COCONUT FISH CURRY



Coconut Fish Curry image

Lightly spicy, this is a wonderful creamy fish curry. Try with whatever white fish you like. Serve with brown rice.

1 ½ teaspoons curry powder
½ teaspoon ground ginger
¼ teaspoon ground turmeric
¼ teaspoon olive oil
3 cloves garlic, minced
1 onion, chopped
4 ¼ ounces coconut milk, divided
4 ¼ ounces water, divided
3 ½ ounces cod, cut into bite-size pieces
1 large tomato, diced

Steps:

  • Combine curry powder, ground ginger, and ground turmeric in a skillet; toast the spices over medium heat until browned, about 5 minutes. Pour olive oil and garlic into the spice mixture and stir to make a paste.
  • Stir onion into the spice mixture; cook and stir until the onion is tender, 5 to 7 minutes. Stir about half the coconut milk and half the water into the onion mixture; simmer together for 5 minutes. Add cod to the mixture; continue cooking until the fish is firm, about 5 minutes. Add tomato, remaining coconut milk, and remaining water to the skillet; cook until the tomato is softened, about 5 minutes.

FISHERMAN'S CURRY



Fisherman's curry image

A light version of a classic Keralan fish curry using tomatoes, instead of coconut cream, and firm white fish like cod

juice 1 lemon
750g boneless, skinless firm white fish , cut into large pieces
1 tbsp vegetable oil
1 cinnamon stick
4 whole cloves
4 green cardamom pods
½ tsp whole black peppercorns
10 fresh curry leaves
2 onions , chopped
3 green chillies , finely chopped
1 tbsp grated ginger
4 garlic cloves , finely chopped
6 tomatoes , chopped or a 400g can chopped tomatoes
1 tsp turmeric
½ tsp chilli powder
2 tsp ground coriander

Steps:

  • Stir the lemon juice and 1 tsp salt into the fish pieces and set aside. Heat the oil in a large pan. Add the whole spices and curry leaves, cook for 3-4 mins, then add the onions. Fry until the onions are soft, then add the chillies, ginger and garlic. Tip in the tomatoes and the remaining spices and cook, uncovered, on a low heat for about 5-8 mins. Stir frequently to prevent the spices sticking and burning.
  • Pour 150ml water into the pan, bring to a simmer, then add the fish. Cover with a lid and cook for 5 mins more. Serve with rice.

2 cups water
1 cup uncooked brown rice
1 tablespoon vegetable oil
1 large onion, chopped
3 cloves garlic, crushed
1 pound cod fillets, cut into chunks
1 ½ tablespoons curry powder
2 teaspoons chili powder
1 teaspoon ground turmeric
1 teaspoon ground cumin
salt and pepper to taste
1 (14 ounce) can coconut milk
1 (16 ounce) package frozen stir-fry vegetables
1 tablespoon cornstarch

Steps:

  • Bring the water and rice to a boil in a pot. Cover, reduce heat to low, and simmer 45 minutes.
  • Heat the oil in a skillet over medium-high heat. Stir in the onion and garlic, and cook 1 minute. Mix in cod, and season with curry powder, chili powder, turmeric, cumin, salt, and pepper. Pour in the coconut milk, and mix in frozen vegetables. Cover, and cook 10 minutes, or until vegetables are tender and cod is easily flaked with a fork.
  • Drain 1/2 cup liquid from the skillet into a bowl, and mix with cornstarch. Stir back into skillet to thicken sauce. Serve over the cooked rice.

Cook this flavour-packed coconut fish curry in just 30 minutes for a speedy meal. For a dose of sour use lime juice or tamarind paste if you have it to hand

250g frozen sustainable white fish, cut into bite-sized pieces
1 lime, juiced
1 tsp ground turmeric
3 tbsp vegetable oil or ghee
1 large onion, finely chopped
1 tbsp grated ginger
3 garlic cloves, thinly sliced
2 tsp ground cumin
2 tsp ground coriander
½-1 tsp chilli flakes or powder, or to taste
2 tbsp tomato purée
250g prepared diced butternut squash and sweet potato mix
200ml coconut milk
2 tbsp tamarind paste (optional)
small bunch of coriander, roughly chopped, or use mint
cooked rice, to serve (about 250g uncooked weight)

Steps:

  • Tip the fish into a large bowl with add ½ tsp each of salt and plenty of freshly ground black pepper, half the lime juice and half the turmeric. Stir gently to combine. Set aside.
  • Heat the oil in a frying pan over a medium heat and cook the onion until softened, about 8-10 mins. Add the ginger, garlic, ½ tsp salt, the spices and remaining turmeric, and cook for 2 mins more until fragrant. Stir in the tomato purée and cook for a minute more, stirring. Tip the butternut squash and sweet potato mix into a heatproof bowl with a splash of water, cover and microwave on high for 3 mins until the veg is fork-tender. Tip the mixture into the pan with the onion and spices, and stir to combine.
  • Add the coconut milk, 180ml water, the tamarind paste, if using, and a pinch each of salt and black pepper, and simmer over a medium heat for 10-12 mins until thickened and fragrant.
  • Add the marinated fish to the hot coconut sauce in the pan and cook for 4-6 mins until the fish is opaque and cooked through. Break it into chunky flakes with a wooden spoon as it cooks. Remove the curry from the heat, stir in the remaining lime juice and scatter with the fresh coriander, then serve immediately with rice.

It's almost like a shepherd's pie but with fish and spinach. Great dish for a cold gloomy day. It's Irish comfort food at its best.

1 pound cod fillets, cut into chunks
3 tablespoons butter
2 ½ tablespoons all-purpose flour
1 ½ cups warm milk, or more as needed
1 cup shredded sharp white Cheddar cheese
1 (10 ounce) package frozen chopped spinach, thawed and drained
½ cup minced onion
1 teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste
1 clove garlic, pressed
2 cups mashed potatoes
1 cup shredded yellow Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Arrange cod in a single layer in a large baking dish; set aside.
  • Melt butter in a saucepan over medium-low heat. Whisk in flour, and stir until the mixture becomes paste-like and light golden brown, 2 to 5 minutes.
  • Gradually whisk warm milk into the flour mixture and bring to a simmer over medium heat. Whisk until the sauce is thick and smooth, about 5 minutes.
  • Whisk in white Cheddar cheese, then mix onion, spinach, salt, and black pepper into the sauce.
  • Remove saucepan from heat and stir in garlic. If sauce is too thick, stir in more warm milk, 1 tablespoon at a time.
  • Pour sauce over fish in baking dish.
  • Layer mashed potatoes on top.
  • Bake in the preheated oven for 30 minutes, then sprinkle with yellow Cheddar cheese. Continue baking until fish is easily flaked with a fork, 15 to 20 minutes more.
