FIG AND ONION SPREAD
This is delicious spread on crackers or a sliced baguette with a smear of blue cheese. It can also be used as a topping for a wheel of warm brie. It's important to use a good quality aged balsamic vinegar in this recipe.

Steps:
- Heat olive oil in a saucepan over medium heat; stir onion in the hot oil. Reduce heat to medium-low, cover saucepan, and cook, stirring occasionally, until onion is softened and caramel-colored, 20 to 25 minutes.
- Stir figs into onion; cook and stir until figs begin to lose their shape and have softened into onion, 10 to 15 minutes. Pour balsamic vinegar into fig-onion mixture; cook until all the liquid has evaporated, 5 to 10 minutes. Stir sugar, 1 tablespoon at a time, into fig-onion mixture until desired sweetness is reached. Serve warm or chilled.

VERY YUMMY FIG JAM AND CREAM CHEESE SPREAD OR SALAD DRESSING
My friend Patty's DH gave us a pint of his world-famous Fig Jam. Here is a fast and easy great way to enjoy fig jam when you are tired of English muffins. If you want a spiffy salad the ingredients turn into a fantabulous dressing! Cooking time is chill time.

FIG SPREAD
The amber-colored Calimyrna, from California, is most common fig grown in the United States. This is the kind we've used in our recipe. Black Mission figs, which are a little less sweet, are also widely available.

CROSTINI WITH FIG SPREAD & BUBBLED BRIE
I found this recipe in a local town newspaper. After having an amazing appetizer with brie at a restaurant last weekend. We thought we'd give this a shot at home. It came out amazing. the sweetness of the figs and wine coupled with the creamy brie and crusty bread was to die for!

- Combine figs, wine, honey and lemon slices in medium suacepan.
- Bring to boil, then reduce heat and cook, covered over low heat for about 30 minutes.
- Let cool, remove lemon slices, then puree in blender.
- Brush baguette slices with olive oil, and place oil side down on large baking sheet.
- Spread about 1/2 tbsp fig spread on each baguette, top with brie slices, and sprinkle with fresh thyme.
- Bake at 450 degrees for 10-12 minutes or until cheese is melted and bubbly.

ANDI'S MOM'S PARTY BRIE WITH FIG SPREAD (EASY)

- Directions Adriatic Fig Spread with the orange paper on the lid is what you really want for this recipe. It's less chunky/ molre runny than preserves and has a different taste. You can find it at Whole Foods and HEB Grocery stores. Any sized wedge of brie will do. Unwrap and set on a plate. Using a sharp knife i like to remove the top 'rind' because i don't prefer the taste. Top with a few tablespoons of adriatic fig spread. Serve with minitoasts or crackers. Alternatively I couldn't find the ingredients on the list, but if you can find the pre-made tiny phyllo horsdoeuvres shells in the freezer section. Fill each with a tiny bit of brie (maybe 1/2 teaspoon) and a little dollop of Adriatic Fig Spread. Put in a warm oven (like 350) until the cheese has just melted but hasn't become bubbly. It is VERY tasty. Great for a party. We had an intimate Garden Party "picnic" Wedding in our yard & each of our friends & family brought their favorite dish to celebrate the day. Our friend Kim's husband Dan made this incredible cheese spread. I don't know where he found this recipe, but it is a serious keeper for all our special occasions going forward. Every time we taste this recipe, it is a wonderful memory of our very special wedding day.

- Put the figs in a saucepan with red wine and thyme. Simmer 15 minutes, drain, and discard thyme and wine. Let figs cool while preparing cheese.
- Mix cream cheese and butter with electric mixer, until well blended, 1 minute. Add gorgonzola, brandy, and salt. Beat one more minute. Do not over-beat or the cheese will not set properly.
- Spray a bread pan with cooking spray. Line inside of pan with plastic wrap. Spoon half of the cheese mixture into the pan, spread it flat and make sure it gets into the corners. Sprinkle with figs, pecans, and parsley. Cover with remaining cheese. Bang the pan on the counter a few times to settle everything into place. Cover the top with plastic wrap and refrigerate overnight.
- When ready to serve, remove from pan and place on a platter being sure to remove plastic wrap. Decorate with additional Figs, Thyme, Pecans, and/or Parsley.
- Serve with your favorite crackers (we like the Whole Wheat Ritz Crackers).
