½ cup shortening
3 cups white sugar
5 eggs, beaten
3 cups all-purpose flour
½ teaspoon baking powder
1 cup milk
1 teaspoon coconut extract
1 teaspoon lemon extract
1 teaspoon rum flavored extract
1 teaspoon butter flavored extract
1 teaspoon vanilla extract
½ cup white sugar
¼ cup water
½ teaspoon coconut extract
½ teaspoon rum flavored extract
½ teaspoon butter flavored extract
½ teaspoon lemon extract
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 10 inch tube pan. In a small bowl, combine flour and baking powder. Set aside. In a measuring cup, combine the milk and 1 teaspoon each coconut, lemon, rum, butter and vanilla extracts; set aside.
  • In a large mixing bowl, cream butter, shortening and 3 cups sugar until light and fluffy. Add eggs, and beat until smooth. Beat in flour mixture alternately with milk mixture, beginning and ending with flour mixture. Spoon mixture into prepared pan.
  • Bake for 1 1/2 to 1 3/4 hours, or until cake tests done. Cool in pan on wire rack for 10 minutes.
  • Turn cake out of pan onto wire rack. Place waxed paper under rack to catch glaze drippings. Slowly spoon Five Flavor Glaze onto top of hot cake. Cool completely.
  • To make the Five Flavor Glaze: In a saucepan, combine 1/2 cup sugar, water and 1/2 teaspoon each coconut, lemon, rum, butter and vanilla extracts. Bring to a boil, stirring until sugar is dissolved.

I just tried this cake for the first time at funeral in Chicago. After the first bite, I went in search of the cook and talked her out of the recipe. All those different extracts may sound strange, but trust me it is wonderful! At the bottom I have included Six Flavor Pound Cake and Seven Flavor Pound Cake variations. Also, you can make a 5 flavor cake with a 6 flavor glaze or any other combination.

3 cups granulated sugar
5 eggs, beaten

1 teaspoon coconut extract

Steps:

  • Preheat oven to 325°F.
  • Grease a 10-inch tube or Bundt cake pan.
  • In small bowl, combine flour, baking powder and salt; set aside.

  • Bake for 1 1/2 hours, or until cake tests done.
  • Let cake cool for 5 minutes and then pour 1/2 of glaze over cake (while still in pan).
  • Let sit for another 5 minutes and then turn cake out of pan onto wire rack (with waxed paper under rack to catch drippings).
  • Slowly spoon remaining glaze onto top of hot cake.
  • Cool completely before serving.
  • To make the Five Flavor Glaze: In saucepan, combine 1/2 cup sugar, water and 1/2 teaspoon of each of the 5 extracts.
  • Bring to a boil, stirring until sugar is dissolved.
  • Variations: Six Flavor Cake/Glaze: Add 1 teaspoon of almond extract to Five Flavor Cake ingredients and 1/2 teaspoon almond extract to Five Flavor Glaze ingredients.
  • Seven Flavor Cake/Glaze: Add 1 teaspoon pineapple flavored extract to Six Flavor Cake and 1/2 teaspoon pineapple flavored extract to Six Flavor Glaze.

1 teaspoon salt
8 tablespoons unsalted butter, cut into pieces at room temperature
2 1/2 cups sugar
6 large eggs at room temperature
1 cup sour cream at room temperature
1 teaspoon vanilla extract
1 teaspoon rum extract
1 teaspoon coconut extract

Steps:

  • Preheat oven to 350°F. Spray a 10-cup Bundt or tube pan with nonstick baking spray. Sift the flour into a large bowl, then measure 3 cups sifted flour back into the sifter. Return any remaining flour to your flour container. Add the baking soda and salt to the sifter and sift to clean bowl. In bowl of an electric mixer fitted with the paddle, cream butter and sugar on medium-high speed until pale and fluffy, about 3 minutes. Stop and scrape down the sides and bottom of bowl. With mixer on medium, add the eggs one at a time, completely incorporating each egg before adding the next. Stop and scrape down the bowl. With mixer on low, add the flour in thirds, alternating with the sour cream and beginning and ending with the flour. Continue beating for 2 minutes on medium speed, stopping to scrape the sides and bottom of the bowl occasionally. Add the extracts one at a time, completely incorporating each before adding the next.   • Combine the pie filling, oranges, pineapple, bananas and 1/2 pint of strawberries.
  • Put in a pretty bowl.
  • To Serve:.
  • Slice Pound Cake and place a slice on plate with Julie's Fruit on top.

3 cups cake flour, minus 6 tbsp

1/2 C. shortening
3 C. sugar
5 large eggs
3 1/4 C. sifted cake flour
1/2 each baking powder and salt
1 C. milk
1 t. vanilla
1/2 t. each lemon, rum, and coconut extracts
GLAZE
1/2 C. sugar
1/3 C water
1/2t. almond extract

Steps:

  • Preheat oven to 325 degrees. Prepare 10 C. bundt pan. Cream butter with shortening until fluffy. Gradually add sugar and beat @ medium speed seven minutes until light and fluffy. Add eggs one at a time beating each just until yellow disappears. Sift together flour, baking powder and salt. Add alternately with milk to butter mixture beginning and ending with flour. Mix at low speed after each addition until just blended. Stir in vanilla, lemon, rum and coconut extracts. Pour into prepared pan and bake 1 hour and 30 minutes until cake tests done. Cool in pan 10 minutes; remove from pan spoon glaze over warm cake and cool completely before serving. GLAZE: stir together water and sugar in small saucepan. Bring to boil over medium heat stirring to dissolve sugar. Remove from heat and stir in almond extract, can be used immediately.
