • Stir together sour cream, Parmesan cheese, paprika, salt and pepper.
  • Spread mixture evenly over filets.
  • Sprinkle with bread crumbs, and drizzle with butter.
  • Bake at 350 for 20-25 minutes or until fish flakes with fork.

Another tasty, easy and light recipe from Cooking Lights Fresh Food Fast magazine. I have used other white fish besides flounder and also again I have added minced garlic to the top of the fish as it bakes. With the cream sauce I also add some lemon pepper which is not stated.

1/4 teaspoon black pepper (I use lemon pepper)
1/8 teaspoon salt
4 (6 ounce) flounder fillets
cooking spray
1 garlic clove, minced
1 tablespoon chopped fresh dill
1/2 cup reduced-fat sour cream
2 tablespoons capers, drained
4 lemon wedges

Steps:

  • Preheat oven to 425 degrees.
  • Sprinkle pepper (lemon pepper) and salt evenly over fillets. Place fish on a foil-lined baking sheet coated with cooking spray. Sprinkle fish evenly with the minced garlic. Bake at 425 degrees for 10 minutes; sprinkle evenly with dill. Bake an additional 2 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness.
  • While fish bakes, combine sour cream and capers in a small bowl. Place fish on a serving plate. Serve with sour cream mixture and lemon wedges.

1 lb flounder fillets, skinned
1/2 teaspoon salt
1/2 teaspoon black pepper
3 tomatoes, sliced
2 tablespoons flour
1 1/2 tablespoons margarine, melted
1/2 cup skim milk
1 cup dry white wine
1 teaspoon basil, crushed

Steps:

  • Sprinkle both sides of flounder fillets garlic salt and pepper.
  • Place fillets in a single layer in a greased baking dish 12x8 inches.
  • Arrange sliced tomatoes over top of fillets.
  • Sprinkle tomatoes with garlic salt and pepper.
  • Blend flour into margarine.
  • Add milk gradually and cook until thick and smooth, stirring constantly. Remove from heat and stir in wine and basil.
  • Pour sauce over top of tomatoes.
  • Bake in a 350 oven for 25-30 minutes or until fish flakes easily.
