2 lbs flounder or 2 lbs sole fillets
1 (10 1/2 ounce) can Campbell's Golden Mushroom soup
2 teaspoons Worcestershire sauce
1/4 teaspoon ground thyme

Steps:

  • Roll fish fillets and place in well buttered casserole.
  • Combine soup, worchestershire and thyme; pour over fish.
  • Bake, uncovered, in preheated hot oven (425 degrees F.) for twenty minutes or until fish flakes when you test it with a fork.
  • Sprinkle with parsley and serve with lemon wedges, if desired.

1 tablespoon butter, melted
1 tablespoon vegetable oil
1 tablespoon Worcestershire sauce
2 tablespoons honey mustard
1 tablespoon brown sugar
1 tablespoon garlic powder
1 pound salmon fillet

Steps:

  • Combine the melted butter, vegetable oil, Worcestershire sauce, honey mustard sauce, brown sugar, and garlic powder in a large bowl. Whisk to combine. Reserve 2 tablespoons marinade for basting. Place the salmon in a shallow dish and pour the remaining marinade over. Cover and chill for 45 minutes.
  • Preheat the oven's broiler and set the oven rack about 5 inches from the heat source.
  • Broil salmon for 12 minutes, brushing occasionally with the reserved marinade. Salmon is done when it is glazed from the marinade and flakes easily with a fork.

1 teaspoon grapeseed oil
1/2 cup finely chopped shallots
1 cup diced canned tomatoes
2 cups cider vinegar
1 teaspoon cardamom
1/2 teaspoon cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground clove
1/2 teaspoon chili powder
2 tablespoons fish sauce (see note)
1 teaspoon freshly ground black pepper
1/4 cup honey

Steps:

  • Heat the oil in a medium sauté pan over medium-high heat. Add the shallots and sauté until softened and caramelized. Add the tomatoes and simmer for 2 to 3 minutes. Remove the pan from the heat and stir in all the remaining ingredients except for honey and let cool.
  • When the sauce is cool, add the honey. Transfer the sauce to a blender and purée until smooth. Pass through a fine-mesh sieve, using the back of a spoon or spatula to press the mixture through. The finished Worcestershire sauce may be kept refrigerated in a clean, covered jar for several weeks.

I almost didn't try this recipe, I just couldn't get my head around fish and worcestershire. So glad I tried it..I found the original recipe on a card at the seafood counter at my grocery store years ago. I've added butter and adjust the amount up or down depending on number of filets being cooked. I adjust Tabasco carefully. !!

4 tilapia fillets
flour
salt and pepper
paprika
1 tablespoon olive oil
1 tablespoon butter
1 tablespoon white wine
1 tablespoon Worcestershire sauce
1/4 teaspoon hot sauce (to taste)

Steps:

  • Lightly flour fish filets.
  • Season with salt, pepper, paprika.
  • Combine olive oil, butter, wine, worcestershire and hot sauce in non-stick skillet, heat on medium-hi.
  • Add tilapia, cook approximately 4 min; turn and cook on 2nd side for additional 4 minute.
  • Remove and place on serving plates; serve with lemon wedges.

2 6-to 8-ounce orange roughy fillets
2 tablespoons (1/4 stick) unsalted butter, melted
1 tablespoon Dijon mustard
1 1/2 teaspoons fresh lemon juice
1 teaspoon Worcestershire sauce
3 tablespoons fresh white breadcrumbs
Chopped fresh parsley
Lemon wedges

Steps:

  • Preheat oven to 450°F. Butter 13 x 9 x 2-inch glass baking dish. Arrange fish fillets in prepared dish. Season with salt and pepper. Blend butter, Dijon mustard, lemon juice and Worcestershire sauce in small bowl. Spread half of butter mixture over each fillet, covering completely. Sprinkle half of breadcrumbs over each.
  • Bake fish until just cooked through, about 7 minutes. Sprinkle parsley over. Garnish with lemon wedges.
