I really like the versatility of flatbread (I use the Flatout Brand). I love spinach and feta combined, and like this pizza. I find it quick and easy for lunch.

1 flat bread
1 tablespoon fat free cream cheese
1 cup fresh spinach leaves (or frozen after thawing and squeezing dry)
1/4 cup feta cheese (the reduced fat kind works well)
1/4 cup onion, thinly sliced
5 olives, sliced
1 teaspoon garlic, minced

Steps:

  • Place flatbread on a cookie sheet and spread cream cheese over it
  • Spread spinach leaves over that.
  • Sprinkle feta over spinach.
  • Top with onion.
  • Distribute garlic over all.
  • Sprinkle olives oon top.
  • Bake for 10 minutes at 375 degrees.

4 pita breads
100 g feta, thinly sliced
handful Baby Spinach
50 g mozzarella cheese
1 garlic clove, minced
2 tablespoons olive oil

Steps:

  • 1. Combine olive oil and garlic and set aside.
  • 2. Spread one half of pita bread with feta, top with spinach and mozzarella for each.
  • 3. Fold over and place on hot sandwich press, brush top with garlic oil.
  • 4. Press until golden.
  • NB. You can make these in any number of ways - another favourite is salami, tomato, and feta.

1 teaspoon olive oil
3 cups fresh baby spinach
1/4 cup plus 1 tablespoon prepared pesto, divided
1 package (6 ounces) ready-to-use grilled chicken breast strips
1 prebaked 12-inch pizza crust
2 cups shredded part-skim mozzarella cheese
5 bacon strips, cooked and crumbled
1/2 cup part-skim ricotta cheese
1/4 cup shredded Parmesan cheese

Steps:

  • Preheat oven to 450°. In a large skillet, heat oil over medium-high heat. Add spinach; cook and stir just until wilted. Remove from heat; stir in 1/4 cup pesto. In a small bowl, toss chicken with remaining pesto., Place crust on an ungreased baking sheet. Spread with spinach mixture; top with chicken, mozzarella cheese and bacon. 1 pizza dough, for 12 inch pizza
2 sweet onions, sliced
2 tablespoons olive oil
1/2-1 cup pesto sauce
1/2 cup frozen spinach, thawed and squeezed dry
1/2 cup sun-dried tomato, in oil drained
6 ounces feta, crumbled

Steps:

  • In large non-stick skillet, heat oil over medium high heat. Add onions. Once onions begin to brown reduce heat to low. Continue to cook onions until soft and caramelized. This should take a total of 20-30 minutes.
  • Roll dough out. Spread pesto. Layer remaining ingredients and onions over sauce.
  • Bake according to dough directions.
