CRACKER-COATED FRIED PERCH

2 eggs
1/2 cup milk
2 cups butter-flavored cracker crumbs
1/2 teaspoon garlic salt
1/4 teaspoon dried oregano
1/4 teaspoon dried tarragon
1/4 teaspoon pepper
1 pound lake perch fillets
Vegetable oil

Steps:

  • In a shallow bowl, beat eggs and milk. In another shallow bowl, combine cracker crumbs, garlic salt, oregano, tarragon and pepper. Dip the perch in egg mixture, then coat with crumbs. Heat oil in a skillet over medium heat. Fry fish for several minutes on each side or until it flakes easily with a fork.

1 1/2 cups all-purpose flour
2 tablespoons paprika
1/2 teaspoon salt
1 egg
1 cup half-and-half
1/2 cup clarified butter
1 1/2 pounds fresh, skinned lake perch

Steps:

  • Mix flour, paprika, and salt together and set aside. In a small bowl, blend the egg and the half-and-half. Heat butter in a large saute pan. Dip perch fillets in egg wash first and then into the flour mixture. Carefully place them into the hot butter in the saute pan and brown on both sides. Remove from the butter and drain on a paper towel to absorb excess butter. Serve immediately.

2 lbs fish fillets (of your choice)
1/2 cup all-purpose flour
1/2 cup milk
1 egg
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon oregano leaves
1/2 cup yellow cornmeal
1/2 cup vegetable oil

Steps:

  • in 9" pie pan stir together all ingredients except cornmeal, fish and oil.
  • on waxed paper place cornmeal, dip fish into batter, then coat both sides of fish with cornmeal.
  • in 10" skittle heat oil until hot.
  • place 3 or 4 fish fillets in hot oil.
  • cook over med heat until golden brown.
  • turn and continue cooking until golden brown and fish flakes with a fork.
  • repeat with remaining fish, place fried fish on paper towel to drain any excess oil.
  • Serve with potatoes or rice.

I fix this at least twice a month, when I can find it. I know Krogers didn't have it for over a month. It is my favorite to fix for my man.

Number Of Ingredients 7

12 oz ocean perch
2/3 c aunt jemima corn meal mix
2/3 c all purpose flour
1 egg
1/2 c milk
2 tsp each lawry's seasoning salt and black pepper
vegetable oil for frying

Steps:

  • 1. In colander, place fish and season with the spices, let rest 30 minutes
  • 2. in a bowl to dredge, mix egg and milk
  • 3. in another bowl to dredge, mix flour, and corn meal mix
  • 4. heat oil in fryer skillet or dutch oven, at least 3/4 " deep
  • 5. dip fish pieces in egg mixture, then in the flour mixture, shake off excess, lay each pirce carefully in hot oil ( burner on med heat )
  • 6. continue until all fish is in skillet. cook 10 minutes, turn each piece and fry another 10 minutes.
  • 7. when fish is dark as you want, remove from oil to paper towel lined plate.
