I think these appetizers are better than full-size fish tacos I've had as an entree. Enjoy the creamy salsa drizzle not only on these bites, but also on other Mexican dishes. -Carmell Childs, Ferron, Utah

1/2 cup salsa verde
4 ounces cream cheese, softened
2 tablespoons lime juice, divided
2 tablespoons minced fresh cilantro
1 teaspoon honey
Dash salt
12 frozen breaded fish sticks
1 tablespoon taco seasoning
36 tortilla chip scoops
1-1/2 cups coleslaw mix
3/4 cup cubed avocado
3/4 cup chopped seeded tomato
Lime wedges and additional minced fresh cilantro

Steps:

  • In a blender, combine the salsa, cream cheese, 1 tablespoon lime juice, cilantro, honey and salt. Cover and process until smooth; set aside., Place fish sticks on a baking sheet. Bake at 425° for 10 minutes. Sprinkle with half of the taco seasoning. Turn fish sticks over; sprinkle with remaining taco seasoning. Bake 7-9 minutes longer or until crisp., Meanwhile, place tortilla chips on a serving platter. In a small bowl, combine the coleslaw mix, avocado, tomato, remaining lime juice and 1/2 cup salsa mixture. Spoon into chips., Cut each fish stick into three pieces. Place a fish stick piece in each chip; top each with about 1/2 teaspoon salsa mixture. Garnish with lime wedges and additional cilantro.

A great recipe found in Jean Pare's Company Cookbook "Fish and Seafood" We used whitefish caught in Lake Superior. Great appy or main course as fish patties. We doubled the recipe and served as an appetizer

Number Of Ingredients 15

1 lb ocean perch fillets or 1 lb other white fish fillet
water, to cover
1 large egg
2 tablespoons mayonnaise
1/2 teaspoon Worcestershire sauce
1 teaspoon sweet pickle relish
1/2 teaspoon parsley flakes
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon onion powder
1/2 cup dry breadcrumbs
1/4 cup milk
2 large eggs
2 tablespoons water
1/3 cup breadcrumbs

Steps:

  • Cover fillets with water in saucepan. Bring to a boil.
  • Simmer covered for 5 minutes until fish flakes when tested with a fork.
  • Drain, cool and flake.
  • Beat 1 egg with fork in bowl. Add next 9 ingredients. Add fish. Mix well.
  • Let stand 10 minutes so crumbs absorb moisture.
  • Shape mixture into 1 inch balls.
  • Beat 2 large eggs and 2 tbsp water together with fork.
  • Dip ball in egg mixture and coat with crumbs.
  • Deep fry in hot 400F fat until browned.
  • Serve with picks and seafood sauce.
  • To make as patties, form into 4 patties and dip in bread crumbs.
  • Brown on both sides in 2 tbsp hard margarine not butter.

FRIED FISH BITES WITH SWEET POTATO FRIES AND SPICY MAYO



Fried Fish Bites with Sweet Potato Fries and Spicy Mayo image

1 1/4 cups mayonnaise
2 tablespoons freshly squeezed lime juice (from 1 medium lime)
8 cilantro sprigs, stems trimmed
2 medium garlic cloves
1 teaspoon dry mustard powder
1/2 teaspoon cayenne pepper
1/2 teaspoon kosher salt
4 cups vegetable oil
2 large sweet potatoes (about 2 pounds)
2 teaspoons white wine vinegar
1 pound sole or haddock fillets
1/2 cup all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon cayenne pepper
1/2 teaspoon freshly ground black pepper
1 cup chilled club soda

Steps:

