These delightful grilled shrimp from Mary Tallman of Arbor Vitae, Wisconsin are coated in a sweet and spicy glaze. The marinade comes together in moments for sizzling shrimp skewers.

1/2 cup apricot preserves
1 teaspoon canola oil
1 teaspoon soy sauce
1/2 teaspoon crushed red pepper flakes
1 pound uncooked large shrimp, peeled and deveined

Steps:

  • In a small bowl, combine the apricot preserves, oil, soy sauce and pepper flakes. Thread shrimp onto metal or soaked wooden skewers., Grill, uncovered, over medium heat or broil 4 in. from the heat for 2-3 minutes on each side or until shrimp turn pink, basting frequently with apricot mixture.

Firecracker Sauce:
1/4 c. fresh lime juice
1/4 c. maple syrup
2 tbsp. ketchup
2 tbsp. olive oil
2 tbsp. soy sauce
4 clove garlic
1 tsp. crushed red-pepper flakes
1/2 tsp. ground black pepper
1/2 tsp. grated lime rind
1/2 tsp. salt
Small hot peppers (optional)
Kabobs:
1 1/4 lb. boneless beef top loin or sirloin steak
3 medium onions
2 medium yellow squash
2 medium zucchini
1 large red pepper
12 8-inch wooden skewers
Sprig of thyme (optional)
Small hot peppers (optional)

Steps:

  • Prepare Firecracker Sauce: In medium bowl, whisk together lime juice, maple syrup, ketchup, olive oil, soy sauce, garlic, crushed red-pepper flakes, black pepper, lime rind, and salt. Makes about 1 cup. Set aside.
  • Prepare Kabobs: On one skewer, randomly arrange 2 pieces of cubed steak and one piece each of onion, yellow squash, zucchini, and red pepper. Repeat to make 11 more kabobs. Place kabobs in large baking dish.
  • Pour 3/4 cup of Firecracker Sauce over kabobs in baking dish. Reserve 1/4 cup for brushing the kabobs as they cook. Let kabobs stand for 15 minutes.
  • Heat grill to medium heat. Grill kabobs about 4 inches above heat source for 5 minutes, turning frequently. Brush kabobs with reserved Firecracker Sauce. Cook 5 to 7 minutes longer or until desired doneness is reached.

Firecracker Chicken Skewers with Cooling Lime Cream Sauce image

Hot Sauce, brown sugar, and an assortment of herbs and spices come together to create match made in heaven. These chicken skewers are a little spicy and a little sweet, but the lime cream sauce will surely cool down any overheated mouths.

3 lbs boneless skinless chicken breasts, cut into strips (or use pre-cut chicken tenders)
2 cups Hot Sauce
2 cups brown sugar
2 tbsp white vinegar
4 oz butter (or dairy-free butter)
1/4 cup black pepper
1/4 cup minced garlic
1/2 cup Italian seasoning
1/4 cup chili powder
1/4 cup paprika
1/4 cup dried rosemary
2 tbsp red pepper flakes (or to your level of heat)
1 lime, juiced
1 cup sour cream

Steps:

  • Combine marinade ingredients in a large microwave-safe dish and heat for one minute or until everything is melted. Stir well to combine. Pour half in a zip top bag with chicken breasts and let sit in fridge while the seasoning is prepared. Store remaining sauce in the refrigerator until ready to use.
  • Combine seasonings in a large bowl and stir well to combine. Add half of the seasoning mixture to chicken bag and toss to coat. Chicken should be generously coated. Add more seasoning if needed. Store remainder in an airtight container for next time (we usually end up using most of ours). Some coating will fall off during cooking, so add more than you think you will need.
  • Let chicken marinate for at least 30 minutes or up to several hours before cooking.
  • Preheat grill to medium high heat and soak skewers in water. Thread one piece of chicken on each skewer and place on grill. Cook over medium high heat for about 4 minutes and then flip. Baste with remaining sauce and cook an additional 4 minutes. Flip one last time and baste. Cook for about 30 seconds just to cook the sauce on each side.
  • Combine lime juice and sour cream in a small dish. Refrigerate until ready to serve.
