This fig flatbread features sweet figs, caramelized onions, creamy goat cheese and fresh arugula for a sweet and savory meal that really satisfies. It's the perfect light meal to transition from summer to fall!

1 small flatbread ((I used a whole grain naan))
2 tablespoons extra virgin olive oil, divided
2 ounces goat cheese (, softened)
1/4 cup caramelized onions
3-5 fresh figs (, sliced)
2 cups arugula
1 teaspoon balsamic reduction ((optional))
salt and pepper to taste

Steps:

  • Preheat the oven to 400F.
  • Brush the flatbread with half the olive oil. Add dollops of the goat cheese evenly over the flatbread. Add the onions and figs.
  • Bake 10 minutes or until the goat cheese melts a bit and the edges of the flatbread brown. During the last 2 minutes, toss the arugula with the remaining olive oil and salt and pepper to taste in a bowl until the greens are lightly dressed.
  • Remove from the oven. Top with the dressed arugula, cracked black pepper and a drizzle of balsamic reduction.

1 tablespoon unsalted butter
1 large sweet onion (thinly sliced)
1/8 teaspoon salt
1 tablespoon veggie stock
1 pre-made thin-crust flatbread
2 teaspoon olive oil (divided)
3 ounces goat cheese
1 cup organic arugula
2 tablespoons balsamic glaze

Steps:

  • Heat butter in skillet over medium-low heat. Add onions and cook, stirring frequently, 30-40 minutes. Once onions begin to soften and brown, sprinkle with salt and stir in stock. Cook additional 1-2 minutes and remove from heat.
  • Preheat oven to 425F.
  • Lay flatbread on baking sheet. Brush with 1 tsp. olive oil and top with caramelized onions and goat cheese. Bake 8-12 minutes, or until cheese melts and crust is crisp. Remove from oven.
  • Toss arugula with 1 tsp. olive oil, salt and pepper. Top flatbread with arugula and drizzle with balsamic glaze.

3 large onions, halved and thinly sliced
1 tablespoon sugar
1/4 teaspoon salt
12 dried figs, sliced
1 cup water

8 ounces Asiago cheese, sliced
12 thin slices prosciutto
3/4 cup crumbled goat cheese

Steps:

  • In a large skillet, heat 2 tablespoons butter over medium heat. Add onions, sugar and salt; cook and stir until softened, about 15 minutes. Reduce heat to medium-low; cook until deep golden brown, 30-40 minutes, stirring occasionally., Meanwhile, place figs, water and honey in a small saucepan. Bring to a boil; reduce heat. Simmer, uncovered, until liquid is almost evaporated, about 20 minutes., Preheat panini maker or indoor electric grill. Layer 6 slices of bread with Asiago cheese, prosciutto, goat cheese, caramelized onions and figs; top with remaining bread. 1 tablespoon olive oil, plus more for brushing on the bread
2 yellow onions
1 teaspoon salt
freshly ground pepper
1 teaspoon sugar
4 flatbreads or pita bread
4 ounces goat cheese
arugala
fig spread

Steps:

  • Heat the olive oil in a medium fry pan over medium-low heat. Add the onions, salt, and pepper, and cook for 20 minutes, stirring occasionally. The heat should be low enough that the onions sizzle quietly but don't brown too quickly. Add the sugar and continue to cook for another 15 to 20 minutes, until the onions are dark golden and a darker brown crust begins to form on the bottom of the skillet. Turn off the heat and set aside. Preheat the oven to 425 degrees. Brush a bit of olive oil on each flatbread and sprinkle on some kosher salt. Put some arugala on each. Scatter the onions evenly over each flatbread and crumble one ounce of goat cheese on each. Put fig spread on sparingly. 1 red onion, sliced
3 cups arugula, washed, dried and coarsely chopped

4 whole-wheat tortillas, 6-inches in diameter
2 ounces reduced-fat goat cheese

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the oil and onions in a medium skillet and cook over very low heat, stirring occasionally, until onions are soft and caramelized, about 15 minutes. Turn the heat up to medium and add the arugula. Cook until the arugula is wilted, about 1 minute. Season with salt and pepper.
  • Place the tortillas on a baking sheet and top each with some of the arugula/onion mixture. Crumble some goat cheese on top of each, and bake for 10 minutes. Allow to cool for a few minutes and cut each pizza into 4 triangles.

¾ cup warm water, plus 2 tablespoons
1 ½ teaspoons instant yeast
1 cup all purpose flour, plus more for dusting
1 cup whole wheat flour
1 ½ teaspoons kosher salt
1 teaspoon olive oil, plus more for brushing
2 ½ tablespoons olive oil, divided
1 medium yellow onion, thinly sliced
¾ teaspoon kosher salt, divided
½ teaspoon black pepper
1 teaspoon balsamic vinegar
6 cups fresh arugula
2 medium peaches, thinly sliced
4 oz goat cheese, crumbled
2 tablespoons balsamic glaze

Steps:

  • Make the dough: In a large bowl, combine the warm water, yeast, all-purpose and whole wheat flours, and salt. Mix with a rubber spatula until well-combined and the dough comes together into a ball.
  • Lightly dust a clean surface with flour, then turn the dough out and knead for 1-2 minutes to smooth and encourage gluten development. Shape the dough into a ball.
  • Drizzle the olive oil in the bowl. Add the dough and turn to coat in the oil. Cover with a kitchen towel and let rise for 1 hour, or until doubled in size.
  • Caramelize the onions: Heat 2 tablespoons of olive oil in a large pan over medium heat. Add the onion, ½ teaspoon salt, and the pepper. Sauté for 5 minutes, until slightly softened. Add the balsamic vinegar, stir, and reduce the heat to low. Cook for about 25 minutes more, until the onions are tender and caramelized. Remove the pan from the heat and set aside to cool.
  • Punch down the dough, then divide into 4 pieces. On a lightly floured surface, roll out each piece to an 8-inch (20 cm) round, about ⅛ inch (3 mm) thick.
  • Heat a grill pan over medium-high heat. Brush each side of the dough lightly with olive oil. One at a time, grill each flatbread for about 4 minutes on each side, until grill marks appear and the dough is cooked through.
  • Add the arugula to a medium bowl, along with the caramelized onions, remaining ½ tablespoon olive oil, and remaining ¼ teaspoon salt. Toss well.
  • Top each flatbread with some of the arugula mixture, 6 peach slices, and 1 ounce of crumbled goat cheese. Drizzle with the balsamic glaze.
