This is a recipe adapted from one at Catalina Offshore Products, purveyors of fresh seafood. I've prepared this with great results. It reminds me of dinners at Alioto's Restaurant in San Francisco at Fisherman's Wharf, where in 1938 Rose Alioto created an Italian seafood stew called Cioppino, now a San Francisco culinary legend. In addition to or in lieu of the ingredients listed, you can add clams, mussels or lobster.

1 cup chopped golden onion
2 tablespoons tomato paste
1 cup chopped fresh Italian parsley
1 teaspoon dried basil
2 -3 garlic cloves, minced
1/2 teaspoon dry oregano
1/3 cup olive oil
1/2 teaspoon salt
28 ounces whole tomatoes (1 can)
pepper (should be spicy)
1 cup dry red wine, good quality
2 lbs combined seafood (a combination of white fish, peeled shrimp,sea scallops and crab claws)

Steps:

  • In a large deep pot, cook onion, parsley and garlic in the olive oil for 3 to 5 minutes.
  • Add tomatoes (mash them into pieces with your hands), wine, tomato paste and seasonings.
  • Cover and simmer for 30 minutes.
  • Add seafood and simmer for another 20 minutes. You can use a little more seafood, especially if you're adding crab claws.
  • Serve in heated bowls with crusty French bread and green salad. Top with fresh shredded parmesan cheese, chopped parsley or cilantro and lemon, if desired.

This is a great chunky stew that is made in the crock-pot. Slightly adapted from a Pillsbury recipe.

2 tablespoons olive oil
1 cup chopped onion
3 cloves garlic, minced
1 cup sliced fresh baby carrots
3 cups sliced quartered plum tomatoes
1/2 cup chopped green bell pepper
1/2 teaspoon fennel seed
1 bay leaf
1 cup dry white wine
1 (8 ounce) bottle clam juice
1 lb cod fish fillet, cut into 1 inch pieces
1/2 lb shelled deveined uncooked medium shrimp
1 teaspoon sugar
1 teaspoon dried basil
salt and pepper
hot sauce
2 tablespoons chopped fresh parsley

Steps:

  • In a 4-quart crock pot, add the oil, onion, and garlic; stir to mix well.
  • Add in the carrots, tomatoes, bell pepper, fennel seed, bay leaf, wine, and clam juice; stir to mix.
  • Cover and cook on LOW for 8-9 hours.
  • 20 minutes before ready to serve, add the cod, shrimp, sugar, basil, salt, pepper, and hot sauce; stir to mix.
  • Cook on HIGH for 15-20 minutes or until fish flakes.
  • Take out bay leaf and add parsley; stir and serve.

I fell in love with broccoli salad a few years ago. My wife was given this recipe by a co-worker. Of course I don't know what recipe book it came from, but the copy states "from the kitchen of Jann Ellsworth store #967 Hudson, FL."

1 lb hormel black label bacon, cooked crisp and crumbed
4 cups broccoli florets
2/3 cup raisins
1/2 cup chopped sweet onion
1/2 cup shelled sunflower seeds
1/2 cup hellman's mayonnaise
1/4 cup sugar
1 tablespoon vinegar

Steps:

  • In large bowl toss together bacon, broccoli, raisins, onion and sunflower seeds. In a small bowl stir together mayonnaise, sugar and vinegar. Add mayonnaise mixture to broccoli mixture, stirring to coat. Cover and chill for 1 to 24 hours.

1/2 lb shrimp, cooked
1/2 cup onion, finely chopped
1/2 cup celery, finely chopped

1 lemon, juiced
4 sourdough rolls

Steps:

  • Combine the crabmeat, shrimp, onion, celery, mayonaise, sour cream and lemon juice. Refrigerate for an hour or so, then serve on split sourdough buns.

8 ounces dried white beans
1 onion
1 sprig savory
8 ounces potatoes
2 cooked beets
4 herring fillets
3 1/3 fluid ounces mayonnaise
1 shallot
1 teaspoon French mustard
1 tablespoon chopped parsley
4 gherkins

Steps:

  • Soak the beans overnight.
  • The next day, put the beans in boiling salted water with the onion (cut in two) and the savory.
  • When they are all cooked but still firm, drain them and remove the onion and savory.
  • Cook the potatoes in boiling salted water, peel and dice them.
  • Dice the beets.
  • Cut the kipper fillets into 1-inch strips and mix them in a salad bowl with the potatoes, beans and beets.
  • Chop the shallot, parsley and gherkins and mix them into the mayonnaise and mustard.
  • Spoon the sauce over the salad and mix carefully.
