SEAFOOD PIZZA

I adapted this rich treat from a friend's seafood enchilada dish. The thick creamy cheese sauce is an ideal match for the scallops, shrimp and imitation crabmeat. Plus, it's special enough for guests and can be made in a hurry.

Number Of Ingredients 12

1 package (6-1/2 ounces) pizza crust mix
3 tablespoons butter, divided
2 tablespoons all-purpose flour
3/4 cup whole milk
1/4 cup chicken broth
1/4 cup shredded Monterey Jack cheese
1/4 cup shredded Swiss cheese
1/4 pound uncooked bay scallops, chopped
1/4 pound peeled and deveined cooked shrimp, chopped
1/4 pound imitation crabmeat, chopped
2 cups shredded part-skim mozzarella cheese
Paprika, optional

Steps:

  • Prepare pizza dough according to package directions. Press onto a lightly greased 12-in. pizza pan; build up edges slightly. Prick dough thoroughly with a fork. Bake at 400° for 5-6 minutes or until crust is firm and begins to brown., Meanwhile, in a large saucepan, melt 2 tablespoons butter over medium heat. Stir in flour until smooth. Gradually stir in milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in Monterey Jack and Swiss cheeses until melted. Remove from the heat., In a large skillet, melt the remaining butter over medium heat. Add scallops; cook and stir for 3-4 minutes or until firm and opaque. Stir in the shrimp, crab and 3 tablespoons cheese sauce. Remove from the heat., Spread remaining cheese sauce over the crust. Top with the seafood mixture; sprinkle with mozzarella cheese and paprika if desired. Bake for 13-16 minutes or until golden brown. Let stand for 5-10 minutes before cutting.

Good tasting, simple recipe for New England's favorite dish fish and chips. Serve with malt vinegar, lemon, or tartar sauce.

4 large potatoes, peeled and cut into strips
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground black pepper
1 cup milk
1 egg
1 quart vegetable oil for frying
1 ½ pounds cod fillets

Steps:

  • Place potatoes in a medium-size bowl of cold water. In a separate medium-size mixing bowl, mix together flour, baking powder, salt, and pepper. Stir in the milk and egg; stir until the mixture is smooth. Let mixture stand for 20 minutes.
  • Preheat the oil in a large pot or electric skillet to 350 degrees F (175 degrees C).
  • Fry the potatoes in the hot oil until they are tender. Drain them on paper towels.
  • Dredge the fish in the batter, one piece at a time, and place them in the hot oil. Fry until the fish is golden brown. If necessary, increase the heat to maintain the 350 degrees F (175 degrees C) temperature. Drain well on paper towels.
  • Fry the potatoes again for 1 to 2 minutes for added crispness.

2 cups shredded mozzarella cheese
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon garlic powder
⅓ cup mini pepperoni slice
salt, to taste
pepper, to taste
marinara sauce, to serve

Steps:

  • Preheat oven to 350°F (180˚C).
  • In a medium-sized mixing bowl, combine mozzarella cheese, basil, oregano, garlic powder, salt, and pepper.
  • Spoon cheese mixture into a greased mini muffin tin. Top with pepperoni.
  • Bake for 5-8 minutes or until cheese is melted and edges are slightly brown.
  • Cool for 10 minutes.
  • Serve with marinara sauce, if desired.
  • Enjoy!

Another silly idea that worked out great. My daughter, who poo-pooed the idea, ate half the pie. It sounds weird, but think Fillet-o-fish, and give it a shot.

Number Of Ingredients 5

1 pizza crust (I use the ready-made ones from Trader Joe's)
6 ounces fried breaded frozen fish sticks
3 -4 ounces tartar sauce
4 -6 ounces tater tots (any fried potoatoes) or 4 -6 ounces waffle-shaped French fries (any fried potoatoes)
4 -8 ounces shredded cheddar cheese

Steps:

  • Preheat oven to 425.
  • Warm up the fish and potatoes per directions. I used the same skillet that I used to start the crust. I'm sure the microwave or oven would produce the same result. Place them off to the side.
  • Prepare a large skillet (mine doesn't need oil or spray) to start your crust. Turn the stove on to med-high, place your pizza dough into the skillet and spread it out to the sides to form a little edge. I used a flat plate to press it down and shape it. Fry the crust until the bottom is slightly browned, about 5 minutes, and slide it onto a preheated pizza stone or baking sheet. Top with the tartar sauce, then the fish and potatoes, and finally the cheese.
  • Bake 12-15 minutes until golden brown.

