FETA AND BACON PASTA SAUCE
Rich, delicious, filling and very easy to make. Bacon and leeks are the stars in this creamy white sauce. Serve over your favorite pasta. Linguine and spaghetti are both great with this.

Steps:
- Place bacon in a large skillet over medium-high heat. Fry for a few minutes, then add the leeks. Cook and stir until bacon is crisp and leeks are tender. Set aside.
- Melt the butter in a saucepan over medium heat. Whisk together the flour and milk, then pour into the saucepan with the butter. Bring to a boil and cook, stirring constantly, until thickened. Remove from the heat and stir in the feta cheese. Mix in bacon and leeks, then season with pepper to taste. Serve over your favorite pasta.

SPINACH FETA SAUSAGE W/ PASTA AND WHITE SAUCE
I found this Chicken Sausage with feta and spinich in it at Sprouts grocery store, Wasn't sure if I was going to like it but once I made this dish I fell in love with it.

Steps:
- 1. in a deep skillet place sausages in pan and add just enough water that the meat is half way covered. Cook on med-hi heat until sausages are cooked through.
- 2. Remove sausage from the pan while reserving the water for later use. Cut sausages into slices. set aside
- 3. in skillet melt butter, when melted add flour and let cook for about 2 minutes stirring constantly, Then add milk while whisking to avoid flour clumps, Then add water from the sausage until sauce reaches the consistency you would like( if sauce becomes to thin just add small amounts of flour until it thickens bake to the consistency you want)
- 4. add salt pepper garlic powder nutmeg and chives. stir well to incorporate. Serve immediately over pasta and sausage. Garnish with Parmesan cheese.
PASTA WITH LENTIL SAUCE AND FETA (VEGETARIAN)

- Saute onion, carrot and celery in oil over low heat until softened (about 5 minutes).
- Add remaining ingredients, except lentils, beans, and pasta. Bring to a boil and season with salt and pepper. Turn the heat to low and let simmer for 10 minutes.
- Add the lentils and beans and cook for an additional 5 minutes.
- Meanwhile, cook the pasta as directed. Drain and divide pasta between bowls, top with sauce and sprinkle with feta.

PASTA WITH CREAMY RED ROASTED PEPPER SAUCE & FETA
The feta cheese adds the creaminess to this sauce and the peppers take control of the rest! It's simple to prepare and we just love it!

- Cook your pasta according to the package instructions. Saute the minced garlic and shallot in the olive oil until tender,add the red roasted peppers.(chop them roughly before adding) add the chicken stock and cook for 2-3 minutes,set to the side to cool slightly.
- Place the red roasted pepper mixture in the food processor and pulse until well incorporated,add all but three tablespoons of the feta cheese,season with salt and pepper and puree until just smooth.
- When the pasta is finished cooking,strain and reserve some pasta water in the event you need to loosen the finished pasta dish. Toss the pasta with the pepper sauce,divide on serving plates and garnish with feta and freshly chopped basil or parsley. Serve with a nice garden salad and enjoy!! :)

- First skin the tomatoes. Bring a large pan of water to a boil. Using a sharp knife, score a little cross at the base of the tomatoes and cut out the "eye" of the tomato at the other end. Have a large bowl of ice water ready, and once your water is boiling submerge the tomatoes for 15 seconds, then immediately plunge them into the ice water. You'll be able to peel off their skins immediately. Set to one side.
- In a large frying pan, temper the cumin and nigella seeds in the olive oil over low heat for 1 minute, then add the onion and cook until soft. Add the garlic, chile flakes, bay leaf, and paprika and cook for 2 minutes. Coarsely chop the tomatoes, add to the onions, and simmer for 10 minutes. You're looking for a soupy consistency, so if you need to add a little water, then do so. Season with salt and pepper. While your sauce is cooking, bring a large pan of salted water to a boil and cook your orzo pasta for 10 minutes, or according to the package instructions. Drain and add to the tomato sauce.
- Let everything cook together for a couple of minutes. To serve, divide between two bowls, crumble the feta over, and sprinkle with the fresh oregano and a drizzle of olive oil.
