POTATO-CRUSTED FLOUNDER STUFFED WITH FIRE-ROASTED RED PEPPERS AND CHORIZO TOPPED WITH ROASTED TOMATO SAUCE

Potato-Crusted Flounder Stuffed with Fire-Roasted Red Peppers and Chorizo Topped with Roasted Tomato Sauce image

Provided by Food Network

Categories     main-dish

Time 2h5m

Yield 4 to 6 servings

Number Of Ingredients 22

3 large vine-ripened tomatoes
3 tablespoons olive oil
3 tablespoons balsamic vinegar
1 teaspoon butter
Salt and pepper
1 teaspoon olive oil
1 pound chorizo, diced small
1 large yellow onion, diced small
2 cloves garlic, chopped
1 tablespoon fresh oregano leaves, stemmed and chopped
1 bay leaf
3 ripe red bell peppers, charred over an open flame, chilled, peeled and diced
2 tablespoons sherry
1 1/2 to 2 cups bread crumbs
Salt and pepper
2 large russet potatoes
Salt and pepper
3 tablespoons cornstarch
2 fresh flounder fillets per person, about 4 to 5 ounces per person
Salt and pepper
2 tablespoons butter
Serving suggestion: sauteed spinach

Steps:

  • To make the tomato sauce: Preheat oven to 475 degrees F.
  • Cut the tomatoes into wedges and put in a small bowl. Add the oil and balsamic vinegar, and then season with the salt and pepper.
  • Place the tomatoes on a rack, and then place the rack on a sheet pan. Roast for 30 to 45 minutes until the edges brown well and the tomatoes become very soft.
  • Put the tomatoes and all juices in a sieve and drain over a small pot. This should remove the skin and seeds and leave you with a thin tomato sauce. Bring the sauce to a simmer and reduce until the sauce is a medium thickness, about 5 minutes. Stir in the butter. Add the salt and pepper, to taste, and keep warm.
  • To make the stuffing: In a large saute pan, add the olive oil, then chorizo, and let it cook for about 2 minutes. Add the onion and garlic, and saute on medium heat until the onions are soft, about 2 or 3 minutes. Add the oregano and bay leaf and cook another 2 minutes, until you can smell the herbs cooking. Add the diced bell peppers and sherry and let simmer 1 minute. Turn off heat. Fold in the bread crumbs until all liquid has been absorbed. Season with salt and pepper, to taste, and set aside.
  • To make the potato crust: Using an Asian turning mandoline or a vegetable peeler, peel long thin strings of potato. Put the potato strings in a small bowl. Season with salt and pepper and add the cornstarch. Mix with a spoon until well blended and set aside.
  • To stuff and crust the fish: Preheat oven to 375 degrees F.
  • Lay out the fillets flat on a work surface and season with salt and pepper. Place a golf-ball sized piece of stuffing in the center of 1 fillet. Lay another fillet over the stuffing and press softly to distribute the stuffing. Take a small handful of the stringed potato mixture and lay it over the top fillet, leaving only 1/4-inch uncovered around the edges. Press down lightly. Repeat process with remaining fillets.
  • Heat a large nonstick, oven-proof saute pan and melt the butter. Place the flounder in the pan, potato-side down, and fry until golden brown, about 5 minutes. Carefully flip over stuffed flounder and place pan in oven for 9 to 12 minutes, or until fish is cooked through.
  • Remove the fish from the oven. Ladle 2 ounces of tomato sauce onto the plate. Lay the stuffed flounder over the sauce and serve with a vegetable, such as sauteed spinach.

Number Of Ingredients 25

1 cup masa harina
1 cup all-purpose flour
1/2 teaspoon Emeril's Southwest Seasoning, recipe follows
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup lard
1/2 cup ice water
2 cups cooked, shredded duck meat
2 teaspoons Emeril's Southwest Seasoning, recipe follows
1 tablespoon olive oil
1/2 cup fresh sweet corn kernels
1/4 cup seeded and chopped poblano peppers
1/2 teaspoon kosher salt
1/2 teaspoon crushed red pepper flakes
4 turns freshly ground black pepper
3 tablespoons minced shallots
1 tablespoon minced garlic
2 cups beef stock
2 teaspoons cornstarch
1 large egg, beaten with 2 tablespoons water
1/2 cup sour cream
1 tablespoon fresh lemon juice
2 tablespoons chopped cilantro leaves
Kosher salt and freshly ground black pepper
Fresh cilantro sprigs, for garnish

Steps:

  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  • In a mixing bowl combine the masa harina, flour, Southwest Seasoning, salt, and pepper; mix thoroughly. Cut the lard into the flour until the mixture resembles coarse meal. Stir in the water a little at a time, stirring gently. Knead the dough several times on a lightly floured surface, touching the dough as little as possible. Form the dough into a log about 12 inches long by 3 inches across and refrigerate for about 20 minutes.
  • In a skillet, heat the olive oil. Season the duck meat with 1 teaspoon of the Southwest Seasoning. When the pan is smoking hot, add the duck and stir-fry for 1 1/2 minutes. Stir in the corn, peppers, salt, red pepper flakes, black pepper and the remaining 1 teaspoon of Essence. Cook, stirring, for 1 minute. Add the shallots and garlic and continue cooking for 1 minute. Stir in 1 1/2 cups of the stock and bring to a boil.
  • Combine the remaining 1/2 cup stock with the cornstarch and whisk into the filling mixture. Cook for 5 minutes over high heat. Remove from the heat and strain off the gravy. Return the gravy to a small saucepan and bring up to a gentle boil and let reduce for 5 minutes. Allow meat mixture to cool slightly.
  • Divide the dough into 8 equal sections. Carefully roll each piece out between sheets of plastic wrap into a 5-inch circle. The dough must be handled with care to keep it from cracking. Brush the dough rounds with some of the egg wash. Mound the filling in the middle of each round of dough, fold over to form a half-moon pie shape, and crimp the edges with a fork. Brush the tops of the empanadas with more egg wash; place them on the prepared baking sheet. Bake for 25 to 30 minutes or until golden brown.
  • In a small mixing bowl, combine the sour cream, lemon juice and fresh chopped cilantro together. Mix thoroughly. Season with salt and pepper.
  • To serve, spoon the gravy on the bottom of each plate. Place an empanada in the center of the plate. Dab the cilantro cream on top. Garnish with fresh cilantro and additional Essence, if desired.

Categories     Chicken     Dinner     Appetizer

Number Of Ingredients 18

1 tablespoon crushed red pepper
2 teaspoons black pepper
2 teaspoons cayenne
1 teaspoon lemon pepper
12 chicken wings
3 eggs
2 tablespoons hot sauce
1 tablespoon crushed red pepper
1 teaspoon black pepper
1 teaspoon cayenne
2 cups flour
1 1/2 cups paprika
3/4 cup sugar
3 3/4 tablespoons onion powder
1 cup mayonnaise
2 scallions, chopped
2 tablespoons horseradish
1/4 teaspoon cayenne

Steps:

  • In a small bowl, whisk together the red-pepper flakes, black pepper, cayenne, poultry seasoning, and lemon pepper. Reserve 2 tablespoons of this mixture in a separate bowl.
  • Rinse the chicken wings in cold water, and then place them in a shallow baking dish and pat them dry with paper towels. Sprinkle the wings evenly with the Spicy Chicken Seasoning, cover the dish with plastic wrap, and chill for 1 hour
  • Whisk the eggs, hot sauce, red-pepper flakes, black pepper, and cayenne together in a medium mixing bowl. Place the flour in a shallow pie plate.
  • Heat the oil in a deep fryer or a Dutch oven (1½ inches deep) over medium-high heat until it reaches 350°F on a deep-fat thermometer.
  • Dip the chicken wings in the egg mixture, shaking off the excess, then in the flour. This process will be neater if you can keep one hand dry. Place half the wings in the hot oil and fry for 8 to 10 minutes, turning occasionally, until they are cooked through and golden brown. Use tongs to transfer the wings to a paper towel-lined tray. Allow the oil to return to cooking temperature before adding the next batch. For extra hot results, sprinkle the cooked wings with the reserved seasoning. Serve with Horseradish Dipping Sauce.
  • For the Horseradish Dipping Sauce: Mix all the ingredients together in a small bowl, and refrigerate until needed

Yield 4 people

Number Of Ingredients 9

1 14oz can Fire Roasted Tomatoes, diced
1/2 pound medium shrimp, cleaned
2 cloves garlic diced
3/4 small onion chopped
3 TBS Extra Virgin Olive Oil
2 oz Pancetta, chopped
1/4 tsp Cracked Black Pepper
Fettuccine for two (about 1" round.
Parmesan or Asiago cheese - grated.

Steps:

  • Fill large pot with water (about 2" from top) and 2 pinches of sea salt. Bring to boil. While waiting for water to boil: Heat oil in 9"saute' pan, add pancetta and cook till pieces separate and are a little crispy. Add onions and garlic and cook till translucent. Add tomatoes and pepper. Simmer sauce, stirring occasionally. By now the water is boiling, add the pasta and cook for APPROXIMATELY 4 minutes. After 4 minutes: Add shrimp to tomato sauce and turn off heat on shrimp. Don't worry there is enough heat to cook them to perfection. By the time the pasta's done the shrimp will be also. Continue cooking pasta for another 4 + minutes. Pull out a noodle and taste it. It should not crunch, it shouldn't be mushy. If need cook for another 2 minutes and test again. Drain pasta, and put in pasta bowl. Add 1/2 the tomato/shrimp sauce and stir in. Serve up and top servings with rest of sauce and grate some cheese over the top. Serve immediately