  • For the mayonnaise: In a blender, combine all ingredients and process until smooth. Taste and adjust seasoning as needed. Store covered in the refrigerator until ready to use.
  • For the fries: Heat oven to 200 degrees F. In a large cast iron skillet, pan, or Dutch oven, heat vegetable oil over medium-high heat to 350 degrees F.
  • Meanwhile, peel sweet potatoes and cut lengthwise into 1/2-inch planks. Cut planks lengthwise into 1/2-inch strips. Place strips in hot water with vinegar while oil finishes heating. Line a plate with paper towels and set aside.
  • When oil is heated, drain fries and thoroughly pat dry with paper towels. Add 1/3 of fries to oil and cook until browned and cooked through, about 4 to 5 minutes. Remove fries to paper towels with a slotted spoon and season immediately with kosher salt. Return oil to 350 degrees F and repeat with remaining fries. Hold in oven until fish is ready.
  • For the fish: Skim oil to clean then return to stove over medium-high and bring to 350 degrees F. Pat fish dry with paper towels then cut into 1/2-inch strips; set aside. In a large bowl whisk together flour, salt, cayenne, and pepper well combined. Add club soda and whisk briefly until a batter is formed (there may be a few lumps left. Place all fish in batter and mix to coat thoroughly. Remove 8 pieces of fish from batter, shake off excess batter, and fry, stirring occasionally, until golden and fish is just cooked through, about 2 to 3 minutes. (To test if fish is cooked, break open 1 piece and make sure meat is white throughout.) Transfer fish with a slotted spoon to paper towels to drain. Return oil to 350 degrees F and repeat with remaining fish. Serve immediately with fries and mayonnaise.

Mini fish bites for mini mouths! Perfect for babies and toddlers who enjoy feeding themselves and a great way of including oily fish in their diet

1 medium baking potato
1 small salmon fillet , about 120g
1 tbsp frozen sweetcorn and peas, defrosted
1 tsp fresh chives , snipped into little strands
25g mild cheddar , grated
½ small egg , beaten
oil , for greasing

Steps:

  • Heat the oven to 200C/ 180 fan/ gas 6. Wrap the potato in foil, place on a baking tray and roast in the oven for 1 hour 15 mins. Wrap the fish in foil, put on the same tray and continue cooking for around 10- 12 mins until opaque and cooked through.
  • Once cooked, halve the potato and scoop out the filling. Flake the fish, removing any bones and discarding the skin.
  • Grease a baking tray with a little oil. Mash the potato, then mix through the flaked fish, veg, chives, cheese and egg. Allow to cool a little, then take golf-ball sized dollops of mixture and form into little croquette shapes. Arrange on a foil-lined tray and chill in the fridge for 30 mins. If freezing, put the tray in the freezer instead. Once frozen, transfer to a freezer bag and take them out when needed. Thoroughly defrost in the fridge before cooking.
  • To cook, heat the oven to 200C/ 180 fan/ gas 6. Arrange as many as you need on a baking tray and cook for around 15 mins or until golden and cooked through. The inside will be very hot so make sure it's sufficiently cooled before serving to your little one.

Number Of Ingredients 9

1 (20 ounce) package gefilte fish, completely defrosted
1 (8 ounce) package feta cheese, crumbled into large pieces
1/3 cup frozen chopped spinach, thawed, squeezed dry, can use fresh
2 teaspoons garlic, minced
1 tablespoon fresh thyme, chopped or 1 1/2 teaspoons dried thyme
2/3 cup breadcrumbs, divided
1/8 teaspoon cracked black pepper
3 teaspoons extra virgin olive oil, divided, can use a garlic infused oil
1 tablespoon butter or 1 tablespoon margarine, divided

Steps:

  • In a large bowl combine gefilte, feta, spinach, garlic, thyme and 1/3 cup breadcrumbs.
  • Spread the remaining breadcrumbs on a cookie sheet.
  • For each bite, use 2 teaspoons of mixture. * You can use a meatballer if you have one to keep them uniform.
  • With wet hands form into balls and roll in breadcrumbs to coat.
  • Heat a large skillet with 1/2 of the butter and oil.
  • In batches, begin to sauté the balls on all sides, until golden brown.
  • With a slotted spoon, transfer to paper towel lined plates.
  • Continue, adding remaining butter and oil as needed until you have finished sautéing all the balls.
  • Serve warm with a squeeze of lemon, place 3 fish bites on a bamboo skewer or serve with a toothpick in each.