BAKED FISH AND CHIPS

3 medium russet potatoes (1 1/4 pounds)
1/4 cup extra-virgin olive oil
Pinch of cayenne pepper
Kosher salt
Olive oil cooking spray
2 3/4 cups crispy rice cereal
Kosher salt and freshly ground black pepper
3 large egg whites
1 1/2 pounds skinless, boneless Pollock (or other firm white fish), cut into 2-by-4-inch pieces
Tartar sauce and/or malt vinegar, for serving (optional)

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 450 degrees F using the convection setting, if available. Place a baking sheet on one of the racks to preheat.
  • Prepare the chips: Cut the potatoes into 1/4-inch-thick sticks. Toss with the olive oil and cayenne in a bowl. Carefully remove the hot baking sheet from the oven, add the potatoes and spread in an even layer. Use a rubber spatula to scrape any oil from the bowl over the potatoes. Bake on the top oven rack, turning once, until browned and crisp, 25 to 30 minutes. Season with salt.
  • Meanwhile, make the fish: Set a wire rack on a baking sheet and coat with cooking spray. Lightly crush the cereal in a bowl with your fingers. Add 2 teaspoons salt, and black pepper to taste. In another bowl, whisk the egg whites and a pinch of salt until frothy.
  • Dip the fish in the egg whites, then roll in the cereal crumbs to coat. Place the fish pieces on the rack (position them on their sides so that the majority of the crust is exposed) and mist with cooking spray.
  • Bake the fish on the bottom oven rack until crisp and just cooked through, about 12 minutes. Season with salt and black pepper. Serve the fish and chips with tartar sauce and/or malt vinegar, if desired.

FISH AND POTATOES:
1-1/2 pounds baking potatoes (about 3 medium)
2 teaspoons olive oil
3/4 teaspoon kosher salt, divided
1/2 teaspoon coarsely ground pepper, divided
1/2 cup panko bread crumbs
1/4 cup seasoned bread crumbs
4 cod fillets (4 ounces each)
2 tablespoons mayonnaise
2 tablespoons grated Parmesan cheese
2 teaspoons chopped fresh parsley
Malt vinegar, optional

Steps:

  • For tartar sauce, in a small bowl, mix mayonnaise, relish and lemon zest. Refrigerate until serving., Preheat oven to 400°. Cut potatoes lengthwise into 1-in.-thick wedges; toss with oil, 1/2 teaspoon salt and 1/4 teaspoon pepper. Spread evenly in a greased 15x10x1-in. baking pan. Roast until golden brown, stirring occasionally, 40-45 minutes. , Meanwhile, in a small skillet, toast panko bread crumbs over medium-low heat until lightly browned, stirring occasionally, 5-7 minutes. Transfer to a shallow bowl; stir in seasoned bread crumbs., Sprinkle cod with the remaining salt and pepper; spread top and sides of fish with mayonnaise. Dip in crumb mixture to cover mayonnaise, pressing firmly to help adhere. Place in a greased 15x10x1-in. baking pan, crumb side up. Sprinkle with any remaining crumb mixture. Bake until fish just begins to flake easily with a fork, 12-15 minutes., Toss potatoes with cheese and parsley. Serve fish and potatoes with tartar sauce and, if desired, vinegar.

I had some leftover fish that I had made for fish tacos and didn't feel like tacos again. So after throwing it on some pizza dough, this is what I came up with. My husband just gave me funny looks until he tried it. It turned out really yummy. You could probably use any other cooked and well seasoned meat instead of the fish.

1 lb haddock (or tillapia)
1/4 cup lemon juice
1 tablespoon cajun seasoning
2 teaspoons Old Bay Seasoning
2 tablespoons olive oil
salt
1 lb pizza dough
1/2 cup medium salsa (can adjust for preference)
1 1/2 cups shredded Mexican blend cheese
sour cream
guacamole
chopped onion
scallion
crushed tortilla chips

Steps:

  • Heat olive oil in a nonstick pan.
  • Add fish and top with lemon juice, cajun and old bay seasoning, and salt. Cook until both sides are well cooked.
  • Break up fish into bite size chunks.
  • Preheat oven to 400 degrees.
  • Stretch out pizza dough on a cookie sheet that has no long sides and has been lined with non stick foil.
  • Top dough with salsa, cheese, and fish.
  • Cook for 10 minute and then slide pizza onto the oven rack and cook for another 5 minute.
  • Remove from oven and top with desired toppings.
