2 tablespoons Dijon mustard
2 garlic cloves, minced
2 limes, juiced
1/3 cup extra virgin olive oil
1/2 teaspoon sumac
pinch of salt and pepper
1/2 teaspoon crushed red pepper flakes, optional
4 cups shredded green cabbage
2 cups shredded red cabbage
1 cup shredded carrots
2 green onions, trimmed, chopped (both white and green parts)
1 red bell pepper, cored and cut into thin sticks
4 large radishes, halved and thinly sliced
1 cup chopped parsley
1/2 cup chopped fresh dill
1 teaspoon sumac
kosher salt
1 cup toasted sliced almonds

Steps:

  • Make the mustard vinaigrette. In a small bowl, whisk together the Dijon mustard, lime juice, garlic, olive oil, and spices.
  • Make the salad. In a large mixing bowl, combine the cabbage, carrots, onions, red bell pepper, radishes, parsley and dill. Season with salt. Add the sumac. Add the toasted almonds. Toss gently to combine.
  • Pour the vinaigrette all over and toss to combine.
  • If you have the time, give the salad 30 minutes to 1 hour for the flavors to meld.

1/2 cup chopped green pepper
1/2 cup chopped onion
3 tablespoons mayonnaise

4 bacon strips, cooked and crumbled

Serve this spiced and sticky side dish alongside all the classic Christmas trimmings - it's richly flavoured with red wine, cinnamon, star anise and apples

1 tbsp vegetable oil
2 large onions , finely chopped
1 star anise
1 cinnamon stick
150ml red wine
1 red cabbage (about 900g/2lb), shredded
2 tbsp dark brown soft sugar
2 Bramley apples , peeled and chopped

Steps:

  • Heat the oil in a large flameproof casserole dish, add the onions and cook on a medium heat for 8-10 mins, then add the star anise and cinnamon stick.
  • Pour in the wine and let it simmer until slightly reduced. Add the cabbage, sugar and apples, and stir well. Season well, cover and simmer on a low heat for 3 hrs, stirring every now and again.
  • Once the cabbage is tender, check the seasoning. Serve in a bowl with the star anise and cinnamon stick on top. Can be made 1-2 days in advance or frozen for up to 4 months - simply reheat on the hob before serving.

1 red cabbage - about 650g
2 small red onions , diced
2 red apples , cored and diced
250g pack cooked beetroot , diced
50g walnut piece , roughly chopped
2 large oranges
5 tbsp red wine vinegar
3 tbsp redcurrant jelly
2 tbsp clear honey
2 tbsp olive oil

Steps:

  • Quarter the cabbage, then cut out the white core at the bottom and discard. Finely shred the cabbage and tip into a large mixing bowl with the onions, apples, beetroot and walnuts. Finely grate over the zest from the oranges.
  • Cut a little from the top and bottom of each orange, so they sit flat on your work surface. Use a small, serrated knife to cut away the peel and pith in strips down the orange. Holding each orange over a bowl, cut away the segments, letting them and any juice drop into the bowl. Squeeze any juice left in the membranes into the bowl, too. Fish out the segments, roughly chop and add to the salad.
  • Whisk the red wine vinegar, redcurrant jelly, honey and oil into the orange juice with some seasoning, then stir into the salad. Will keep for 3-4 days in the fridge.

1 large red cabbage
1 small green bell pepper, de-seeded and diced
1/2 small pineapple, peeled and finely chopped or 1 cup frozen pineapple chunks
2 oranges, peeled and segmented
6 green onions, thinly sliced
3 celery ribs, and leaves chopped
1/2 cup hazelnuts, toasted (can substitute almonds or walnuts)
1/2 cup black beans or 1/2 cup red beans
1/2 cup plain yogurt
1/4 cup mayonnaise
1 tablespoon freshly squeezed orange juice
salt & freshly ground black pepper

Steps:

  • Remove any of the outer discolored or tough leaves from the cabbage.
  • Trim the base of the cabbage head so that the cabbage will stand upright then cut about a quarter off the top.
  • Mix together well the dressing ingredients. Season with salt and pepper to taste.
  • Using a sharp knife, scoop out the inside of the cabbage leaving about 1/4 inch for the shell. Set aside.
  • Shred the remaining cabbage finely. Put the shredded cabbage into a large bowl along with the bell pepper, pineapple, orange segments, green onions, celery and leaves, nuts and beans.
  • Carefully fold in the dressing with the cabbage mixture.
  • Put the salad mixture into the prepared cabbage shell and garnish with fresh parsley if desired.
  • Cover and chill for 1 hour.
