3 1/2 lbs pork spareribs, cut into single ribs and halved
1 teaspoon five-spice powder
salt and pepper
5 green onions, finely sliced lengthwise, for garnish (optional)
3 tablespoons peanut oil
2 teaspoons grated gingerroot
2 garlic cloves, crushed
1/4 cup hoisin sauce
2 tablespoons soy sauce
2 tablespoons sweet chili pepper dipping sauce (available bottled)
1/4 cup honey
1/3 cup light brown sugar
1/3 cup dry sherry

Steps:

  • Preheat oven to 275 degrees F.
  • Rub the ribs with five-spice powder, salt and pepper.
  • Divide between 2 roasting pans (non stick preferably).
  • Cover tightly with foil and cook for 1 hour.
  • To make the sauce, heat oil over med. heat and stir fry ginger and garlic.
  • Add remaining sauce ingredients.
  • Remove ribs from oven and mix very well with sauce.
  • Return to oven and cook, covered, for about 30 minutes.
  • Remove foil and finish cooking for another 30 minutes.
  • Meat should be very, very tender.
  • Garnish with scallions.

2 tablespoons soy sauce
1 tablespoon white wine vinegar
1 teaspoon sesame oil
1 tablespoon honey
1 teaspoon Chinese five-spice powder
½ teaspoon minced garlic
½ teaspoon ground ginger
2 pounds pork short spareribs

Steps:

  • Combine soy sauce, white wine vinegar, sesame oil, honey, five-spice powder, garlic, and ginger in a large storage bag. Shake to mix well. Add ribs to marinade; refrigerate 4 to 8 hours, turning bag occasionally.
  • Preheat an oven to 325 degrees F (165 degrees C). Remove ribs from marinade and place in a roasting pan; cover tightly with aluminum foil.
  • Cook ribs for one hour, turning occasionally. Increase oven temperature to 400 degrees F. Remove foil from pan and bake an additional 20 minutes, turning once, until ribs are nicely browned.

4 lbs beef short ribs, bone in
2 tablespoons Chinese five spice powder
1 tablespoon fine sea salt
2 teaspoons sugar
2 teaspoons white pepper
1 cup hoisin sauce
1/3 cup chinese rice wine (Shaoxing) or 1/3 cup dry sherry
1/3 cup soy sauce
1/4 cup sugar
1/4 cup ketchup
2 tablespoons unseasoned rice vinegar (to taste)
2 garlic cloves, minced
1 tablespoon peeled minced ginger
2 scallions, white and green parts minced

Steps:

  • Score the meaty side of the ribs with a knife in a diamond pattern.
  • Combine rub ingredients in a bowl. Rub into all sides of ribs. Refrigerate 2-4 hours.
  • Prepare a charcoal grill with an indirect grill setup - put hot coals on outside of grill, leaving a cool center zone, with a drip pan in the center. Place ribs over the drip pan. Place a handful of hardwood chips on each pile of coals. Position the lid with the vent holes centered over the meat, and mostly closed to get about 250°F.
  • In a medium saucepan, combine hoisin sauce, rice wine, soy sauce, rice vinegar, sugar, ketchup, garlic, ginger and scallion. Heat over medium flame; simmer 10 minutes.
  • About 15 minutes before the meat is finished, brush sauce onto meat. Meat is done when bones are exposed by about 1/4", about 1 1/2 to 2 hours.

1/4 cup hoisin sauce
1/4 cup ketchup
1/4 cup honey
1/4 cup sweet chili sauce
2 tablespoons liquid, aminos
1 tablespoon rice vinegar
1 tablespoon fresh squeezed lemon juice
3 large garlic cloves, pressed
2 tablespoons fresh ginger, minced
1/2 tablespoon Chinese five spice powder
2 tablespoons brown sugar
1/8 teaspoon cayenne (to taste)
3 lbs pork side ribs, portion into individual ribs
1 tablespoon sesame seeds, for garnish

Steps:

  • In a large bowl, combine hoisin, honey, ketchup, sweet chili sauce, soy sauce, rice vinegar, lemon juice, ginger, garlic, Chinese 5 Spice, brown sugar and cayenne; whisk. Place ribs in a large re-sealable plastic bag and pour the marinade over; massage until ribs are evenly coated. Transfer to the refrigerator overnight.
  • Grease a 9 x 13-inch baking dish and place ribs in a single layer; cover the dish with aluminum foil. Transfer to the oven and cook ribs on 350ºF for 1 hour or until tender, brushing with the marinade every 15 minutes.
  • Pour marinade in a small saucepan and bring to a boil. Reduce heat to medium-low and keep a gentle simmer.
  • After an hour, transfer ribs on a wire rack sits on a baking sheet. Brush the remaining marinade and transfer back to the oven for 20 minutes. Serve immediately with green beans and sprinkle sesame seeds.

One of three recipes--also try my Memphis Style Pork Ribs or Kansas City Ribs. Nothing fancy, but folks will rave about these melt-in-your-mouth delights. These are sweet, savory, a bit spicy and have a unique eastern flair.

2 tablespoons ground coriander
2 tablespoons chili powder
2 tablespoons brown sugar
1 tablespoon five-spice powder
1 tablespoon ground fennel
1 tablespoon kosher salt
1 teaspoon red pepper flakes
2 pork rib racks, St. Louis cut
1/4 cup soy sauce
2 tablespoons sugar
2 tablespoons rice vinegar
1 tablespoon peeled grated fresh ginger
1 teaspoon dark sesame oil

Steps:

  • Preheat oven to 300°F.
  • Mix rub ingredients together well.
  • Lay the ribs on a rack in a foil-lined pan, and rub all of the spice mix evenly onto both sides of both rib racks.
  • Bake meat-side-up for 2 hours, or until each rack droops on both sides when picked up with tongs in the middle.
  • While ribs are baking, whisk together sauce ingredients and set aside until ready to eat.
  • HINT: Can bake ahead, especially if making for a crowd. To reheat, bake (meat side up) partially covered with foil for 30 minutes at 250°F.
