FLAX SEED BREAD (BREAD MACHINE)
I saw flax seed at the grocery and bought it without any idea of what to do with it. I found out that flax seed contributes fiber and omega-3s to the diet. Even better, it made this delightful, speckled loaf with a nutty flavor. Wonderful as is or toasted.

Steps:
- Place ingredients in your bread machine as directed by your manufacturer.
- Set to dough cycle. Check the consistency after about 10 minutes - if it looks dry, add a little more water.
- After initial rise, remove, shape in a large round loaf (or whatever you like), let rise again on a cornmeal dusted baking pan.
- Preheat oven to 400 deg. If desired, brush loaf with an egg wash (one egg beaten with 1 tbl. cold water). Slash loaf with sharp knife. Place in oven. After 15 min., reduce temperature to 350 deg.
- Bake for an additional 25 minutes or until loaf is done - an instant thermometer should read 205 deg.
- Turn onto cooling rack and let cool.
- Note: If using flax seed, 2/3 cups seed will grind into 1 cup flax meal.
- Note2: If using egg wash, you may also sprinkle loaf with whole flax or poppy seeds.
HIGH FIBER BREAD
This dense, chewy bread has a good dose of fiber and is great toasted in the morning with my oatmeal.

Steps:
- Place water, molasses, yeast, wheat flour, ground flax seed, bread flour, oat bran, rolled oats, amaranth seeds, and salt in the pan of a bread machine in the order recommended by manufacturer. Select dough cycle; press start and allow machine to run complete dough cycle.
- Turn dough onto a lightly floured surface. Form dough into 2 loaves and place on baking stone. Cover loaves with a damp cloth and let rise until doubled in volume, about 1 hour.
- Preheat oven to 375 degrees F (190 degrees C).
- Bake in preheated oven until top is golden brown, 20 to 25 minutes. Slide loaf onto a work surface and gently tap bottom of loaf. If it sounds hollow, bread is done.

Steps:
- Preheat oven to 350°.
- Combine flour, ground flax; baking soda; set aside.
- In large bowl, whisk together oil, brown sugar, molasses, egg, vanilla; fold in carrots, orange juice or crushed pineapple.
- Stir in ground cinnamon, nutmeg, ginger, cayenne.
- Fold in flour mixture, stirring just until dry ingredients are moistened. If too dry, add orange or other juice up to a 1/4 cup.
- Fold in nuts and dried fruit.
- Spoon into 1 greased 9 x 13 cake pan.
- Bake for 30 minutes, check and continue until a butter knife comes out clean.
- Cool in pan on a wire rack 15 minutes.
- Cut into small squares and serve.

I liked this one bread recipe but it was lacking some of the healthy additions I like so much in my bread.

Steps:
- The easy way: Throw it all into a bread machine and select dough. When finished proceed to step 9.
- The hard way: Dissolve yeast in warm water.
- In a large bowl, combine butter, molasses, honey and salt and mix well.
- Add yeast mixture and then gradually add flours.
- Turn onto floured surface and knead until smooth.
- Place in buttered bowl and let rise until double.
- Punch down and let rest for a few minutes.
- Divide dough into 4 parts and shape into loaves.
- Place in greased pans and let rise for about an hour.
- Bake at 375* for 35 to 40 minutes.
