This easy Hot Broccoli Dip recipe is simple to make and only has a few ingredients. The red and green colors make it a festive dip to serve at holiday parties.

1 package frozen cut broccoli; thawed & drained (12 - 16 ounce package)
1 cup mayonnaise
1/2 cup Parmesan cheese
1/4 cup red bell pepper (finely diced)
1 tablespoon hot sauce
1 cup shredded Mozzarella cheese (divided)
Crackers

Steps:

  • Preheat oven to 350°F. Grease a 9-inch pie plate. Chop broccoli, so pieces are small (can be done in food processor).
  • In a bowl, combine mayonnaise, broccoli, Parmesan cheese, red bell pepper, hot sauce, and 1/2 cup mozzarella. Spread mixture into pie plate.
  • Bake for 20 minutes or until heated through. Remove from the oven and sprinkle with remaining mozzarella. Return to the oven to bake for about 5 more minutes or until melted. Serve with crackers.

1- 10 oz frozen chopped broccoli, thaw and drain
1 c lite mayonnaise
1-2 oz diced pimento
1/2 c grated parmesan cheese
1 c shredded mozzerella cheese (divide in half)

Steps:

  • 1. Combine all ingredients, except 1/2 of mozzerella cheese.
  • 2. Spread into a 9" pie plate and bake at 350 degrees for 20-25 minutes.
  • 3. Sprinkle with the other half of mozzerella cheese and return to oven til cheese is melted. Use with crackers.

1 (10 ounce) package frozen chopped broccoli, thawed &, well drained
1 cup sour cream
1 (2/3 ounce) envelope good seasons mild Italian salad dressing mix
1 (8 ounce) package shredded cheddar cheese, divided

Steps:

  • Preheat oven to 350 degrees.
  • Mix cream cheese, sour cream and salad dressing mix with electric mixer on medium speed until well blended.
  • Stir in broccoli and 1 ½ cups of the cheddar cheese.
  • Spoon into 9 inch pie plate or ovenproof crock.
  • Bake 20 minutes.
  • Sprinkle with remaining cheddar cheese.
  • Bake an additional 5 minutes or until cheddar cheese is melted.
  • Serve with crackers.

DH loves this dip, and so did my guests at a recent party. I got the recipe from The Nashville Cookbook. Instead of fresh onion and celery, I usually use 2 Tbsp. dried minced onion and 2 Tbsp. dried chopped celery, rehydrated with equal parts water.

20 ounces frozen chopped broccoli
1 large onion, finely chopped
2 celery ribs, finely chopped
1 (14 ounce) can sliced mushrooms, drained
6 tablespoons butter
1 (6 ounce) roll garlic cheese rolls
1 (10 3/4 ounce) can cream of mushroom soup
1 (8 ounce) can water chestnuts, drained and chopped
2 tablespoons Worcestershire sauce

Steps:

  • Cook broccoli according to pkg. directions and drain well.
  • Saute onion, celery, and mushrooms in butter until tender.
  • In the meantime, melt cheese in undiluted soup in a large saucepan on very low heat, stirring often.
  • When cheese is melted and smooth, add remaining ingredients.
  • Serve hot in chafing dish or crockpot with crackers or corn chips.
  • Freezes well and can be used as a vegetable casserole.

1 cup knudsen sour cream or 1 cup breakstone's sour cream

1/2 teaspoon kosher salt, plus more for the water
1 cup (60 grams) small broccoli florets, plus more for serving
1/2 cup (120 grams) mayonnaise
1/4 cup (62 grams) whole milk or 2% Greek yogurt
1/2 cup (7 grams) fresh Italian parsley leaves
1/3 cup (9 grams) chopped fresh chives
2 tablespoons freshly squeezed lime juice
1 tablespoon chopped fresh dill, plus extra for garnish
Freshly ground black pepper
Ridged potato chips, for serving

Steps:

  • Bring a medium saucepan of salted water to boil. Add the broccoli and cook until tender, about 4 minutes. Drain and rinse under cold water until cool. Pat dry. Alternatively, you can drain the broccoli and immediately add to the food processor (just chill the dip before serving).
  • Transfer the broccoli to a food processor and add the mayonnaise, milk, parsley, chives, lime juice, dill, 1/2 teaspoon salt and several grinds of pepper. Pulse to make a smooth dip. Transfer to a serving bowl. Garnish with chopped dill. Leftover broccoli dip will keep covered in the refrigerator for up to 2 days. (Makes about 1 1/2 cups of dip.)
  • Serve with broccoli florets and ridged potato chips.

I love broccoli and pepper jack cheese... and this dip combines the two! This is a very quick and easy dip for parties. We like it with Frito's Scoops or tortilla chips. Leftovers are wonderful served over baked potatoes for lunch the next day. NOTE AFTER FIRST REVIEW: I have always kept this hot for serving in my mini-crockpot and haven't had trouble with it getting too thick.

3/4 lb monterey jack pepper cheese, cubed
1 (10 ounce) can cream of mushroom soup

  • NOTE 9/11/07: I have been making this for years, but recently ran across the original recipe in an old cookbook. It turns out that the original had two cans of soup, which obviously would make a thinner dip. I'll probably still make it with one can, but if it seems thick, you might want to try two cans! :).
