FIREMAN BOBS UNIQUE " DUTCH OVEN " PORK TENDERLOIN

Fireman Bobs Unique

Okay... Today is Tuesday... On Saturday this week, I am Catering a Dutch Oven Cook out for 25 people... This is the recipe I will be using ( just came up with it today ) When it is Family and Security Tested, I will post some reviews... :) Update a day later.... All except for " timing " Issues, see changes in time. All went very well yesterday and the " Raves " were ( humbly ) fantastic. The " Flavor"s were spot on!

Number Of Ingredients 11

5 to 6 pound(s) pork tenderloin
1 - bottle martinelli's sparkling apple cider
1 1/2 box(es) mrs. cubbins herbed stuffing mix
2 medium green granny smith apples - chopped small dice
1 medium red apple - chopped small dice
1 medium yellow onion chopped - small dice
3/4 cup(s) apple sauce - your choice
3 stalk(s) celery chopped - small dice
4 clove(s) garlic chopped - small dice
- lawreys garlic blend
1/4 teaspoon(s) pepper and salt

Steps:

  • Prepare the Stuffing by placing in large pan and using the Sparkling Apple Cider for the " water " measurements... Add the apples, onion, celery, apple sauce, garlic, pepper to the pan Mix all together till incorporated.
  • Sprinkle the Lawreys Garlic Blend on all sides of the Tenderloin Place the stuffing mixture in large Dutch Oven, place Tenderloin in the stuffing mix making sure the roast is pushed down and the stuffing is covering the roast Let sit over night in the fridge. When ready to cook, place Tenderloin in it's own Dutch Oven and cook.
  • Time to Cook... Using charcoal, cook the " meal " at 200 to 225 degrees for 6 to 8 hours. When done, Shred the Tenderloin and have yourself a wonderful Sparkling Apple Cider Pulled Pork Sandwich with a side of stuffing ! Side Note: Pork is done enough to eat at 4 to 5 hours. but needs the extra time to get to the " pulled " stage... I received nothing but " Praise " and the pork was moist and tender and they all loved it... Just tweaked the recipe more on the time factor then anything else... Enjoy !

Time 4h30m

Yield 1 slab ribs

Number Of Ingredients 23

2 slabs ribs
2 cups apple juice
1/2 cup dark brown sugar
1/4 cup garlic salt
3 1/2 tablespoons onion salt
1/4 cup paprika
1 tablespoon chili powder
1/2 tablespoon cayenne pepper
1/2 teaspoon ground cumin
1/2 teaspoon black pepper
2 cups ketchup
2/3 cup dark brown sugar
1/2 cup distilled vinegar
1/2 cup water
2 tablespoons honey
4 teaspoons Worcestershire sauce
4 teaspoons liquid smoke
2 teaspoons garlic powder
2 teaspoons onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
1/8 teaspoon celery seed

Steps:

  • To prepare the rub: Combine all rub ingredients in a bowl and stir to mix.
  • Preheat a grill or the oven to 250 degrees F.
  • Place slab of ribs bone side up on table. Slide a knife under the membrane and against the end bone to separate the two. With a dry paper towel or rag, grasp the edge of the thin membrane and pull. The entire membrane should separate from rib. Note: This will result in a more tender rib and will allow your barbecue flavors to better penetrate the meat.
  • Sprinkle 1/4 cup of rub over each slab, front and back. Place ribs, meat side up, on the grill or in the oven for 2 hours. Remove and place each slab on a doubled aluminum foil square, meat side down. Pour 1 cup apple juice over each slab while wrapping tightly in foil. Cook for 1 more hour at 250 degrees F. Remove slabs from foil and sprinkle with another 1/4 cup of rub. Cook an additional 1 hour, uncovered, until ribs are tender.
  • In the meantime, mix together the barbecue sauce ingredients in a saucepan. Stir to mix and bring to a simmer and cook 10-15 minutes. Let sauce cool.
  • To finish: Remove ribs from the grill or oven, paint with finishing glaze and cook for another 15 minutes. Cut and serve with additonal sauce.

PORK RIB RUB

Pork Rib Rub image

A delicious rub for baby back pork ribs! Makes enough rub for 6 racks of ribs. Ground rosemary is almost impossible to find in stores. I grind up dried rosemary leaves in a molcajete, with a mortar and pestle, or a clean coffee grinder. Trust me, it's worth the few extra minutes it takes!

Time 6h

Yield 12

Number Of Ingredients 9

¾ cup white sugar
¾ cup brown sugar
¼ cup seasoned salt
2 tablespoons paprika
2 tablespoons ground black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon cayenne pepper
4 racks pork spareribs

Steps:

  • Combine white sugar, brown sugar, salt, paprika, black pepper, garlic powder, onion powder, and cayenne pepper in a container with a lid; shake until rub is evenly combined.
  • Generously rub both sides of each rib rack with rub.
  • Preheat grill for medium heat and lightly oil the grate.
  • Place 1 rack of ribs, meaty-side down, in the center of main grill rack; cook for 5 minutes; transfer to the far side of top grill rack, meaty-side up. Repeat process with remaining rib racks.
  • Angle the rib racks on the top grill shelf so the meaty sides are facing out and they are stacked one in front of the other at an angle. Turn off heat directly below the ribs and turn other burner on low; close the grill lid and cook for 30 minutes.
  • Flip ribs so the closest side to the flame is the furthest side and the meaty side is still facing forward and the rack that was in the front is now in the back. Continue to cook, flipping every 30 minutes, until outsides are crispy and meat is tender, about 5 hours. Slice into small chunks.

SIMPLE PORK RIB DRY RUB

Simple Pork Rib Dry Rub image

I have used this simple rub to make ribs on the barbi in both Memphis, where I learned, and England, where I now live. The dry rub will stop the ribs from burning on the outside, as happens with some wet sauces. This rub is hot and sweet, which makes it perfect for ribs. The proportions of ingredients can be adjusted to taste. On two continents, I've received nothing but compliments for this recipe. I use this for approximately 2 kilograms ribs.
