The flaky phyllo crust keeps the halibut moist and delicious. For a nicer presentation, cut halibut in half at an angle before placing on sauce.

2 tablespoons melted butter
4 sheets phyllo dough
2 (5 ounce) halibut fillets
salt and pepper to taste
2 teaspoons chopped fresh dill
3 tablespoons lemon juice
½ cup whipping cream
2 green onions, finely chopped

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Lightly butter 1 sheet of phyllo dough. Lay another sheet directly on top of the first sheet, and lightly butter it. Repeat with remaining 2 sheets of phyllo. Cut sheets in half.
  • Season halibut fillets with salt and pepper. Place a fillet near the bottom edge of one of the halved sheets of phyllo. Sprinkle with dill. Fold in the sides of the phyllo, then roll the fillet. Place on a baking sheet, and lightly brush with butter. Repeat with remaining fillet.
  • Bake in a preheated oven until pastry is puffed and golden brown, about 12 to 15 minutes.
  • Meanwhile, bring lemon juice to a boil in a small saucepan over high heat. Boil until almost evaporated. Reduce heat to medium, and stir in cream. Simmer until the cream thickens somewhat. Stir in green onions, and season with salt and pepper. Serve halibut on a pool of sauce.

I'm always looking for different recipes to use the rewards of family fishing adventures. Found this recipe handwritten in one of my recipe books. Not sure where it came from. The flavours blend well together and the aroma is just delightful when you cut into your parcel

1 (375 g) packet phyllo pastry, thawed
80 g butter, melted
1 lime, zest of, grated
1 sprig fresh dill, extra for garnish
4 (150 g) fish fillets (any fish with firm white flesh)
1/2 red capsicum, cut into thin strips
1/2 yellow pepper, cut similarly
1/2 carrot, peeled and cut into thin strips also
8 snow peas, cut the same way

Steps:

  • Pre-heat oven to 220°C conventional or 200°C fan forced.
  • Combine the butter, lime rind and dill.
  • Brush one sheet of phyllo pastry lightly with the lime butter.
  • Sprinkle pastry randomly with sprigs of dill. Top with another layer of pastry, brush with lime butter and fold phyllo in half horizontally.
  • Brush the fish fillets with lime butter.
  • Combine vegetables and place 1/4 on top of pastry sheet, top with a piece of fish.
  • Fold in the sides of pastry over the fish, then bring the top and bottom edges of pastry over the fish to form a parcel. Place parcel seam-side down onto a paper-lined baking tray. Brush top of pastry parcel with lime butter. Repeat process with remaining fillets and pastry.
  • Bake at 220°C conventional or 200°C fan forced for 15-20 minutes until pastry is golden. Serve with steamed potatoes and salad.

1 tbsp olive oil
8 large basil leaves , finely chopped
1 tsp pine nuts
225g boneless skinless chicken breasts or thighs, chopped
3 sundried tomatoes , finely chopped
125g mozzarella , chopped
4 rectangular sheets (about 170g) filo pastry
20g butter , melted
green vegetables or salad, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6 and put a baking tray in to heat.
  • Grind together the oil, basil and pine nuts in a pestle and mortar to make a rough pesto. If you don't have a pestle and mortar, chop the basil and nuts very finely and mix with the oil. Season.
  • Put the chicken, tomatoes and mozzarella in a bowl and stir in the pesto. Season well.
  • Pile up the filo pastry on a board, then cut in half to make two squares (each with four pastry layers). Set one pile aside and with the other pile, twist each sheet around slightly to make a star outline.
  • Spoon half the mixture on to one of the piles of pastry. Brush a little melted butter around the base, then gather up the outsides and scrunch them together. Brush half the remaining butter over the top. Repeat with the remaining ingredients to make another filo parcel.
  • Transfer the parcels to the preheated baking tray and bake in the oven for about 25 mins until golden. Serve with green vegetables or salad.

250g baby new potato , scrubbed
1 tsp olive oil
2 x 175g/6oz firm white fish fillets, such as haddock or whiting
2 tsp sun-dried tomato paste or tomato purée
finely grated zest of 1 small lemon plus 2 tsp lemon juice
about 10 black or green olives
1 tbsp capers , rinsed
2 sprigs of fresh rosemary or thyme

Steps:

  • Preheat the oven to fan 170C/conventional 190C/gas 5. Boil potatoes in lightly salted water for about 12 minutes or until tender, then drain well.
  • Take 2 large sheets of foil, about 30cm square, and brush the middle area of each sheet with the olive oil. Put a fish fillet on top and spread with the tomato paste. Sprinkle with the lemon zest and juice, add the cooked potatoes, olives and capers and season with ground pepper.
  • Lay a sprig of rosemary or thyme on top then loosely wrap and secure each parcel tightly to completely enclose the ingredients. You can prepare these up to half a day in advance and keep them in the fridge.
  • Put the fish parcels on a baking sheet and bake for 20-25 minutes, or until the fish flakes when tested with a fork. Serve at once, with steamed green beans.
