Number Of Ingredients 13

1-1/2 cups diced peeled potatoes
1/2 cup chopped sweet red pepper
1/2 cup chopped green pepper
1/2 cup chopped onion
2 teaspoons canola oil, divided
2 cups cubed fully cooked ham
16 large eggs
2/3 cup sour cream
1/2 cup 2% milk
1 teaspoon onion salt
1/2 teaspoon garlic salt
1/4 teaspoon pepper
2 cups shredded cheddar cheese, divided

Steps:

  • Place potatoes in a small saucepan and cover with water. Bring to a boil over high heat. Reduce heat; cover and simmer for 10-15 minutes or until tender. Drain. , In a large skillet, saute half of the peppers and onion in 1 teaspoon oil until tender. Add half of the ham and potatoes; saute 2-3 minutes longer. , Meanwhile, in a blender, combine the eggs, sour cream, milk, onion salt, garlic salt and pepper. Cover and process until smooth. , Pour half over vegetable mixture; cook and stir over medium heat until eggs are completely set. Sprinkle with 1 cup cheese. Repeat with remaining ingredients.

Before you even start to scramble, toast and butter the English muffins and pop them in a warm oven on the plates you'll serve breakfast on. The eggs are cooked in clarified butter, they turn out soft, moist, and slide easily out of the pan.

3 large eggs
Kosher salt and freshly ground pepper
Softened unsalted butter, for bread
1 English muffin, split
1 tablespoon Clarified Butter
Steamed asparagus and cooked bacon, for serving (optional)

Steps:

  • Whisk eggs well; season with salt and pepper. Toast and butter English muffin; place on a plate and keep warm in a 200°F oven. Melt clarified butter in a small or medium nonstick skillet over medium heat.
  • Add eggs and cook, stirring constantly with a silicone spatula, until large curds form and are just barely set, about 2 minutes. Transfer immediately to muffin halves. Sprinkle with salt and pepper and serve hot, with asparagus and bacon.

This is a very festive and colorful way to ramp up regular scrambled eggs. You can serve the bacon on the side or crumble it into the egg dish.

8 bacon slices
2 c mushrooms, sliced
1 c whole kernel corn, thawed
1/2 c bell pepper, diced (green or red, your preference)
1/4 c pimento, diced
salt and pepper to taste
6 eggs
1/4 c water
2 Tbsp butter

Steps:

  • 1. In a large skillet, fry bacon until crisp and brown. Drain bacon on paper towels.
  • 2. Pour off pan drippings except 2 tablespoons. Saute mushrooms, corn and bell peppers to drippings. Add pimentos and season to taste. Saute until bell pepper is soft.
  • 3. Meanwhile, beat eggs with water. Melt butter in skillet with vegetables. Pour in eggs and scramble to desired doneness. Serve with bacon or you can crumble the bacon into the scrambled egg mixture - your choice.

2 large free range eggs
6 tbsp single cream or full cream milk
a knob of butter

Steps:

  • Lightly whisk 2 large eggs, 6 tbsp single cream or full cream milk and a pinch of salt together until the mixture has just one consistency.
  • Heat a small non-stick frying pan for a minute or so, then add a knob of butter and let it melt. Don't allow the butter to brown or it will discolour the eggs.
  • Pour in the egg mixture and let it sit, without stirring, for 20 seconds. Stir with a wooden spoon, lifting and folding it over from the bottom of the pan.
  • Let it sit for another 10 seconds then stir and fold again.
  • Repeat until the eggs are softly set and slightly runny in places. Remove from the heat and leave for a moment to finish cooking.
  • Give a final stir and serve the velvety scramble without delay.

1 potato, peeled
1 small onion, chopped
2 cloves garlic, chopped
½ cup chopped fresh spinach
4 eggs, beaten
2 tomatoes, seeded and chopped
salt and pepper to taste
ground cayenne pepper to taste
1 dash hot pepper sauce
¼ cup shredded Cheddar cheese

Steps:

  • Bring a small pot of salted water to a boil. Add potato and cook until tender but still firm, about 15 minutes. Drain, cool and chop.
  • Saute the onion and garlic in a lightly oiled skillet over medium high heat. When onion is soft, stir in the spinach and cook until wilted, about 2 minutes.

  • Whisk the eggs: Whisk 3 large eggs, 1 pinch of kosher salt, 1 grind of black pepper and 3 tablespoons whole milk together until light and foamy.
  • TIP: Odds are you're going to be serving these on a plate. If so, I strongly suggest you park an ovensafe one in a low oven or in hot water while you're cooking. Cold plates suck the heat right out of food.
  • Add to the pan: Add 1 tablespoon unsalted butter to a 10-to-12-inch nonstick skillet and put it over high heat. When the butter bubbles (after about a minute), pour the eggs straight into the middle of the pan, which will force the butter to the edges, where it's needed.
  • Scramble the eggs: Stir slowly with a rubber or silicone spatula. As soon as curds (big soft lumps) of eggs begin to form, drop the heat to low and shift from stirring to folding the curds over on themselves while gently shaking the pan with the other hand.
  • Let rest: As soon as no more liquidous egg is running around the pan, kill the heat and gently transfer the scramble to the warmed plate. Let the eggs rest for 1 minute to finish cooking before serving.

1/4 cup milk
1/4 teaspoon salt
black pepper, pinch
2 tablespoons butter
8 ounces cream cheese, cut into small cubes
1 tablespoon green onion top, chopped finely
1 teaspoon fresh parsley, chopped finely

Steps:

  • Beat together the eggs, green onion tops, milk, salt and pepper.
  • In a large, lightly oiled skillet, heat the butter to sizzling. Pour in the egg mixture.
  • When the eggs just begin to set on the bottom, run a spatula underneath, allowing the uncooked egg flow to the bottom of the pan. Sprinkle in the cream cheese pieces.
  • Continue cooking in the standard manner for scrambled eggs.
  • When the eggs are set, the cheese will be melted.
  • Serve immediately. Garnish with parsley.
