FIESTA BEAN AND CHEESE DIP

Number Of Ingredients 6

1 pkg 8 ounce cream cheese (softened at room temperature)
half c ketchup
1 pkg taco seasoning mix
1 can(s) brown sugar pork and beans
1 pkg 8 ounces shredded colbeyand monterey jack cheese, divided
1 can(s) 4.5 ounce can chopped green chiles, drained

Steps:

  • 1. Preheat oven to 425F
  • 2. In a large bowl, mix together Cream Cheese, Ketchup and Taco Seasoning mix until smooth. Stir in Beans, 1 and 1/2 cups of cheese blend and Chiles. Pour into a greased 1 and 1/2 quart baking dish. Spead remaining 1/2 cup of cheese blend evenly on top.
  • 3. Bake uncovered 15 to 20 minutes, or until cheese is melted and lightly browned. Serve warm.
  • 4. Beware causes an extreme lighthearted atmosphere!! :)

2 cups sour cream
1 can (16 ounces) refried beans
1 can (4 ounces) chopped green chilies or jalapenos
1 envelope fiesta ranch dip mix
2 cups shredded Mexican cheese blend, divided
Sliced ripe olives, chopped, tomatoes, sliced green onions and shredded lettuce, optional
Tortilla chips

Steps:

  • In a shallow 1-1/2-qt. microwave-safe dish, combine the sour cream, beans, chilies and dip mix. Stir in 1 cup cheese. Cover and microwave on high for 2 minutes; stir. , Cover and microwave 1-1/2 minutes longer or until heated through; stir until blended. Sprinkle with remaining cheese. Top with the olives, tomatoes, onions and lettuce if desired. Serve with tortilla chips.

2 cups shredded Monterey Jack cheese
2 cups shredded cheddar cheese
1 can (16 ounces) refried beans
1 cup sour cream
1 package (8 ounces) cream cheese, softened
2 tablespoons taco seasoning
Tortilla chips

Steps:

  • In a bowl, combine cheeses; set aside 2 cups for topping. Add beans, sour cream, cream cheese and taco seasoning to the remaining cheese. Transfer to a greased 2-qt. baking dish; sprinkle with reserved cheese. Bake, uncovered, at 350° for 20-30 minutes or until bubbly around the edges. Serve warm with tortilla chips.

This loaded queso dip is incredibly easy to put together and serves a crowd. It is always a big hit at our parties, and is very easy on the host. What I like about it is how chunky and substantial it is. Tends to be addictive too.

1 (16 ounce) can refried beans
1 lb Velveeta cheese, cut into cubes
2 (15 ounce) cans black beans, drained and rinsed
2 (10 ounce) cans ro-tel tomatoes and green chilies, drained (save some of the juice)
1/2 cup chopped green onion
1 (8 ounce) can sliced black olives, drained

Steps:

  • This can all be heated up in a saucepan, but I like to do it in the microwave, in a large glass bowl.
  • Microwave refried beans, Velveeta and Ro-Tel together until the cheese is melted and ingredients are well mixed. Add black beans and zap until good and hot. Last, add the green onions and olives. If dip is too thick, thin with a little of the Ro-Tel juice. If necessary, heat to desired temperature.
  • Serve warm (a crock-pot is good) with tortilla chips. If you wanted a party presentation, some grated cheese, chopped tomato and or green onion sprinkled on top would be pretty.

8 slices bacon
1 can (16 oz) Old El Paso™ refried beans
1 can (4.5 oz) Old El Paso™ chopped green chiles, drained
1 cup frozen corn, thawed, drained
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 jar (16 oz) Old El Paso™ Thick 'n Chunky salsa
1 1/2 cups shredded Mexican cheese blend (6 oz)
Sour cream, if desired
Tortilla chips

Steps:

  • Cook bacon until crisp; drain on paper towels. Set 2 slices of bacon aside; crumble remaining 6 slices.
  • Spray 8-inch square (2-quart) microwavable dish with cooking spray. In medium bowl, mix refried beans, green chiles and crumbled bacon. Spread mixture evenly in dish. Sprinkle frozen corn and black beans evenly over refried bean mixture. Pour salsa over top. Sprinkle cheese over salsa. Crumble remaining 2 slices of bacon; sprinkle over cheese.
  • Microwave uncovered on High 10 to 15 minutes or until cheese is bubbly and mixture is thoroughly heated. Garnish with spoonfuls of sour cream. Serve warm dip with tortilla chips.
