PINWHEEL MEATLOAF
This is a recipe my mother transformed. Originally, she said, the filling was mashed potatoes. She thought it would taste better with a soft-bread stuffing. What do they say? Mother is always right? YEP!!

Steps:
- Preheat oven to 350 degrees F. Place a rack in a roasting pan
- Mix all stuffing ingredients in a bowl; set aside
- Roll out ground beef between 2 sheets of waxed paper to make a 12 x 8-inch rectangle.
- Spread stuffing on top of meat and roll up, jellyroll style, from shorter end. Seal seam.
- Place meatloaf on rack in prepared pan.
- Bake for 30-40 minutes or until center of meatloaf is 160 degrees F

PINWHEEL MEATLOAF
A delicious meatloaf that's stuffed with a cheesy rice mixture and rolled up!

Steps:
- In a mixing bowl combine meat, bread crumbs, half of the processed cheese spread, egg and salt. Mix lightly.
- Tear off a 12'' x 10'' rectangle piece of tinfoil. Pat out mixture to cover foil.
- Combine the rest of the cheese spread, rice and parsley. Spread mixture over meat. Roll up, starting at the narrow end, pulling the tinfoil away from the meat as you roll it up. Place in refrigerate for several hours or overnight.
- Remove from fridge and cut roll into eight slices; place in baking dish.
- Bake in preheated oven at 350 degrees for 45 minutes or until meat is done.

Yield 2 meat loaves (5-6 servings each) and about 2-1/2 cups sauce.

- In a large bowl, beat 2 eggs, ketchup, seasoned salt, Worcestershire sauce, mustard and pepper. Crumble meat over mixture and mix well. Sprinkle with onion and bread crumbs; mix gently. Shape into two loaves, about 9x3 in., On a lightly floured surface, roll out each pastry sheet into an 18x16-in. rectangle. Invert meat loaves and place in center of each pastry; fold short sides of pastry over loaf. Fold long sides over loaf and pastry; seal seams. , Place, seam side down, on a rack in a 15x10x1-in. baking pan. Beat remaining egg; brush over pastry. Bake at 350° for 60-70 minutes or until no pink remains and a thermometer reads 160°. , Meanwhile, for sauce, in a small saucepan, melt butter. Whisk in flour until smooth. Stir in the consomme, tomato paste, thyme, rosemary, browning sauce if desired and cloves. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in wine or broth., In a small skillet, saute mushrooms in oil until tender. Serve the mushrooms and sauce with meat loaf slices.

ALREADY FOR MEATLOAF PINWHEEL
As a single working mother of three growing boys, I was always looking for good "make ahead" recipes.. I found this one and it was a winner. A lot of times, I would make it the night before and call the boys to "slice and bake" so it would be ready when I got home..The recipe calls for CheezWhiz for the cheese spread. Recipe prep time does not include rice preparation or chill time.(you can use leftover rice)

Steps:
- Combine meat, crumbs, 1/2 of the CheezWhiz, egg and salt and mix lightly.
- Pat out meat mix to cover a 12 x 10 inch rectangle of foil.
- Combine remaining CheezWhiz, parsley and rice.
- Spread rice mixture over meat.
- Roll up meat, starting at narrow end.
- Wrap securely and refrigerate several hours.
- When ready to cook, slice into 8 slices.
- Place slices on cookie sheet and bake at 350 degrees for 30-35 minutes or until meat is done.
